SOPA DE LIMA (MEXICAN LIME SOUP)
Hot or cold outside, this soup is light and refreshing. I first enjoyed this dish while sitting ocean-side in Mexico. Goes great with a margarita or beer and a side of chips and salsa. Use whatever chilies you want (hot or mild) depending on the amount of heat you enjoy. Serve in bowls with crushed tortilla chips or strips on top.

- Bring the chicken broth, chicken breasts, red onion, garlic, oregano, salt, pepper, and thyme to a boil in a large pot; reduce heat to medium-low and simmer until the chicken breasts are no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove the cooked chicken to a cutting board and shred into bite-sized strips; return to the simmering pot.
- Heat the oil in a skillet over medium heat; cook the green onions and green chile pepper in the hot oil until tender, about 5 minutes. Stir the tomatoes into the mixture and continue cooking until soft, about 5 minute more; pour the mixture into the pot with the chicken soup. Season with the salt; return the soup to a simmer. Add the lime juice and 1/2 a lime; cook another 10 minutes. Remove the pot from the heat and remove the lime half; stir in the cilantro to serve.

Steps:
- In a large saucepan, heat oil over medium low heat.
- Add onions and garlic and cook for about 3 to 5 minutes or until softened, stirring occasionally.
- Add stock and bring to boil.
- Stir chicken in and reduce heat to low.
- Partially cover and simmer very gently for about 10 minutes.
- In a small bowl, gently combine tomato, avocado, lime juice, hot sauce and cilantro; set aside.
- Just before serving, stir in tomato/avocado mixture; serve immediately.
MEXICAN CHICKEN LIME SOUP (LOW FAT AND LOW CARB!)
This mexican inspired soup is filling, delicious and low in fat and carbs! You can also add rice, corn or beans and top it with slices of avocado to make it a heartier meal, if you prefer. I found this recipe online and doubled the chicken to meet my diet. Enjoy!

- Dice the onion, celery and jalapeno. Mince the garlic. Heat the olive oil in a large pot over medium heat. Add the onion, celery, jalapeno and garlic and cook for about 5 minutes or until tender.
- Add the chicken breast, broth, can of tomatoes, oregano and cumin to the pot. Bring the mixture to a boil, reduce heat to low, cover and simmer for 1 hour.
- remove the chicken from the pot, shred with 2 forks and return to the pot. squeeze the lime juice into the soup.
- Rinse the cilantro and roughly chop. add salt as desired. Stir and serve!

- Spray olive oil mist over the chicken breasts, then squeeze the juice of 1 lime over them. Grill (or broil) the chicken over medium heat for 5 minutes per side. Cool for a few minutes, then dice or shred. Set aside.
- Bring the chicken broth to a simmer. Add the bell pepper, garlic, celery and carrot. Cook over low heat for 15 minutes. Stir in the zucchini and cook for 5 minutes. Add the reserved chicken, the juice of the remaining limes and the tomato. Season with salt. Simmer for a couple of minutes. Remove from heat. Stir in the cilantro and salsa, or pass them at the table.
- For Salsa: Combine the onion, tomatoes, chile, garlic, cilantro and lime juice in a bowl. Season to taste with salt. Yields about 2 cups.

- Preheat oven to 500°F.
- Place the chicken in a saucepan and cover with water. Bring just to a boil; reduce heat, cover and simmer 10 minutes.
- Cool slightly; remove the skin and bones. Shred the meat and set aside.
- Cut the tortillas into 1/2 inch wide strips. Cut longer strips in half. Dip in water and lay on a baking sheet. Sprinkle lightly with some of the salt. Bake 5 minutes; turn and continue to bake 3 minutes. Set aside.
- Heat the olive oil in a large pan. Add the onion, jalapeño and garlic; sauté 5 minutes.
- Stir in the chicken, tomato, zucchini, broth, beans, salt, oregano and allspice. Bring just to a boil, reduce heat and simmer 10 minutes.
- Remove from the heat and stir in the lime juice, lime zest and pepper.
- Divide among 6 bowls and garnish each serving with the tortilla strips; serve with lime wedges on side.

- Mix olive oil with coriander, paprika, sugar and the zest of the lime.
- Cover chicken breasts in marinade, squeeze juice of 1/2 lime over the meat, and place in fridge for at least 30 minutes.
- When ready to bake, place chicken breasts in a baking dish and place 2 lime slices under the skin of each breast.
- Place garlic and chillies around the chicken and roast for 30-35 minutes at around 375 F or 190 C.
MEXICAN LIME WITH CHICKEN OR TURKEY TORTILLA SOUP
I love this soup. simple but great flavor to start off a Mexican meal. Adjust the hotness to your own likeing. Although the original recipe did not say "cilantro" I believe at least a 1/4 cup of fresh chopped cilntro will really enhance the flavor of this soup.

- Spray a skillet with lite olive oil and fry the tortilla strips until brown& crisp, drain on paper towel.
- Spray the pan again and saute the onions& chilis until tender but not brown.
- Add broth& turkey (whatever), cover and simmer for 20 minutes.
- Add tomatoe, simmer 5 more minutes, stir in the lime juice.
- Taste and adjust the seasoning.
- Ladle into hot bowls, add tortilla chips and garnish with a slice of lime.
