Hot, golden street corn that is both sweet and smoky with a bit of Mexican zip and zest.

2 tablespoons chili powder
½ teaspoon kosher salt
¼ teaspoon cayenne pepper
8 ears corn, unhusked
4 limes
½ cup crumbled Cotija cheese (queso anejado)

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Mix together chili powder, kosher salt, and cayenne in a small bowl. Set mixed seasonings aside.
  • Remove most of the silk while leaving 2 to 3 layers of husk on each ear of corn.
  • Cook corn on the preheated grill until husks are slightly charred, turning every 3 to 4 minutes, for 12 to 14 minutes. Let cool slightly. Remove husks carefully, leaving stems on as handles.
  • Squeeze 1/2 lime over each ear of corn. Sprinkle each with mixed seasonings to taste and top generously with Cotija cheese.

4 ears corn
1/2 cup mayonnaise
1 1/2 cups sour cream
1/4 cup freshly chopped cilantro leaves
1 cup freshly grated Parmesan
1 lime, juiced
Red chili powder, to taste
2 limes cut into wedges, for garnish

Steps:

  • Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.

1-1/2+ c parmesan, grated
4 Tbsp fresh cilantro, minced
4 tsp chili powder
1 lime, cut into 4 wedges

Steps:

  • 1. Preheat oven to 400 degrees F. Brush corn lightly with butter and sprinkle with salt and pepper. Roast 20-25 minutes. 2. Working with one ear of corn at time brush with mayonnaise, sprinkle with cheese, cilantro and chile powder, pressing it onto the corn to help it stick. Sprinkle with salt and pepper. Steps:

  • Preheat the oven to 425°F (220°C).
  • Add the corn to a medium cast iron skillet. Drizzle with the olive oil and season with salt.

2 tablespoons finely grated parmesan cheese

Steps:

  • Prepare grill.
  • Combine mayo and juice (if using) in a small bowl.

1 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
1/4 cup crumbled feta cheese
1/4 cup KRAFT Real Mayo
1 Tbsp. canned chopped green chiles
1/2 tsp. chili powder
3 Tbsp. chopped fresh cilantro, divided
6 flour tortillas (6 inch)
1 avocado, chopped

Steps:

  • Use sharp knife to cut kernels off each corn cob. (You should have about 1-1/2 cups corn kernels.)
  • Combine cheeses, mayo, green chiles, chili powder, 2 Tbsp. cilantro and 1 cup corn.
  • Spoon onto tortillas, adding about 1/4 cup cheese mixture to each tortilla; fold in half.
  • Spray grill pan with cooking spray; heat on medium heat. Add 3 quesadillas; cook 4 to 5 min. on each side or until filling is heated through and quesadillas are lightly browned on both sides. Repeat with remaining quesadillas.
