APPETIZER TORTILLA PINWHEELS
A friend gave me this recipe, and whenever I serve these tortilla pinwheel sandwiches, people ask me for the recipe, too! - Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

- In a bowl, combine turkey, 1/2 cup sour cream, 1-1/2 teaspoons taco seasoning, half the soup, 1 cup cheese, onion, salsa and olives. Place 1/3 cup filling on each tortilla. Roll up and place, seam side down, in a greased 13x9-in. baking dish. Combine remaining sour cream, taco seasoning and soup; pour over tortillas. Cover and bake at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese. Serve with shredded lettuce and chopped tomatoes. Top with additional salsa and sliced ripe olives if desired.

- In a small bowl mix together the Dijon mustard and honey until well combined.
- Lay a slice of turkey on a plate or cutting board. Spread a 1/2 teaspoon of the honey-mustard mixture widthwise along the turkey about 2 inches from the end of the slice. Place a piece of lettuce on top, then a couple of sticks of cucumber and slices of red pepper. Top with a basil leaf and roll it all up in the turkey slice.

- Place a small nonstick skillet on medium-high heat until it is hot enough for a spritz of water to sizzle on it. With an oven mitt, briefly remove the pan from the heat to mist lightly with oil spray. Add the turkey or beef to the pan. Cook, breaking into chunks with a wooden spoon for 3 to 4 minutes, or until lightly browned and no longer pink. Transfer the turkey or beef to a plate. Cover to keep warm. Return the pan to medium heat. Place the tortilla in the pan. Cook for about 30 seconds per side, or until just warmed. Transfer to a serving plate.
- Starting at one side, spread the sour cream evenly over two-thirds of the tortilla. Scatter the reserved turkey or beef over the sour cream. Top with the lettuce, tomato, and salsa. Starting at the filled end, roll the tortilla tightly into a tube, being careful not to tear it. Serve immediately.

THE BEST MEXICAN TORTILLA ROLL UPS
I am requested to make these all the time. They are easy, and people LOVE them. I developed this over the years to suit our tastes. There are recipes close to this one, but I like mine best! The amount of tortillas you need will depend on how thick you spread the mixture. I like them thick. Zaar wont let me list the chilies, olives and pimentos correctly. But I buy the small can of each. They are already chopped small, so they mix in well with the cream cheese.

- In a large bowl with an electric mixer cream the cream cheese until smooth.
- Add the salsa, taco seasoning, green chilies, black olives and pimentos (drained well).
- Mix well with a spoon.
- Spread the mixture on the flour tortillas.
- I use about 1/4 to 1/3 cup for each tortilla.
- Cut in 1 inch slices and serve with additional salsa to dip into.
