How to make Mexican-style popsicles, a.k.a. paletas! This fresh fruit paletas recipe comes in 4 delicious flavors and requires just a handful of simple ingredients.

6 cups roughly chopped strawberries (fresh or frozen and thawed)
6 cups roughly chopped mango (fresh or frozen and thawed)
6 cups pineapple chunks (fresh, canned, or frozen and thawed)
6 cups roughly chopped kiwi (about 12 kiwis)
¼ cup sugar or honey
¼ cup fresh lime juice
Water as needed

Steps:

  • Blend: Choose the fruit you want to use, then divide it in half. Finely chop half of the fruit and set it aside. Put the remaining fruit in a blender, along with the sugar and lime juice. Blender until smooth, adding a splash of water as needed to get things moving.
  • Mold: Stir chopped fruit into blended mixture. Pour into molds, leaving a little space at the top for them to expand. Firmly tap the mold on the counter to remove any air bubbles. Insert sticks and freeze until hard (at least 4 hours).
  • Serve: Run the mold under warm water for a few seconds to loosen them up, then remove from the mold.

MANGO CHILI POPSICLES

This easy to make Mexican-inspired Mango Chili Popsicle recipe is made with only 4 ingredients and makes a perfect healthy afternoon snack or dessert for those hot summer days.

2 1/2 cups mango nectar (or mango juice)
3/4 cup diced mango
1/4 cup freshly sqeezed orange juice (about 1 medium orange)
1 tsp chili powder

Steps:

  • Combine diced mango, orange juice and chili powder in a large bowl.
  • Spoon mango mixture evenly into each mold.
  • Pour mango nectar evenly to top off each mold. Cover and insert popsicle sticks.
  • Freeze for 4 hours or until popsicles are completely frozen.
  • Gently remove frozen popsicles from mold by running mold under warm water and pulling the popsicles straight up. If they don't budge right away, run some more warm water and try again.
  • Enjoy immediately!

COCONUT MANGO POPS

These are inspired by a Mexican treat that coats mango in chile and lime. It's so refreshing and delicious! I like to add a little coconut, in a Southeast Asian-inspired move.

2 small dried ancho chiles, stemmed and seeded (or 2 tablespoons ancho powder)
1/2 cup shredded sweetened coconut
Zest of 1 lime
2 tablespoons sugar
2 large ripe mangos
Flaky salt, for garnish

Steps:

  • Put the ancho and coconut in an electric spice grinder and pulse until ground. (You don't want it too fine; a tiny bit coarse is great.) Combine this mixture with the lime zest and sugar in a bowl and toss to combine.
  • Cut an end from 1 mango so it sits straight. Use a sharp knife to cut down and peel off the skin. Cut the flesh from the mango in planks, getting as close to the pit as you can. Cut the planks into wide pieces (you'll get 5 to 6 pieces out of 1 mango). Repeat with the remaining mango to get 10 to 12 pieces total.
  • Stick a lollipop stick in each piece of mango and sprinkle them all over with the coconut-chile mixture. Sprinkle lightly with the flaky salt and serve.

2 ripe medium-size mangoes or 2 cups frozen mango pulp
3/4 cup sugar
water
3/4 cup cracked ice or 6 ice cubes

Steps:

  • If using fresh mangoes, place a mango on its side on a cutting board. With a sharp knife, cut straight down on either side of the large, flat-sided pit in the middle of the mango. Scoop out the mango pulp from both sides. Repeat with the second mango.
  • Place the mango pulp, sugar, 1/2 cup water, and the ice in a blender or a food processor with steel knife blade. Blend until smooth and frosty. pour the mixture into Popsicle mold or ice trays and freeze until solid, about 2 hours.
