I came up with this recipe after eating Recipe#58447. I was out of bananas, and was really wanting a warm, comforting bowl of oatmeal that could be made quickly. I already had a can of lite no sugar added apple pie filling that had been opened, so I thought I'd give it a try. If you want it to be a sweet as pie, you might want to add some brown sugar instead of or in addition to the sweetener. Feel free to add raisins if you like them (I don't) and to add to or take away from the spices.

1/3 cup quick-cooking oatmeal
1/4 cup no-sugar-added apple pie filling
1/2 cup skim milk
1 teaspoon Splenda sugar substitute
1/8 teaspoon cinnamon
1 dash nutmeg
1 dash ground cloves
1 dash allspice
1 dash salt (optional)

Steps:

  • Place pie filling in a microwave safe bowl. Dice into smaller pieces, if desired.
  • Add remaining ingredients to pie filling; mix well.
  • Microwave on high 1-2 minutes, stirring every 30 seconds.

1 apple, preferably McIntosh, cored and coarsely chopped
1 cup rolled oats
1/4 teaspoon ground cinnamon
Pinch kosher salt
2 cups water
2 tablespoons pure maple syrup
1/4 cup toasted pecans

Steps:

  • Combine the apple, oats, cinnamon, and salt in a large microwave-safe bowl water, and stir in the water. Cover and seal with plastic wrap or a tight fitting lid and heat in the microwave on high until apples are soft and most of the liquid is absorbed, about 8 minutes. Stir in the maple syrup. Divide between 2 bowls and top with the nuts. Serve immediately.

I used to fix myself hot oatmeal every day, even when I was working. I guess I'm lazier now, and not willing to clean that pot day after day. SO, after much trial and error, I figured out how to do it right in the ce4ereal bowl, in the microwave. Pre-loading single servings -- everything but the water -- into snack-size zip bags make this an even quicker way to have my oatmeal any day I want it.

1/2 cup old-fashioned oatmeal
5 ounces water
1 tablespoon raisins (or other dried fruit)
1 tablespoon walnut pieces (or other nuts)
1 -2 dash salt
1/8 teaspoon cinnamon
1 -2 teaspoon brown sugar (optional, I don't do this, but sometimes I'll add a little sugar after it's cooked, if I'm in the mo)

Steps:

  • Put everything into a microwave safe bowl. You need one deep enough to avoid boil-over messes.
  • Microwave on HIGH for 2 minutes.
  • Stir and eat with a little milk and a sliced half banana. Yum!

1 teaspoon ground cinnamon

½ teaspoon ground allspice
¼ teaspoon ground nutmeg

1 teaspoon baking powder
¾ teaspoon kosher salt
5 tablespoons unsalted butter, divided
½ cup brown sugar, divided
2 cups whole milk
1 large egg, lightly beaten
1 tablespoon vanilla extract
2 large Honeycrisp apples, peeled and diced, divided
2 tablespoons maple syrup

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 11x7-inch baking dish with baking spray.
  • Place oats in a large skillet over medium heat; toast, stirring often, until oats are beginning to brown and smell nutty, about 4 minutes. Add cinnamon, ginger, allspice, nutmeg, and cardamom; continue toasting, stirring frequently, for another 1 to 2 minutes. Transfer to a medium mixing bowl and cool slightly.
  • Add 3/4 cup pecans, baking powder, and salt to the oat mixture; stir to combine.
  • Melt 3 tablespoons butter in a large microwave-safe bowl. Whisk in 6 tablespoons brown sugar. Add milk, egg, and vanilla to the bowl, whisking until combined. Stir the oat mixture evenly into the milk mixture. Fold in 1/2 of the apple pieces. Spoon mixture into the prepared pan.
  • Bake in the preheated oven until golden brown and set, 35 to 40 minutes.
  • While the oatmeal bakes, add remaining butter and apple pieces to a nonstick skillet over medium heat. Add remaining brown sugar and maple syrup. Cook, stirring often, until apples soften and the liquid thickens into a syrup, 8 to 10 minutes.
  • Spoon apple mixture over the baked oatmeal after you've removed it from the oven. Sprinkle remaining pecans over the top.

40 g sugar
60 g flour

Steps:

  • Dice apple in pieces and dump in a greased microwave bowl.
  • In another bowl, mix egg till fluff. Add sugar and mix again. Add flour.
  • Pour over the apples.
  • Put the lid of the bowl on it. Put in microwave for 10 minutes (this can be diffrent, my microwave is quite quick). Check the dough in between by poking in a toothpick. if it comes out clean the pie is done.
