GRILLED CORN WITH RANCHOVY BUTTER

Number Of Ingredients 17

Kosher salt
4 ears fresh sweet corn, shucked and silks removed
4 anchovies
1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoon Ranch Rub, recipe follows
1/2 teaspoon paprika
2 cloves garlic, grated
Zest and juice of 1/2 lemon
1/2 cup buttermilk powder (found in the baking aisle)
1 tablespoon dried parsley
2 teaspoons dried chives
2 teaspoons dried dill
2 teaspoons garlic powder
1 teaspoon onion flakes
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Place the corn in a large bowl with well-salted water and let soak for up to an hour.
  • Meanwhile, add the anchovies to a large bowl and mash with a fork until a paste forms. Add the butter, Ranch Rub, paprika, garlic, lemon zest and lemon juice and continue to mash until completely combined. Set aside.
  • Remove the corn from the salted water and place over indirect heat. Cook, turning, until tender, about 5 minutes. Move the corn over direct heat to give it a little char, about 1 minute per side.
  • While the corn is still hot, spread lots of ranchovy butter all over it with a pastry brush. Serve immediately.
  • (Alternatively, you can bake the pre-soaked corn on a baking sheet in a 350 degree F oven until tender, about 7 minutes, then broil it for 45 seconds to give it some char.)
  • Combine all the ingredients in a medium bowl and mix well. Makes about 3/4 cup.

GRILLED SHRIMP WITH "RANCHOVY" SALAD

1/2 cup sour cream
1/2 cup mayonnaise
3/4 cup buttermilk
Juice of 1 lemon
2 cloves garlic, minced
6 anchovies, minced
2 tablespoons finely chopped dill
1 tablespoon finely chopped flat-leaf parsley
1 scallion, cut in half lengthwise and finely chopped
Kosher salt and freshly ground black pepper
4 thick slices rustic bread
Olive oil, for drizzling
1 pound large shrimp, peeled and cleaned
2 romaine hearts, split in half lengthwise then sliced
Wedge of Parmesan, for serving

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • In a medium mixing bowl, whisk together the sour cream, mayonnaise, buttermilk, lemon juice, garlic, anchovies, herbs and scallions. Season with salt and pepper and set aside.
  • Drizzle the bread slices with olive oil and season with salt and pepper. Grill until charred on both sides, about 45 seconds per side. Remove to a cutting board and cut into large croutons. Set aside.
  • Season the shrimp with salt and pepper and drizzle with olive oil. Grill until charred on both sides and cooked through, about 2 minutes per side.
  • In the meantime, add the romaine to a large mixing bowl. Drizzle with some of the dressing. Grate in some Parmesan, to taste, add the grilled bread croutons and toss.
  • Pour onto a platter and grate more Parmesan over the top. Crack fresh pepper over the top and add the grilled shrimp. Serve.

RANCH-RUBBED PORK RIBS



Ranch-Rubbed Pork Ribs image

1/2 cup buttermilk powder (found in the baking aisle)
1 tablespoon dried parsley
2 teaspoons dried chives
2 teaspoons dried dill
2 teaspoons garlic powder
1 teaspoon onion flakes
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 racks pork baby back ribs or spareribs
Pickle juice, for spritzing

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat. Place a pan filled with about 1 cup of water next to the coals for additional moisture.
  • For the ranch rub: Combine all the ingredients in a medium bowl and mix well.
  • For the ribs: Using a dry towel for grip, peel the membrane (silver skin) off the bone side of the ribs and discard. Generously season both sides of the ribs with the ranch rub.
  • Place the ribs bone-side down over indirect heat, cover the grill down and cook until the internal temperature of the ribs reaches 140 degrees F, about 1 hour. Wrap the ribs in aluminum foil and continue to cook for another hour.
  • Take the ribs out of the foil and put back onto the grill, still bone-side down. Spritz with pickle juice, cover the grill and continue to cook until the bones start to pull away from the meat, another hour or so. Check the ribs by flipping a rack over so the bones are facing up. Press your finger on the meat between the bones. If there is some give and the meat starts separating from the bone, they are ready. If not, continue cooking for another 30 to 45 minutes.
  • Remove the ribs from the grill, cut into 1-bone pieces and pile onto a platter to serve!
  • (Alternatively, you can bake the ribs in a 300 degrees F oven for 3 to 4 hours.)

PICKLE COLESLAW

1/2 cup honey
1/2 cup rice wine vinegar
2 tablespoons mayonnaise
1 tablespoon spicy mustard
1 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 head (2 pounds) green cabbage, thickly sliced (about 12 cups)
1 small red onion, thinly sliced
1 cup Chinese celery or celery leaves, roughly chopped
Your favorite pickles, chopped, plus juice, optional

Steps:

  • Whisk together the honey, vinegar, mayonnaise and mustard in a small bowl. Slowly drizzle in the oil, whisking to combine. Season well with salt and pepper. (Alternatively, add the honey, vinegar, mayonnaise and mustard to a mason jar with a lid, cover and shake well. Add the oil and shake well once more.)
  • Combine the cabbage, red onion, Chinese celery and pickles to taste in a large bowl. Pour the dressing over the vegetables and mix well. Taste and season with salt and pepper. For an extra kick of flavor, mix in some pickle juice if using to taste. Refrigerate until ready to serve.
