2 lbs ground beef
1 medium onion, (chopped)
2 cloves garlic, (minced)
1 tsp cumin
1 tsp Slap Ya Mama® seasoning
1 tsp garlic salt
1 tsp pepper
15 oz can green enchilada sauce
15 oz can black beans, (drained, rinsed)
10 oz can Rotel®
4 oz can diced green chiles
8 oz sour cream
2 cups Monterey Jack cheese, (shredded)
2 cups Sharp Cheddar, (shredded)
32 oz bag tater tots

Steps:

  • Preheat oven to 425° and lightly spray a 13 x 9 baking pan with cooking spray. Set aside.
  • Using a large cast iron pan or large skillet, add ground beef, onions, garlic, seasonings and pepper.
  • Cook over medium heat until ground beef is no longer pink and onions are translucent. Drain and return to pan.
  • Pour enchilada sauce, black beans, Rotel, green chiles and sour cream into ground beef mixture, stir.
  • Add mixture to baking dish, sprinkle both types of shredded cheese over mixture and neatly layer tater tots on top of cheese.
  • Bake uncovered for approximately 45 minutes or until tater tots are golden brown and mixture is heated thoroughly.
  • Carefully remove from oven and enjoy.

32 oz frozen tater tots (thawed)
1/2 cup butter
10.5 oz can cream of chicken soup
8 oz tub sour cream
1 bunch green onions (chopped)
8 oz pkg shredded Cheddar cheese (divided)

Steps:

  • Spray your 6-quart crock pot with cooking spray and pour in your tater tots.
  • In a medium saucepan, melt your butter on the stove.
  • Add in your soup, sour cream, chopped onions and 1 cup of Cheddar cheese.
  • Stir over heat until everything is well combined and the cheese is almost all melted.
  • Pour your mixture over your tater tots. Sprinkle on your remaining cheese.
  • Cover and cook on high for 2 hours.

1 packet Taco Spice
1 cup shredded cheese

Steps:

  • Brown ground beef with minced garlic.
  • Layer the bottom of the Crock Pot with tater tots. Add ground beef on top and then Velveeta.
  • Sprinkle Taco Seasoning over everything and lightly stir.
  • Cover with remaining hash browns.
  • Cook on high for 2 hours or low for 5-6 hours.
  • Remove lid and top with 1 cup shredded cheese. Cover and let cheese melt for 10 minutes.

10.75 oz can tomato soup
10.5 oz can diced tomatoes with green chiles (undrained)
1/2 cup onions (chopped)
1 teaspoon garlic powder
Salt and Pepper to taste
2 cups Mexican Blend Shredded Cheese
32 oz frozen tater tots (kept frozen)

Steps:

  • In a large bowl, mix together all your ingredients except your cheese and tater tots
  • Spread this mixture evenly in a lightly greased casserole crock pot
  • Sprinkle your cheese across the top
  • Put the frozen tater tots on top in one layer
  • Cover and cook on high for 2 hours, turning your insert halfway through cooking if your unit does not cook evenly
  • If desired and your insert is broiler safe, place your insert in the broiler on high on a shelf set in the middle of your oven for 1-2 minutes (do NOT walk away and watch constantly so you do not burn the top)

2 teaspoons vegetable oil, or as needed
1 (15.25 ounce) can whole kernel corn, drained
1 (4.5 ounce) can sliced mushrooms, drained
1 cup diced green bell pepper
½ cup mild salsa
½ large tomato, diced
3 tablespoons mild nacho cheese sauce
1 pound ground beef
¼ cup mild taco sauce
1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Mix corn, mushrooms, green bell pepper, salsa, tomato, and nacho cheese sauce together in a bowl. Layer mixture over the bottom of the prepared dish. Mix ground beef and taco sauce together in a separate bowl; add to the corn mixture in the dish and stir together. Layer potato puffs on top of casserole. Top with shredded Mexican cheese blend.
  • Bake in the preheated oven until beef is no longer pink, about 25 minutes.

1 (4 1/2 ounce) bag bacon pieces
1 lb boneless skinless chicken breast, diced
2 cups shredded cheddar cheese
3/4 cup milk
salt
pepper

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Layer half of the frozen tater tots on the bottom of the slow cooker.
  • Sprinkle with ⅓ of the bacon pieces.
  • Now top with ⅓ of the shredded cheese.
  • Add diced chicken on top.
  • Season with salt and pepper.
  • Now add ⅓ of the bacon pieces and another ⅓ of shredded cheese.
  • Put the rest of the frozen tater tots on top.
  • Finish with the remaining ⅓ cheddar cheese and remaining ⅓ of bacon pieces.
  • Pour ¾ cup milk all over the top.
  • Cover and cook on low about 4-6 hours.

1 (4 ounce) can sliced black olives
salt
pepper, and

1 (10 ounce) can mexicorn, drained
1 lb cheddar cheese, grated
1 (32 ounce) bag frozen tater tots

Steps:

  • Brown meat and onion; drain. Mix in sauce, olives, and seasonings. Heat through. Spread in 13x9-inch pan.
  • Cover meat with corn, and cover corn with cheese.
  • Place tater tots evenly over casserole until it is completely covered.
  • Bake according to tater tots package, stopping halfway through to "turn" tater tots (otherwise the bottoms may still be cold).

1 onion, diced
1 1/2 lbs hamburger meat
1 ounce taco seasoning mix
1/2 cup corn (optional)
10 ounces condensed cream of chicken soup
2 cups cheese, grated
frozen tater tots, as needed

Steps:

  • In a large nonstick frying pan put the oil and diced onion. Stir-fry until lightly browned and tender.
  • Add the hamburger meat and break it up with a spoon as it browns, stirring frequently.
  • Drain off excess oil.
  • Add the taco seasoning mix and 3/4 cup water. Bring mixture to a boil and cook until most of the excess liquid evaporates.
  • Stir in the corn and the cream of chicken soup.
  • Check seasonings.
  • Spoon the hamburger mixture into a 9 x 13 inch pan (a one-layer cake pan).
  • Top with the grated cheese.
  • Layer at least 1 pound of tater tots on top, putting them close together, or as desired.
  • Bake 350 degrees for at least 50 minutes. The tater tots should be well browned. Start checking after 40 minutes.
