Steps:
- In a bowl, beat sugar, eggs, vanilla and salt on medium speed for 1 minute. Add butter; beat until blended. Combine flour and cocoa. Gradually add to sugar mixture; mix well. Stir in walnuts. Transfer to a greased microwave-safe 8-in. square dish. Microwave, uncovered, on high for 3-4 minutes, rotating every 1 minute or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry). Cool on a wire rack. Cut into bars.

- Combine flour, sugar, cocoa powder, baking powder, instant coffee, and salt in a microwave-safe mug or small bowl. Mix in vegetable oil, water, and vanilla extract until mixture is smooth and glossy. Add more water, 1/4 teaspoon at a time, if mixture looks a little dry.
- Microwave on high until top looks dry, about 1 minute.

MICROWAVE BROWNIES
Steps:
- Put the butter and chocolate into a microwave-safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
- In another bowl, whisk together the eggs and sugar.
- In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
- Spray an 8 by 8 by 2-inch or 8-inch round microwave-safe glass pan with cooking spray. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chips on top. Cook on high for 5 minutes. Remove from the oven and let rest for 3 minutes before cutting and eating.
EASY MICROWAVE BROWNIES
Make these easy, fudgy brownies in under 15 minutes in the microwave. They're ideal when you need a quick and indulgent dessert.

- Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
- Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
- In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
- Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
- Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
- Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.

MICROWAVE BROWNIE RECIPE IN 8 MINUTES
Steps:
- Instructions are for a 1200 watt microwave oven. Adjust accordingly - see Note 2.
- MELT CHOCOLATE AND BUTTER: Microwave butter and chocolate for 1 1/2 minutes on High in a measuring cup or bowl. Stir until melted and smooth.
- MAKE BATTER: In a separate bowl, use a fork or whisk to mix sugar and eggs together. Add flour, vanilla, baking powder, salt if using and mix to combine. Stir in chocolate-butter mixture. Stir in chocolate chips or nuts if using.
- MICROWAVE TO COOK: Pour batter in a microwaveable dish - approximately 8 x 8 x 2 -sprayed with oil. Place a small plate or saucer upside down on the microwave turntable/floor. Then place dish on top of the inverted plate. Microwave for 3 minutes 10 seconds to 3 minutes 30 seconds. Note 2. If microwave turntable doesn't turn automatically, stop and turn the dish once or twice, then continue cooking. Don't over bake. You can always add more time if needed. How to tell if brownies are done, Note 3.
- SERVE: Let brownies cool for 10 minutes. Serve semi warm if desired with ice cream, berries, whipped cream or dusted icing/confectioner sugar.

- In an 8-inch square glass baking dish, place the butter and chocolate and microwave on high until melted, about 2 minutes. Remove the dish from the oven and whisk to combine.
- Add the sugar and stir well to combine.
- Sift the flour and salt into the chocolate mixture and add the eggs, whisking until smooth, scraping around the sides to incorporate all the ingredients.
- Add the vanilla and whisk to combine.
