MEXICAN SPICY CHICKPEAS



Mexican Spicy Chickpeas image

Vegetarian simple mexican dish, full of protein and spices served well with fried tortilla's and cheddar cheese

Number Of Ingredients 14

10 oz dried chickpeas ( 1 can 19 oz chickpeas)
1 whole onion, peeled left whole
1 tbsp oil
2 onions, chopped
1 garlic clove, crushed
1 red pepper, seeded and chopped
1/4 teaspoon ground black pepper
1/2 tsp turmeric
1 small dried hot red, chili, crumbled (optional)
1/2 teaspoon dried oregano
10 oz skinned and chopped tomatoes
2-tbsp tomato paste
3 1/2 fluid oz water OR reserved bean liquid (if using dried)
2 tbsp chopped fresh coriander

Steps:

  • Soak the chickpeas overnight in cold water. Drain and place in saucepan with teaspoon of salt and whole onion.
  • Bring to hard boil for 10 minutes and simmer uncovered until chickpeas are cooked and tender.
  • Drain and reserve liquid, OR use 1 can 19 oz chickpeas and miss this step.
  • Heat oil in large pot, fry onion until soft, add garlic red pepper, and continue to cook for 5 minutes
  • Stir in remaining salt, black pepper, chili, oregano, turmeric, tomatoes, tomato paste and some reserved
  • liquid. Add the drained chickpeas and stir well, simmer for 10 minutes. Serve hot with chopped coriander leaves.

Steps:

  • Saute all ingredients in a large frying pan over medium high heat for 5 minutes.
  • Add a little water if necessary, to prevent sticking. Serve over rice or cous cous.

SPANISH-STYLE CHICKPEAS AND ESCAROLE

A garlicky saute of escarole mixed with chickpeas and seasoned with Spanish smoked paprika.

2 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1 large head escarole or chicory, chopped
One 15-ounce can chickpeas, rinsed and drained
1 teaspoon ground cumin
1 teaspoon pimenton (Spanish smoked paprika)
Kosher salt

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the garlic and cook until slightly browned, about 4 minutes. Add the escarole in batches and cook until completely wilted, about 7 minutes.
  • Stir in the chickpeas and cook until heated through, about 1 minute. Stir in the cumin, pimenton, remaining 1 tablespoon olive oil and salt to taste. Serve.

GUASANAS (MEXICAN FRESH CHICKPEA/GARBANZO SNACK)

These are like Mexican edamame. I didn't know what the fresh chickpeas (aka garbanzo beans) were when I saw them in the store. They come in little bright green, slightly hairy pods. Finally a sign appeared - "garbanzo." I peeked inside a broken pod, and, sure enough, recognized the familiar shape. Then I had to figure out ways to eat them. I learned about this typical Mexican snack. You can eat them out of the pods, or shell a cupful and add them to salads. If you don't have a skillet, you can also steam or boil them in a saucepan. You may be able to find the fresh chickpeas in stores that carry a lot of Mexican, Middle Eastern, Indian, or Pakistani foods.

2 cups fresh chickpeas, in pods
1/3 cup water
1/2 teaspoon salt

Steps:

  • Wash the chickpeas.
  • Add the salt to the water.
  • Heat a cast iron skillet or a griddle.
  • Pour the salted water onto the skillet.
  • Put the chickpeas, still in their pods, in the steaming water.
  • Let steam for a few minutes, until the pods are bright green and a bit tender - test one to see if the chickpea is ready - you can even eat them raw, so they really don't need to cook much.
  • Remove all the chickpeas in their pods from the skillet. Shell and eat as a healthy snack.

2 lbs butternut squash, peel, cut in half, seeded and cut in 1-inch chunks
1 red bell pepper, cut in 1-inch chunks
1 onion, cut in 12 wedges
6 large garlic cloves, peeled
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 teaspoons dried oregano
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
5 cups water
1 (14 1/2 ounce) can chickpeas, rinsed
1 (14 1/2 ounce) can diced tomatoes
1 (7 ounce) can corn, drained
1 -2 teaspoon canned minced chipotle chile in adobo
1/2 cup chopped cilantro

Steps:

  • Heat oven to 425. Put fresh vegetables, garlic, 1 tbsp oil, the salt and pepper in a roasting pan or on 2 rimmed baking sheets; toss to mix and coat.
  • Spread in a single layer and roast stirring once for 25 minutes or until vegetables are lightly browned and tender.
  • Heat remaining 1 tbsp oil in a large saucepan over low heat. Stir in oregano, cumin and cinnamon; cook about 1 minute until fragrant.
  • Stir in 5 cups water, the chickpeas, tomatoes, corn and chipotle peppers.
  • Bring to a boil, reduce heat and simmer 15 minutes to blend flavors.
  • Stir in roasted vegetables and cilantro; reheat if necessary.

1 -2 jalapeno, stemmed, seeded, and chopped
3 tablespoons olive oil
1 garlic clove, minced
1 1/2 cups cooked chickpeas (16 oz can, drained)
2 tomatoes, chopped
2 tablespoons red onions, chopped
2 tablespoons cilantro, fresh, chopped
2 -3 tablespoons lime juice, fresh
1/2 tablespoon salt
ground black pepper

Steps:

  • In a small skilled or saucepan on low heat, sauté the chilies in the olive oil for about 4 minutes. Add the garlic and cook for another minute, stirring constantly, until the chilies are soft and the garlic is just golden. Remove from heat and set aside.
  • Combine the chickpeas, tomatoes, red onions, cilantro, lime juice, salt and pepper in a serving bowl. Add chilies and garlic with their sautéing oil and toss well. Serve immediately or chill to allow flavours to develop.

3 fresh jalapeño chiles
1 medium onion
2 garlic cloves
3 medium vine-ripened tomatoes
4 cups drained canned chick-peas (two 19-ounce cans)
1/4 cup extra-virgin olive oil
1/4 cup fresh lime juice plus additional to taste
3 tablespoons chopped fresh cilantro leaves

Steps:

  • Rinse chipotles. Wearing rubber gloves, separately seed and mince chipotles and jalape‱os. Mince onion and garlic. Peel, seed, and chop tomatoes. Rinse and drain chick-peas and in a large bowl stir together all ingredients except additional lime juice. Chill salad, covered, at least 2 hours and up to 1 day. Season salad with salt and add additional lime juice. Serve salad at cool room temperature.

  • PREP: Preheat oven to 400 degrees F (200 C). Drain and rinse chickpeas and then thoroughly dry in a salad spinner or with paper/kitchen towels. (Wet chickpeas won't roast as nicely.)
  • SAUCE: Start with the sauce so it can have time to chill. Add all the sauce ingredients to a small blender jar or food processor. Season to taste with salt and pepper. (I add 1/4 teaspoon of each -- use less if using table salt.) Blend until completely smooth. Taste and adjust as needed. Transfer to a Mason jar and place in the fridge until ready to use.
  • CHICKPEAS: Add chickpeas to an extra-large sheet pan. (I use a 15x21-inch pan) Drizzle on oil, all the seasonings, salt, and pepper to taste. (I add 1 teaspoon fine sea salt and 1/2 teaspoon pepper.) With your hands, toss everything until well coated (there are a lot of spices -- this is intended); spread the chickpeas out in an even layer (not overlapping) on the tray. Roast for 18-22 minutes, shaking the tray at the halfway mark. (We like them best at 20 minutes.) Roast until they're crisp, but not hard. Remove and set aside. (See Note 3 for Air Frying Directions)
  • QUINOA: While the chickpeas are roasting, prepare the quinoa according to package directions. (See Note 4.)
