INSTANT POT MEXICAN STYLE SHREDDED BEEF
Taco Tuesdays just got more delicious with this easy to make Instant Pot Mexican Style Shredded Beef recipe for the perfect taco filling!

Steps:
- Salt and pepper both sides of the chuck roast.
- Select the Saute button on your Instant Pot, and add the oil when the display reads HOT.
- Brown the chuck roast on both sides, about 4 minutes per side.
- Pour the tomatoes over the roast, and add the garlic and onion slices. Pour the water around the sides of the roast.
- Secure the lid on the pressure cooker, select the Manual setting, and set the timer for 75 minutes using the + and - buttons.
- The Instant Pot will beep when it is finished. Allow the pressure to release naturally, then carefully remove the lid.
- Shred the beef with two forks, I place mine on a large dinner plate.
- Remove the tomatoes and onions from the pot and return the shredded beef.
- Add the lime juice, cumin, chili powder, and cilantro, stir to combine.
- Place the lid back on top of the pot until ready to serve.

MEXICAN SHREDDED BEEF

- Pat away the excess moisture from the exterior of the roast using a paper towel, and combine all of the spices in a small mixing bowl. Sprinkle the roast with half of the spice mixture. Rub it and pat the make sure it sticks. Then, sprinkle over 2 tablespoons of flour and rub that all over the roast as well. Set the roast aside.
- Add the 2 tablespoons of oil to a large pan over medium-high heat and allow to come to temperature. Add the beef and sear for 3-4 minutes on each side, and transfer to the slow cooker.
- Sprinkle the remaining 2 tablespoons of flour into the pan and whisk to combine. Add in the beef broth one big splash at a time, whisking after each addition. Allow the mixture to simmer for about 2 minutes, then add the adobo sauce and crushed tomatoes.
- Stir, remove from the heat, and carefully pour (or ladle) over the beef.
- Cover and cook on the high setting for 4 hours or on low for 6 1/2 to 8 hours.
- Shred the beef, return to the slow cooker, stir, and serve!

- Preheat the oven to 325 degrees F (165 degrees C).
- Cut chuck roast into 3-inch cubes, removing excess fat and connective tissue. Season beef with salt and pepper.
- Heat grapeseed oil in a large Dutch oven over high heat. Sear cubes of beef a few at a time, until well browned on all sides, about 4 minutes per batch. Reserve browned beef in a bowl. Reduce heat to medium and add onion and garlic. Cook until soft and just beginning to brown, about 10 minutes.
- Add 1 cup beef broth to onion mixture and stir well; simmer for 1 to 2 minutes. Add beef and pour in guajillo sauce. Add a little beef broth to the empty jar, seal, and shake to release remaining sauce; pour over the beef. Pour in enough of the remaining broth to just cover the beef. Add bay leaves and bring to a gentle simmer.
- Bake in the preheated oven, covered, until beef is fork-tender, about 2 1/2 hours.
- Remove beef from sauce and set aside; discard bay leaves. Skim off excess fat from the top of the cooking liquid and bring to a boil to reduce slightly. Shred beef with two forks and return to cooking sauce.

- Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the beef in the hot skillet, and brown it quickly on all sides.
- Transfer the roast to a slow cooker and top it with the chopped onion. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
- Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom of the cooker. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.
- Transfer the roast to a bowl and shred it using two forks (reserve 2 cups of cooking liquid, if desired). Serve in tacos or burritos (see Cook's Note).

- Get a Dutch oven (or a crock pot).
- Dice up 1 onion.
- Slice open 1 jalapeno. Remove all the seeds for mild, or leave seeds in for hot.
- Dice the sliced jalapeno.
- Add can of stewed tomatoes to Dutch oven, juice and all.
- Add fajita mix to Dutch oven.
- Add 2 cups water to Dutch oven.
- Add diced onion and jalapeno.
- Stir up well until fajita mix is completely dissolved.
- Add in meat. No need to cut it, but you may trim off the fat if so desired.
- Cook for 4 hours @ 250 f, or if crock pot, cook 6-8 hours on low.
- Serve over whatever suits your fancy; Spanish rice, a hoagie roll, tortilla shells, whatever.

SPICY SHREDDED MEXI BEEF ROAST (CROCK POT)
This is best served in a crusty roll topped with red onion, sliced tomatoes and sour cream! The spicy salsa can be substituted with 1 7-ounce can chipotle sauce if desired. The chipotle sauce and jalapeno chilies can be found in your Mexican section of any major grocery store. Adjust all amounts to taste, I have made this in the past, it is *very* good!

- Place beef roast in a 5-quart crock pot.
- Add in diced tomatoes with juice, spicy salsa (or chipotle sauce if using) jalapeno chilies, onion, garlic, chili powder, honey, salt and cumin.
- Pour in the beef broth; mix with a wooden spoon to combine and season with black pepper.
- Cover and cook on LOW until beef is tender when pierced with a fork (about 8-10 hours, cooking time will vary slightly depending on the size of your roast).
- If desired remove the lid and turn to HIGH for the last 30 minutes to allow the sauce to reduce and thicken.
- Season sauce with more salt if desired.
- Transfer the roast to a cutting board or large platter.
- Shred the meat using two heavy forks.
- Return the shredded meat to the slow cooker; cover and allow to warm.
- Serve in crusty buns.
