BEAN AND FRITO SALAD



Bean and Frito Salad image

Some people like to use Doritos instead of Fritos for this salad. Whichever chip you use, this salad goes great with Mexican food or barbecue.

1 head lettuce, torn in small pieces
1 (15 ounce) can ranch style beans, rinsed & drained (kidney beans)
chopped green onion
2 tomatoes, diced
1 cup grated cheddar cheese
2 cups Fritos corn chips
1 (16 ounce) bottle Catalina dressing

Steps:

  • Mix all ingredients together, except don't add Fritos and dressing until just before serving.
  • Enjoy.

This salad is a must have at our family get togethers and it is a great weeknight meal for a hot summer night too! Hope you enjoy.

1 lb hamburger meat
1 (1 ounce) package taco seasoning
2/3 cup water
1 head lettuce, chopped
1 pint cherry tomatoes, halved
1/2 cup red onion, diced
2 avocados, diced
1 (15 ounce) can black beans, drained
1 -2 cup frozen corn, thawed
1 -2 cup shredded cheddar cheese
1 (16 ounce) bottle Catalina dressing
4 -6 cups Fritos corn chips

Steps:

  • Brown hamburger meat in frying pan. Drain off fat and return to pan with taco seasoning and water. Simmer meat an additional 3-5 minutes until most of water is absorbed. Allow meat to cool for about 10 minutes.
  • In a separate bowl, mix lettuce, tomatoes, onion, avocados, beans, corn, cheese, and cooled taco meat.
  • Mix as much dressing and Fritos as you desire when you are ready to serve salad.
  • If you mix them in too early, the salad and Fritos will be soggy.

Seasonal Mexican Frittata with Salad image

1 tablespoon olive oil
2 small zucchini, cut into 1-inch dice
2 scallions (white and pale green parts only), chopped
1 ear corn, kernels cut off the cob
1/3 cup diced tomatoes (1-inch dice)
5 large eggs
1 tablespoon chopped fresh cilantro
Salt and freshly ground black pepper
1/3 cup Mexican crema
1/3 cup shredded Oaxaca or mozzarella cheese
4 cups arugula
1/4 cup toasted pepitas (hulled green pumpkin seeds)
1/4 cup dried cranberries
Juice of 1 lemon
Drizzle of olive oil
Salt and freshly ground black pepper
Big pieces of shaved Parmesan, for topping

Steps:

  • For the frittata: Preheat the oven to 425 degrees F.
  • In an 8-inch nonstick, ovenproof saute pan, heat the oil over medium heat. Add the zucchini and cook until soft, about 4 minutes. Add the scallions and corn and cook until soft, about 3 minutes. Add the tomatoes and cook for about 1 minute.
  • Meanwhile, in a medium bowl, beat the eggs with 2 tablespoons of water. Add the egg mixture and cilantro to the pan along with some salt and pepper. Cook for about 8 minutes, lifting the edges with a spatula to allow any uncooked egg to flow to the bottom. Transfer the pan to the oven and bake until puffed and golden, 8 to 10 minutes. Pour the Mexican crema over the top and sprinkle with the cheese. Serve warm or at room temperature.
  • For the salad: Add the arugula, pepitas, cranberries, lemon juice, olive oil and some salt and pepper to a bowl and toss to combine. Top with Parmesan shavings

1/2 red bell pepper, sliced and chopped
1/2 green bell pepper, sliced and chopped
1/2 purple onion, chopped
1 cup mayonnaise
1 cup shredded cheddar cheese
5 ounces of chili cheese flavor Frito corn chips

Steps:

  • Mix all the ingredients except the chips.
  • Add the chips in before serving otherwise the chips will get soggy.
  • Red peppers are expensive so you can just use green instead.

My favorite taco salad recipe in the world. After my grandma passed I thought I had lost the recipe forever but found it in an old church congregation cookbook that was published in 1980 and it had her recipe in it! I hope you enjoy it as much as I do.

1 1/2 lbs ground beef
1 (10 1/2 ounce) can Campbell's cheddar cheese soup
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
1 (15 ounce) can tomato sauce
1 teaspoon oregano (or to taste)
1/2 teaspoon crushed red pepper flakes (more or less to taste)
1 head iceberg lettuce, torn into bite size pieces
1 -2 tomatoes, diced
1 red onion, diced (optional)
2 (2 1/4 ounce) cans pitted black olives, sliced (more or less to taste)
1 (14 ounce) bag Fritos corn chips (Original)

Steps:

  • Brown and drain ground beef. Add soups, tomato sauce, oregano, and crushed red pepper flakes. Stir together well and let simmer over medium-low heat for 15 minutes. Remove from heat and let cool. Pour over remaining ingredients, mix well, and serve immediately.

I got this recipe years ago from our church bulletin. It's a great summer barbecue salad or an excellent side dish for any occasion. Very quick and easy! Cooking time is marinating time.

  • Drain Ranch Style Beans well and pour in large mixing bowl.
  • Add diced onion, tomatoes, bell pepper, cheese and Catalina, mix well.
  • Let mixture marinate in refrigerator for several hours. When you are ready to serve, add Fritos and mix well.
