What could be simpler than having this go to Mexican Street Corn Orzo Salad recipe on hand when you want to enjoy a tasty and filling salad! This salad has it all - sweetness, savory, a bit spicy, fresh ingredients and bacon (oh ya, bacon!)

1 1/2 cup dry orzo cooked according to directions
3/4 cup black beans, rinsed well
2 tablespoons red onion, minced
1 tablespoon jalapeno, minced
4 slices bacon, cooked and crumbled
2 cups charred corn*
1 avocado, diced
1/2 cup queso fresco cheese, crumbled
1/4 cup cilantro, chopped
1/2 cup mayo (no substitutes)
2 1/2 tablespoons fresh lime juice
1/4 teaspoon lime zest
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/2 teaspoon chili powder (I used medium strength)
1 teaspoon hot sauce
salt and pepper to taste

Steps:

  • To *char the corn, add 1 tablespoon vegetable oil to a large skillet until it is hot.
  • Add corn and stir and toss for about 6-10 minutes until slight char occurs - you could also char corn on grill but I haven't tried that method - see notes for a link to help
  • In a large bowl combine the cooled orzo, cooled corn, cilantro, red onion, beans, jalapeno and toss
  • If eating right away also stir in bacon, avocado and cheese
  • In a small food processor mix the mayo, lime juice, zest, cumin, paprika, chili powder and hot sauce
  • Pour over salad and stir gently to combine
  • Add salt and pepper to taste.

Grilled Mexican Street Corn Salad image

Number Of Ingredients 16

Neutral oil, for the grill grates
6 ears corn, shucked
4 scallions
2 jalapenos
1 red bell pepper
1/3 cup sour cream
1/4 cup mayonnaise
1 teaspoon chipotle chile powder
Zest and juice from 1 lime
1 clove garlic, grated on a rasp grater
One 15-ounce can black beans, drained and rinsed
1 cup grated Pecorino-Romano cheese
Kosher salt and freshly cracked black pepper
Hot sauce, as needed, optional
1/4 cup chopped fresh cilantro
8 slices crispy bacon, cooked using the Mauro Method and crumbled (see Cook's Note)

Steps:

  • Preheat a grill to high heat. Oil the grates well.
  • Put the corn, scallions, jalapenos and bell pepper directly on the grates. Grill, turning, until charred on all sides, 2 to 3 minutes for the scallions, 5 to 8 minutes for the peppers and 8 to 10 minutes for the corn; set aside to cool.
  • In a medium bowl, add the sour cream, mayo, chipotle chili powder, lime zest and juice and garlic and mix to combine.
  • Slice the corn kernels from the cobs. Remove the ribs and seeds from the red pepper and cut into small dice. Chop the scallions and dice the jalapenos (seeds and ribs removed to taste). Put the corn, red pepper, jalapenos, scallions and beans in the bowl with the dressing and mix to combine while the veggies are still slightly warm. Sprinkle the Pecorino-Romano over the salad. Season with salt and pepper and add a dash of hot sauce if desired. Top with the cilantro and crispy bacon and serve immediately slightly warm, or refrigerate until ready to serve.

This easy Mexican street corn salad is the ultimate summer side dish! Lightly creamy, spicy & bright, it's a recipe you'll make again and again.

4 ears fresh corn (husked)
Extra-virgin olive oil (for brushing)
1½ tablespoons mayo ((or vegan mayo))
1 garlic clove (minced)
Zest and juice of 1 lime
⅓ cup chopped scallions
¼ cup crumbled Cotija (or feta cheese)
¼ cup finely chopped cilantro
¼ teaspoon smoked paprika or chili powder
1 jalapeño (diced*)
¼ teaspoon sea salt

Steps:

  • Preheat a grill to medium-high heat. Brush the corn with olive oil and grill for 2 minutes per side, or until char marks form. Remove from grill and set aside.
  • In a large bowl, combine the mayo, garlic, and lime zest and juice. Slice the kernels off the corn and add to the bowl along with the scallions. Stir to coat, then add the cheese, cilantro, smoked paprika, jalapeño, and salt. Season to taste and serve immediately or chill until ready to serve.

Then combine it with authentic Elote ingredients, like cilantro, lime juice, and cotija cheese. This recipes makes a great side dish or serve it with tortilla chips for fun appetizer or snack.

6 ears corn on the cob, husked
2 tablespoons Country Crock® Spread
½ teaspoon salt
2 medium fresh jalapeno peppers, seeded and chopped
2 cloves garlic, chopped
1 teaspoon ground cumin
¼ cup mayonnaise
2 tablespoons lime juice
¼ cup chopped cilantro
2 tablespoons grated Cotija cheese

Steps:

  • Remove corn from cob using a sharp knife. You should have about 6 cups.
  • Melt Country Crock® Spread in large non-stick skillet over high heat. Add corn and salt and cook until slightly charred, about 5 minutes, stirring frequently. Be careful not to overcrowd skillet or corn will steam. If necessary, char corn in 2 batches. Add jalapeno, garlic, and cumin and cook 1 minute.
  • Stir in remaining ingredients. Serve warm or room temperature. Garnish with additional cilantro and Cotija cheese if desired.

This takes a little time for chopping, but for those who love Mexican food and orzo, you will love this fantastic tasting salad. It has the fresh taste of lime and cilantro!

1 (16 ounce) package orzo pasta
1 small red bell pepper, chopped
1 small yellow bell pepper, chopped
1 bunch green onions, chopped
1 small red onion, finely chopped
1 (15 ounce) can chickpeas, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (8.75 ounce) can whole kernel corn, drained
1 cup chopped cilantro leaves
salt to taste
pepper to taste
5 limes, juiced
6 tablespoons canola oil

Steps:

  • Fill a large pot with lightly salted water and bring to a boil over high heat. Stir in the orzo, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Drain.
  • Place the drained orzo in a large salad bowl, and fold in the red pepper, yellow pepper, green onions, red onion, chickpeas, kidney beans, black beans, corn, cilantro, and salt and pepper to taste. Pour the lime juice and oil over the salad, toss to coat, and refrigerate at least 2 hours to chill before serving.
