1 medium cucumber, thinly sliced
2 small onions, thinly sliced
3/4 cup sugar
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon mustard seed

Steps:

  • In a large microwave-safe bowl, combine all of the ingredients. Microwave, uncovered, on high for 3 minutes; stir. Cook 2-3 minutes longer or until mixture is bubbly and cucumbers and onions are crisp-tender. Cover and refrigerate for at least 4 hours. Serve with a slotted spoon.

Steps:

  • In a medium microwave safe bowl, mix cucumber, salt, onion, mustard seeds, white sugar, distilled white vinegar, celery seed and turmeric.
  • Microwave on high 7 to 8 minutes, stirring twice, until cucumbers are tender and onion is translucent.
  • Transfer to sterile containers. Seal and chill in the refrigerator until serving.

6 to 8 pounds pickling cucumbers
40 fresh dill sprigs
2 large onions, thinly sliced
5 garlic cloves, sliced
1 quart water
1 quart white vinegar
3/4 cup sugar
1/2 cup canning salt

Steps:

  • Cut each cucumber lengthwise into four spears. In a large bowl, combine the cucumbers, dill, onions and garlic; set aside. In a Dutch oven, combine the remaining ingredients. Bring to a boil; cook and stir just until salt is dissolved. Pour over cucumber mixture; cool., Cover tightly and refrigerate for at least 24 hours. Store in the refrigerator for up to 2 months.

Number Of Ingredients 8

1 quart small cucumbers or 1/4 inch sliced cucumber
1 garlic clove
3/4 teaspoon dried dill (I actually used fresh)
1/8 teaspoon turmeric
1 hot pepper (optional)
1 1/2 cups water
1/2 cup cider vinegar
2 teaspoons salt

Steps:

  • Use a 1 quart canning jar and fill with cucumbers, 1 clove garlic, 3/4 teaspoon dried dill, 1/8 teaspoon turmeric and 1 hot pepper if using.
  • Use a 4 cup microwave safe glass bowl and add 1 1/2 cups of water, 1/2 cup cider vinegar and 2 teaspoons salt. Place in microwave for 4 minutes (until it boils).
  • Remove liquid from microwave, pour it over the cucumbers in the jar. Make sure the cucumbers are covered with liquid. If not, add water to cover.
  • Use a piece of plastic wrap to loosely cover the jar. Microwave for 3 minutes. Place the cap on the jar and let cool to room temperature. Place in refrigerator. Pickles should be ready to eat when cold.

Plus this recipe can be scaled with ease, meaning you can make just one jar or ten in a matter of minutes. So if you're a pickle lover but short on time, this method is for you.

1 cup rice wine vinegar or distilled white vinegar
Kosher salt
1 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes
6 sprigs dill
3 cloves garlic
1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.

  • Mix all in a 2 quart bowl (microwavable) and microwave on High 8 to 9 minutes, stirring twice during cooking time.
  • Cukes will be crisp, onions translucent.
  • My mom has a small microwave that is not very powerful so she had to microwave hers a little longer.

Steps:

  • Place cucumbers, onions and peppers in micro-wave safe bowl.
  • Mix vinegar, salt, sugar and pickling spice. Pour over vegetables. Cover bowl with plastic wrap.

  • Let cool and pour into storage container. Store in refrigerator.
