1 pound thinly sliced or shredded cabbage ( 1/2 a large head, 4-5 cups shredded - purple is pretty, or green or use a mix)
¼ cup very thinly sliced red onion, more to taste ( or sub 1/2 cup green onion)
1 cup chopped cilantro ( packed, thin stems ok!)
¼ -½ - one whole jalapeño, finely chopped, more to taste
1 tablespoon lime zest
¼ cup fresh lime juice, more to taste
2 tablespoons olive oil
½ teaspoon kosher salt, more to taste
1 teaspoon cumin
1/2 teaspoon coriander
pepper to taste

Steps:

  • Shred the cabbage by very thinly slicing or use a mandolin. If making an extra-large batch using your food processor with grater attachment is a good option. See notes for adding other veggies.
  • Add the cilantro, onion (see note), jalapeno, lime zest and lime juice, olive oil, salt, cumin, coriander and pepper.
  • Toss well. Taste and adjust salt and lime to your liking. Add extra jalapeno if you like.
  • Keep in the fridge until ready to serve.

Mexican taco stands typically offer crunchy pickled vegetables to accompany their tacos. Shredded cabbage and sliced radishes are often found in small containers marinating in vinegar, to which guests can help themselves. The contrasting colors and textures, along with the vivid flavors of these toppings, make for a great salad and accompaniment to any meal.

Number Of Ingredients 9

1/2 small head white cabbage, cored and thinly shredded (3 cups)
3 large radishes, sliced into thin strips (1/2 cup)
2 scallions, tops trimmed and thinly sliced (1/4 cup)
1/2 cup red wine vinegar
1 teaspoon salt
1 teaspoon sugar
1 1/2 tablespoons olive oil
2 tablespoons fresh cilantro leaves, chopped, plus 1 sprig for garnish
Black pepper

Steps:

  • Combine the cabbage, radishes, scallions, vinegar, salt, and sugar in a sealable plastic bag and mix well. Expel as much air as possible and seal the bag. Allow the vegetables to marinate for at least 30 minutes, and up to overnight.
  • Using tongs or two forks, remove the vegetables from the marinating liquid (allow excess vinegar to drain off) and place in a mixing bowl. Discard the remaining vinegar mixture.
  • Before serving, add the olive oil, cilantro, and black pepper and toss well. Check for seasoning and adjust if necessary.
  • Transfer to a serving dish and garnish with a fresh sprig of cilantro.
  • TECHNIQUES
  • Shredding Cabbage
  • The slicing side of a box grater works really well for this. However, if you don't have one, you can shred the cabbage with your knife by cutting the cabbage in half, removing its core, and then slicing the cabbage very thinly.
  • Marinating the Vegetables
  • I find marinating vegetables in a sealed plastic bag that has had all of its air expelled is an efficient way of making sure all the vegetables have been exposed to the marinade. (It is also compact enough to fit easily in your refrigerator.) If you don't have a plastic bag, use whatever container you have on hand. In that case, just make sure to stir the vegetables often.
  • ADVANCE PREPARATION
  • The vegetables can marinate overnight and will benefit from the extra time. However, in order for the cilantro to stay fresh, toss it with the olive oil no sooner than 1 hour before serving.

fresh orange juice, 2/3 cup (5 fl oz/150 ml)
fresh lime juice, 3 tbsp
achiote paste, 3 tbsp
yellow onion, 1 small, chopped
garlic, 2 cloves, chopped
dried oregano, 1/2 tsp
boneless, skinless chicken thighs, 2 lb (1 kg)
kosher salt and freshly ground pepper
for the radish slaw
radishes, 2 1/2 cups (about 18) trimmed, halved, and thinly sliced
green onions, 2, thinly sliced
fresh cilantro, 1/3 cup (1/2 oz/15 g) chopped
fresh lime juice, 1 tbsp
corn oil, for frying
corn tortillas, 12, each 4 inches (10 cm) in diameter
cotija cheese, 3 oz (90 g), crumbled
avocados, 2 large, halved, pitted, peeled, and sliced

Steps:

  • To prepare the chicken, in a heavy Dutch oven, stir together the orange juice, lime juice, and achiote paste until the achiote paste is smooth. Add the onion, garlic, and oregano and mix well. Add the chicken thighs and turn to coat evenly. Sprinkle the chicken with salt.
  • Cover, place over medium heat, bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until the sauce has thickened and the chicken is opaque throughout when pierced with a knife tip, about 40 minutes. Uncover and continue to simmer until the sauce is very thick and the chicken begins to fall apart and catch on the bottom of the pan, about 10 minutes.
  • Remove from the heat and let cool slightly, then shred the chicken. Season with salt and pepper.
  • To make the radish slaw, in a small bowl, combine the radishes, green onions, cilantro, and lime juice and toss to mix. Season with salt.
  • Pour oil to a depth of 1 inch (2.5 cm) into a deep, heavy frying pan and warm over medium-high heat until almost smoking. One at a time, add the tortillas and cook, turning once with tongs, until crisp and golden, 1-2 minutes. As each tortilla is ready, transfer it to paper towels to drain, then sprinkle lightly with salt.
  • Arrange 2 tortillas side by side on each individual plate. Top the tortillas with the chicken, dividing it equally, and then spoon the radish slaw evenly over the chicken. Top the tostadas evenly with the cheese and the avocado slices and serve.

1/2 small head green cabbage
1/2 small head savoy cabbage
1 medium watermelon radish or 1 bunch red radishes
2 poblano chilies
3 tablespoons fresh lime juice, more to taste
1/2 cup minced fresh cilantro
1/4 teaspoon kosher salt
Freshly ground pepper to taste
Pinch cayenne pepper
1/4 teaspoon sugar
3 1/2 tablespoons vegetable oil

Steps:

  • Make slaw: Remove tough outer leaves of cabbage halves and core halves. Using a food processor, a mandoline or a knife, shred cabbage as finely as possible.
  • Peel watermelon radish and cut into matchsticks, then cut matchsticks in half. Alternatively, trim radishes and roughly chop. Stem chilies and deseed them, then chop in pieces smaller than a dime. In a large bowl, mix all ingredients together. Set aside.
  • Make vinaigrette: In small bowl, whisk together all ingredients except oil. Let cilantro steep in mixture for a few minutes, then whisk in the oil in a steady stream to emulsify.
  • Taste and add more lime juice, salt or pepper if needed. Pour over slaw and blend well. Serve.

I took the recipe from Cooking Light and tweaked it a little. The first time I made it by the recipe it was too tart and not spicy enough so the following is what I finally came up with.

1 large maui onion, thinly sliced
1/2 bunch cilantro, chopped
1/3 cup lime juice
5 teaspoons light extra virgin olive oil
3/4 teaspoon sea salt
1 tablespoon sugar or 1 tablespoon sugar substitute
4 jalapenos, seeded and thinly sliced

Steps:

  • Combine the cabbage, onion, cilantro and jalapeños in a salad bowl and set aside.
  • Combine the lime juice, olive oil, sea salt and sugar and whisk until the sugar and salt are dissolved, then pour over the cabbage mixture and serve immediately.
  • I do not like this dish as a leftover, it loses it's crispness and clean taste.
