The microwaves cause the water molecules to move back and forth, creating friction. This friction creates heat, which cooks the food. The moisture in green beans is what causes the green beans to spark when microwaves are used. The brown exoskeleton on the outside of green beans prevents that moisture from escaping and causes it to build up.
