FRIED WHOLE FISH, CHIPOTLE SAUCE, RICE, AND MEXICAN SLAW

Steps:
- For the fish: Combine garlic, salt and 1 gallon water in a pot. Bring to a boil and turn off the heat. Pour the brine in a container to cool it down to room temperature, then add fish. Let the fish soak in the brine, refrigerated, for 24 hours.
- Heat the oil in a deep-fryer to 325 degrees F. Fry fish until cooked through, 8 to 9 minutes.
- Let fish rest for a couple of minutes, then place on a plate. Serve with Chipotle Sauce, Mexican Slaw and rice.
- Add butter to a large pot over high heat, then add onion, adobo puree, cilantro, jalapeno and garlic. Cook, stirring, for about 2 minutes, then add lobster broth and ketchup. Lower to medium heat and cook for 10 minutes.
- Toss red and white cabbage, onion and cilantro in a bowl and add lime juice, olive oil and salt to taste.

Steps:
- Cook and stir rice and oil in a skillet over medium heat until lightly toasted, about 2 minutes. Add onion and cook for 2 minutes. Add garlic and cook until fragrant, about 1 minute.
- Pour chicken broth into rice mixture and bring to a boil; stir tomato, cumin, saffron, salt, and black pepper into broth and bring to a boil. Cover, reduce heat to low, and simmer until rice is cooked, about 20 minutes.
- Stir peas and carrots into cooked rice; garnish with cilantro.

MEXICAN FRIED RICE
Steps:
- Add two tablespoons of the olive oil to a large skillet over medium-high heat.
- When the oil is hot, add the onion, and sauté for 3 to 4 minutes or until soft.
- Add the tomatoes, corn, and green chiles, and cook for 2 to 3 minutes or until the liquid has cooked out.
- Add the seasonings and garlic, and cook for 1 to 2 minutes or until the garlic begins to brown.
- Turn the heat down to medium, add the remaining olive oil and the cooked rice.
- Cook for 4 to 5 minutes, stirring frequently to blend the rice and seasonings.
- Stir in the green onions, and remove the pan from the heat.
- Top with the remaining green onions.
MEXICAN FRIED RICE WITH CHIPOTLE AND TURMERIC

- Mix eggs with 1/2 teaspoon garlic powder, salt and pepper. In a skillet on medium high heat, pour the eggs into the pan with a little oil. Make scrambled eggs by folding the eggs with a spatula, and set aside.
- In the same pan fry carrot matchsticks, onion and bell pepper with chipotle paste and the rest of the spices. Fry for a couple of minutes, until vegetables reach your desired softness. I like to cook them for about 5 minutes. Add in rice and frozen peas*. Give it a good mix and then add in eggs. Pour over soy sauce. Taste and adjust seasoning with salt and pepper.
- I like to serve this with avocado and a dollop of sour cream. Adding some crunchy tortilla chips and shredded Mexican cheese are also high on my list!

MEXICAN TOMATO RICE
Enjoy this easy Mexican rice as a side dish to accompany beef burritos or chilli. You can choose to make it veggie if you like by using vegetable stock

- Heat the oil in a saucepan and sizzle the onion for 5 mins until just starting to soften. Add the garlic and cook for a minute more, then stir in the chipotle paste (if using) and the tomato purée and cook for a minute.
- Add the tomatoes and simmer for a few minutes, then scatter the rice into the pan and stir, so it's coated in the tomato mix. Pour over the hot stock, season, give everything another stir and bring to the boil, then cover the pan with a lid and turn the heat down to the lowest possible setting.
- Gently simmer for 15-20 mins until all the stock has been absorbed and the rice is cooked through. Leave the rice to sit for a few mins off the heat, then stir through the coriander and serve.

- Heat oven to 180C/160C fan/gas 4. Toss the pork with 1 tbsp of the chipotle paste, cumin, paprika, sugar and some seasoning. Spread on a baking tray, drizzle with the vegetable oil and bake for 20 mins until tender.
- Meanwhile, cook the rice following pack instructions until just cooked, then drain. Put back in the pan, add the beans and keep warm with a lid on.
- In a small bowl, toss the avocado with the red onion, most of the coriander, remaining chipotle paste and lime juice, then season. Serve the rice and beans with the pork, avocado salsa, jalapeño, lime wedges and remaining coriander.

- Set a large mixing bowl next to the stove. Warm 1 tablespoon oil in a large skillet over medium-high heat. Add the onion and garlic and saute until fragrant. Add the bell peppers and continue cooking until tender. Transfer to the waiting bowl.
