Easy-to-make appetizers sure to score points as part of your Superbowl party buffet table! Plan to chill this Pillsbury recipe at least 20 minutes before serving.

Provided by Debs Recipes

Categories     Lunch/Snacks

Time 25m

Yield 48 appetizers

Number Of Ingredients 11

2 (8 ounce) cans crescent rolls
1 (16 ounce) can refried beans
1 cup sour cream
2 tablespoons taco seasoning mix
1 1/2 cups shredded cheddar cheese
1/2 cup sliced green onion
1/2 cup chopped green bell pepper
1 cup chopped tomato
1/2 cup sliced ripe olives
1 (4 ounce) can diced green chilies
1 (16 ounce) jar thick & chunky salsa

Steps:

  • Separate crescent dough into four long rectangles; place dough rectangles crosswise in an ungreased 15x10" baking pan; press dough over bottom and barely up sides of pan to form a crust; press dough perforations to seal.
  • Bake crust at 375°for 14 to 19 minutes or until light golden-brown; remove from oven and cool completely.
  • Spread beans over crust to within a half-inch of edges; stir together sour cream and taco seasoning mix, and spread this mixture over the beans; sprinkle onions, bell pepper, tomatoes, olives, green chiles, and cheese evenly over sour cream mixture.
  • Cover and refrigerate at least 20 minutes; cut into squares; serve with salsa.
  • NOTE: I like to spread the salsa evenly over the seasoned sour cream layer (just before sprinkling on the chopped veggies and cheese) rather than serve it on the side.

CHEESE SQUARES APPETIZER

Cheese Squares Appetizer image

This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

SPINACH CHEESE SQUARES

Spinach Cheese Squares image

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

Provided by Divaconviva

Categories     Spinach

Time 55m

Yield 54 canapes, 18-20 serving(s)

Number Of Ingredients 11

2 tablespoons butter
3 eggs
1 cup flour
1 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1 lb monterey jack cheese, shredded (Sometimes I use jack cheese with jalapenos)
4 cups spinach, fresh chopped, cooked and drained very well (I use bagged baby spinach, no washing & cooks in 2 minutes)
3 -4 tablespoons onions, minced
1/2 teaspoon mixed Italian herbs
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
  • Beat eggs.
  • Mix flour into beaten eggs.
  • Stir in milk, salt and baking powder.
  • Add cheese and spinach, mixing well.
  • Add onion and seasonings, stirring thoroughly.
  • Spread into baking pan and bake at 350 degrees for 35 minutes.
