1 can (15 ounces) black beans, rinsed and drained
1 can (4 ounces) chopped green chilies
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 tablespoon canola oil
3 teaspoons chili powder
1/2 teaspoon minced garlic
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/8 teaspoon salt
8 flour tortillas (8 inches), warmed
1 cup shredded Monterey Jack cheese
Salsa and sour cream

Steps:

  • Place beans in a large microwave-safe bowl; mash lightly. Stir in the chilies, onion, peppers, oil, chili powder, garlic, oregano, cumin and salt. Cover and microwave on high for 2-3 minutes or until heated through, stirring once. , Spread about 1/4 cup bean mixture down the center of each tortilla. Top with 2 tablespoons cheese; roll up. Place seam side down in an ungreased 11x7-in. microwave-safe dish. , Cover with a damp paper towel. Microwave on high for 25-40 seconds or until heated through. Serve with salsa and sour cream.

Sweet Potato and Black Bean Burritos image

Number Of Ingredients 17

1 1/2 pounds sweet potatoes, cut into 1/2-inch cubes
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1/2 Spanish onion, finely diced
1 jalapeno, seeded and finely chopped
1 tablespoon chili powder
1 tablespoon tomato paste
1/2 teaspoon dried Mexican oregano
2 cups packed fresh baby spinach
One 15-ounce can black beans, drained
One 14.5-ounce can diced tomatoes
1 cup crumbled queso fresco
Juice of 1 lime
Ten 10-inch whole-wheat tortillas
1 bunch fresh cilantro, chopped
Hot sauce, as desired

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the sweet potatoes to a baking sheet in an even layer. Drizzle with olive oil and season with salt and pepper. Roast until the potatoes are just tender but still have a bite, 15 to 20 minutes. Set aside.
  • Add 2 tablespoons olive oil to a large saute pan and place over medium heat. Add the garlic and onion and saute until translucent, about 5 minutes. Then, add the jalapeno and stir to combine. Add the chili powder, tomato paste and oregano. Stir to combine and cook for an additional 2 minutes to release the flavors of the herbs. Then, add the spinach, beans and tomatoes. Fold gently to combine. Simmer until the spinach is wilted and the liquid has reduced by half, 7 to 10 minutes. Remove from the heat and stir in the queso fresco, lime juice and sweet potatoes. Taste and season as needed.
  • Distribute the mixture evenly among the tortillas. Roll the tortillas, garnish with the cilantro and hot sauce and serve immediately. For freezer meal prep, wrap tightly in plastic wrap or parchment paper and store in an airtight container or bag. Freeze for up to 3 months.
  • To reheat, place wrapped burrito in the microwave and reheat for 3 minutes, flipping once. Unwrap, garnish with the cilantro and hot sauce, if desired, and serve!

A great and super-easy recipe for take-along lunches to work, school, etc. Instead of store-bought salsa, an excellent ingredient is recipe 276150. You can embellish them a million ways. This is one of my favorite OAMC recipes because making 12 burritos literally takes less than 10 minutes and makes 12 really yummy lunches.

15 ounces black beans
16 ounces salsa (or recipe 276150)
12 flour tortillas (any size you like)
8 ounces shredded colby-monterey jack cheese or 8 ounces cheddar cheese
2 cups frozen vegetables, leftovers are great too, such as spinach, broccoli, green beans, cauliflower, shredded carrots, what

Steps:

  • Set out a 9x11 baking pan to place folded burritos in.
  • Whirl Black Beans (drained slightly) in a food processor for 3-5 seconds to make a thick paste.
  • Warm up tortillas in the microwave. Place all 12 on a plate on high for about 45-60 seconds.
  • Spread bean paste on tortilla. Layer on veggies, salsa, and cheese, (leftover chicken, shredded would also be good).
  • Roll up, folding in ends.
  • Place seam-side down into baking pan.
  • Repeat process for all 12.
  • Place baking pan in freezer until burritos are frozen solid.
  • Wrap individually in foil/freezer paper and place in a large Ziploc bag for easy grab-and-go lunch.
  • To reheat: cover with paper towel and microwave for 30-60 seconds, depending on microwave. Top with extra salsa, sour cream or plain yogurt with cumin.

300g brown rice
½ small pack coriander , chopped
juice 1 lime
1 tsp olive oil
2 garlic cloves , crushed
1 tbsp chipotle paste
2 tbsp ground cumin
1 tbsp brown sugar
1 tbsp cider vinegar
2 x 400g cans black beans , drained and rinsed
400g can chopped tomato
2 large tomatoes , chopped
1 red onion , finely chopped
½ small pack coriander , chopped
juice 2 limes
2 avocados , stoned and peeled
large wholemeal tortilla wraps, natural yogurt, lime halves to squeeze over and grated cheddar (optional)

Steps:

  • Put the rice in a medium saucepan with 600ml cold water and a pinch of salt if you like. Bring to the boil, then turn the heat down low, cover and gently simmer for about 20 mins until all the water has been absorbed. Turn off the heat and leave for another 10 mins undisturbed. Stir the rice and add the coriander and lime juice.
  • For the black beans, heat the oil in a large frying pan and add the garlic, chipotle, cumin, sugar and vinegar, and cook everything for 1 min. Tip in the beans and tomatoes, give everything a stir and simmer, uncovered, for 20 mins until thickened.
  • For the salsa and guacamole, mix the tomatoes with the onion, coriander, lime juice and seasoning. Tip half the salsa into another bowl and mash the avocados into it to make guacamole. Wrap everything up together in warmed wholemeal tortillas topped with natural yogurt, lime juice and grated cheese, if you like.

These are quick and fairly healthy if made with low fat ingredients, add some rice if you want to stretch them farther or just go with basic bean and cheese.

1 (14 ounce) can refried beans (I use fat free)
1 teaspoon chili powder or 1 teaspoon ground dried chile
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
3 -5 dashes garlic powder
hot sauce
1 cup hot cooked rice (I usually omit) (optional)
8 ounces cheddar cheese or 8 ounces monterey jack pepper cheese, shredded or thinly sliced (I use low fat)
your favorite salsa
1 package flour tortilla (10-in. The recipe usually uses 5 tortillas the way I make it)
chopped tomato
shredded lettuce
sliced black olives
sliced scallion
sliced jalapeno
sour cream
guacamole

Steps:

  • Place beans in microwave safe dish.
  • Stir in next 5 ingredients.
  • Heat on medium power for about 3 minutes or until hot, stirring once halfway through.
  • Alternatively, heat over low heat on stovetop until warmed through.
  • If mixture becomes too thick, add water.
  • Mix in rice, if using.
  • Meanwhile, heat the tortillas.
  • Use the method you like best.
  • I usually just heat them one at a time in a dry skillet over medium heat, about 20-30 secs per side, or just until pliable.
  • Place about 1/3 cup bean mixture in each tortilla, add cheese, salsa and toppings, and roll.
  • You can bake them in a 350 degree oven for 10-15 minutes if you want them firmer/crisper.
  • I like to skip this step.
  • That's it!
  • These refrigerate well for a few days.
  • I can't speak for the freezer.
  • I end up with 5 medium sized burritos; if you use the rice or more veggies, you will get more.
  • Since I usually reheat one or two at a time, I add sour cream after reheating.
  • No one would call these authentic Mexican food; they taste more like a fresher and better version of Taco Bell, but they are very good.
