6 medium baking apples
6 tablespoons dark brown sugar
3 tablespoons butter or 3 tablespoons margarine
1/2 teaspoon cinnamon (or more)

Steps:

  • Wash and core apples.
  • Make a shallow cut in the skin completely around each apple, one-inch from the bottom.
  • This keeps skin from shrinking during cooking.
  • Place apples in a glass baking dish or in individual custard cups.
  • Place 1 tablespoon brown sugar and 1/2 tablespoon butter into the core of each apple.
  • Sprinkle with cinnamon.
  • Cover apples with wax paper.
  • Microwave on High for 10 to 14 minutes, or until tender.
  • Let stand, covered, 3 minutes before serving.
  • For one apple, use an individual custard cup or bowl and microwave for 2 to 3 minutes on High, for two apples, microwave 3 to 4 minutes on High.

1 large apple, cored (whatever type you like, peel if desired)
1 1/2 tablespoons brown sugar (or white sugar, or splenda i suppose)
2 pinches cinnamon

Steps:

  • prep your apple and place in a small bowl so the hole through the core is up.
  • fill hole with sugar and cinnamon, can also add or substitute pumpkin/apple pie spice or cloves. add raisins if you like, drizzle of maple syrup, whatever.
  • wrap tightly over the bowl with good quality plastic wrap. it must be air tight or this wont work. microwave on high for 5 min.
  • the plastic wrap will have made a big bubble as it cooks, this is normal. it works like a steamer to cook the apple fast. when taken from the microwave (WITH POT HOLDERS) it will shrink wrap your apple, it's kinda fun to watch. now keeping those pot holder on, carefully pull off the plastic wrap with a fork, mind the live steam.
  • let it cool for five min, serve alone or with ice cream, crumbled cookies, or a bit of evaporated milk.
  • repeat until you have no apples or your stomach explodes.

1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 teaspoons butter

Steps:

  • Core the apples, leaving the bottom intact.
  • In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
  • Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

I found this to be the quickest and easiest caramel apple recipe I have tried. I started out using 5 bags of caramels, and then added more as I needed. It really does make the operation much easier using lots of caramel, especially when you can cool and store the rest of the caramel to use in other things, or cut up with scissors and eat as a candy.

5 -6 small tart apples
1 (14 ounce) bag caramels, unwrapped
5 -6 popsicle sticks or 5 -6 cinnamon sticks
1/2 cup chopped peanuts (optional) or 1/2 cup candy sprinkles (optional)

Steps:

  • Wash apples, and allow to completely dry and come to room temperature.
  • Place buttered wax paper or release foil on a cookie sheet.
  • Push sticks into the top of the apples.
  • Have toppings in a small bowl nearby.
  • Place caramels into a microwave safe or heat safe deep bowl and microwave for two minutes on high.
  • Stir caramels if you are able. Be careful as the bowl will be really hot.
  • Continue heating caramels on high in 1-minute intervals, always stirring, until mixture becomes very smooth and fluid.
  • Quickly dip a couple of apples, swirling them to coat everywhere.
  • Hold apples over the bowl and allow to drain, and slide the bottoms of the apples against the top of the bowl to scrape off excess caramel.
  • If you like the toppings on the apples, press the apples lightly into the bowl of toppings.
  • Place dipped apples on the cookie sheet.
  • Check the condition of the caramel and if it is thickening, go ahead and heat it for another minute and stir. Don't worry if you need to reheat often, as it's ok.
  • Continue dipping apples and reheating as necessary.
  • If you have leftover caramel, pour it onto a heavily buttered cookie sheet and allow to cool and set, then roll it up and place in a ziplock bag to use later.
  • You can chill apples to get them to set, or just let them sit in the pan to cool off.
  • Place in cupcake liners before serving, and use within 1-2 days.

This smells delicious while it bakes. It can easily be multiplied to accomodate a larger family. If you use a cold apple, the sugar will stick to the outside nicely, but it will take longer to cook. I have heard of people using honey instead of sugar, but it tastes funny to me. (note: I'm sorry I originally forgot to post the baking temperature of 375)

4 teaspoons sugar
8 raisins
cinnamon, to taste

Steps:

  • Preheat the oven (or toaster oven) to 375.
  • Place the apple in a small oven safe bowl or dish.
  • Spoon the liquid into the dish beneath the apple.
  • Layer the sugar, raisins, and cinnamon in the center of the apple, sprinkling the excess sugar (with a touch of cinnamon) over the top.
  • Cover the entire dish with foil and bake until tender, about 20 minutes (for a small apple.).
  • It can safely be eaten 5 minutes out of the oven.

Whether you’re preparing one apple or four (typically the max for a casserole dish that will fit in a microwave), you want to make sure your microwave-safe baking dish is deep enough to capture the juices that will come from your microwaved baked apples.
