MICROWAVE FETTUCCINE ALFREDO

- Cook fettuccine according to package directions. Meanwhile, in a small microwave-safe bowl, combine the cream and cream cheese. Cover and microwave at 50% power for 2 minutes; stir in the Parmesan cheese until smooth. Stir in salt if desired and pepper. Drain fettuccine; toss with sauce.

MICROWAVE CHICKEN FETTUCINE ALFREDO PASTA BAKE
Steps:
- In a 4-qt microwave-safe dish add the olive oil, salt, and water. Break the fettuccine noodles in half and place in dish. Microwave uncovered on HIGH in 5 minute increments. Stir after every 5 minutes. Begin checking for doneness around the 20-minute mark. The pasta will probably absorb all the water. If there is still additional water when it's done cooking, drain. Pour the alfredo sauce into a medium-sized bowl. Drain, rinse, and break up the can of chicken. Add the chicken to the alfredo sauce. Add the garlic to the sauce. Stir until the chicken and garlic are completely mixed. Pour the sauce mixture over the cooked fettuccine and mix until it covers all the noodles. Sprinkle the cheese over the top of the pasta. Microwave for 3-5 minutes, until cheesy is completely melted. Serve immediately.

SOLO MICROWAVE FETTUCCINE ALFREDO
This is a very easy solo recipe that can be made in a college style microwave. My old microwave required three 2 minute cycles for the pasta. Cooked chicken or shrimp could be added. Cooking is a creative sport. I must caution you that using a finely grated parmesan cheese, like that found in cans of Kraft or Crystal Farms is important because larger pieces of cheese will not melt properly in the residual heat from the melted cream cheese. This recipe is one of my favorites, and represents one of my more productive efforts to encourage young people to cook. One of my co-workers was eating from a carry out container, She told me that once a month she and her friends went out to dinner at a nice Italian Restaurant ... clearly something that they could not afford very often .. and she had saved some of the Fettuccine Alfredo from the night before. When I suggested that she could make that at home, she looked at me with her big sad brown eyes and said that all she had in her apartment was a microwave. So, I wrote this recipe just for her.

Steps:
- Put the noodles and water into a 2 cup or larger glass or microwave safe measuring cup or bowl.
- Microwave on high for two minutes, then stir, continue 2 minute cycles until the pasta is done.
- Drain the noodles, and wipe the measuring cup dry.
- Add the cream cheese and milk to the measuring cup and microwave for one minute.
- Stir until smooth, add the parmesan cheese, and continue to stir until smooth.
- Pour the Alfredo Sauce into a shallow bowl, add the noodles and toss.
- Add pepper to taste.

EASY CHICKEN ALFREDO
This recipe was actually made up by a quadriplegic guy that I used to care for when I was a private duty nurse. He would sit in his wheelchair in the kitchen and dictate every thing I was to do (even though I knew how), so that he felt like he was doing it all.

Steps:
- Cut up chicken breasts into bite sized chunks and saute in a little oil or butter until cooked through.
- While chicken is cooking, prepare the alfredo noodles in a large dutch oven, following package directions.
- Steam the frozen broccoli in another pan using a steamer, or cook it in a pan until just done.** (Steaming is better for retaining nutrients.).
- When all three are done, add the chicken and broccoli to the alfredo noodles.
- Mix well and serve with some fresh French bread from the deli.
- **Another thing you can do to steam the broccoli is to place it in a metal colander, and place the colander resting inside the dutch oven over the cooking noodles with a lid over the top. Convenient, eh?

CHICKEN ALFREDO

- Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
- Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
- Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

EASY MICROWAVE ALFREDO SAUCE
Taken from "Micro Ways" cookbook written by my good friend Norene Gilletz at Gourmaia.com --- there's enough sauce to combine with 1 pound of noodles, if you are doubling this recipe make it separately not in the same pyrex cup --- follow microwave times and you will have a perfect alfredo sauce, the Parmesan cheese may be increase to taste -- this will separate if heated the following day so I suggest to use it all at one time.

- Place butter and garlic in a 4-cup Pyrex measuring cup.
- Microwave uncovered in HIGH for 2 minutes.
- Remove and stir in whipping cream, nutmeg (if using) basil and black pepper.
- Return to the microwave uncovered on HIGH for another 2-3 minutes, until bubbling.
- Remove and stir in Parmesan cheese, return to the microwave for 2-3 minutes longer until thick and smooth.
- Season with salt and black pepper to taste.
