INDIVIDUAL MICROWAVE BROWNIE
This is a great quick fix for a chocolate craving! Because it's microwaved it is different than traditional brownie and has a very moist, pudding-like texture. Enjoy with whipped cream or a scoop of ice cream.

Steps:
- Add the butter and peanut butter to a microwave-safe bowl and cook on High for 30 secs to melt. Remove from the microwave and stir thoroughly. Allow to cool slightly then add the egg and stir to combine. Grease with butter and line a second microwaveable round dish (about 15cm wide) with cling film. Tip the peanut butter mix into the lined dish then sieve in the cocoa powder and flour and tip in the sugar. Mix gently to form a thick, sticky paste. Smooth the top of the mixture with the back of a large spoon.
- Using a teaspoon, make crater-holes in the top of the brownie mixture and fill each generously with jam as it will melt and bubble down when cooked. Pop in the microwave for 3-4 mins on High. Remove and leave to cool for 15 mins (it will carry on cooking as it cools) then enjoy!

Steps:
- Beat eggs until light (about 1 minute on high).
- Beat in sugar and salt. Add the vanilla. Mix in the melted butter.
- Add the cocoa and flour using the low speed on mixer.
- Pour into a microwave safe dish (8 x8 or a round cake pan -- your microwave time will depend on what you use.).
- Microwave on high for 3 to 5 minutes on a turntable, preferably. Do not let the center get totally dry or it will be overcooked. I took mine out when there was just a small moist spot in the center, but next time I will probably let it bake for maybe 10 seconds less. It finishes cooking as it cools.
- You can frost if you like, but I prefer my brownies unfrosted.

Steps:
- Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
- Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
- In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
- Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
- Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
- Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.

MICROWAVE BROWNIE LAVA CAKE
This is about the yummiest dessert and it is so easy, but seems so decadent. I've tried various chocolate candies to melt in the center, but have found that Dove Dark Chocolate Promise candy pieces are the best--they melt the best and aren't absorbed into the batter, not to mention they are just so delicious! Note that the ingredient list below automatically changed Dove to doves--you won't add actual doves, but the chocolate kind. Bake these in individual custard cups or mason jars. A friend gave me this recipe and she said she got it from theyummylife.com.

Steps:
- Empty brownie mix into large bowl.
- Whisk to remove large lumps.
- Coat 8 (6 oz.) custard cups with cooking spray.
- Add a small amount of dry brownie mix to each cup and rotate cups until completely coated and set aside.
- In separate bowl, whisk together wet ingredients called for in brownie mix instructions (usually oil, water, eggs), plus 1 additional egg.
- Add wet ingredients to brownie mix and stir until well combined.
- Add 1/2 cup batter to each custard cup.
- Stack two Dove candies and press them down into the center of the batter.
- Spoon batter over candy so it is completely covered.
- Place in microwave and cook at full power for 1 minute for 1 cake (microwave power and times may vary).
- May cook up to 4 cakes at one time, adding 1/2 minute to cooking time for each additional cake.
- To remove cake from bowl: Run a thin knife around the edge of the cooked cake. Place a small plate on top of the cake cup. Flip the plate and bowl over, so the cake is inverted on top of the plate. Gently lift the bowl, leaving the inverted cake on the plate. Serve with whipped cream or ice cream; garnish with berries.
- Cakes may also be eaten directly from the custard cup they are cooked in (without inverting them on a plate). May also be cooked and served in half-pint mason jars. If eating cakes directly from bowl or jar, it isn't necessary to spray or coat them before adding batter and cooking.
- MAKE AHEAD: Batter may be mixed and added with chocolate pieces to custard cups or jars in advance. Cover and refrigerate up to a week. Remove from refrigerator and warm to room temperature 30 minutes before cooking.
