This next level mashup of beer cheese dip and queso dip is quick, easy and a little unexpected.

Steps:
- In 2-quart microwavable bowl, mix cheese, beer, green chiles, garlic and taco seasoning mix. Microwave uncovered on High 3 minutes; stir, then microwave 3 to 5 minutes longer or until mixture can be stirred smooth.
- Stir in sour cream, and top with diced tomato and cilantro. Serve with chips.

- In a large hot skillet over medium heat, brown the chorizo until cooked, about 5-7 minutes. Remove the chorizo with a slotted spoon to a bowl, leaving the grease behind.
- Add the onion and jalapeno to the hot grease and cook until softened, about 5 minutes. Add garlic and cook 60 seconds.
- Stir in flour, coating the onion mixture. Slowly whisk in the beer and milk. Bring to a boil and cook for 3-5 minutes or until thickened. Stir in the cheese and salt until cheese has completely melted. Add the cooked chorizo. Remove from the heat, garnish with cilantro, and serve immediately.

This is great for football gatherings when you want to serve something hearty and filling. It gets lots of compliments. Serve with bite-size pieces of bread and vegetables.

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

- Preheat oven to 350 degrees.
- Spread the cream cheese out to cover the bottom of a baking pan. 9 by 5 inches and 2 to 3 inches deep or thereabouts works well.
- Scoop the salsa onto the cream cheese layer and spread even across the cream cheese to cover it.
- Sprinkle the cheese around the pan to cover the salsa.
- Place the baking pan in the oven. Bake uncovered for 25 minutes.
- Remove dip from oven and serve along with tortilla chips. We typically have it served right from the pan. Enjoy!

- Heat a large skillet over medium-high heat. Add the beef and break it up into small pieces with your spatula. Once it starts to brown, add the chili powder, cumin, onion powder, garlic powder, smoked paprika, salt, and pepper. Stir to combine and cook until fully browned, about 5-7 minutes. Remove beef from the pan into a bowl and set aside.
- Using the same skillet, add the heavy cream and beer. Lower heat slightly and bring to a simmer. Simmer gently for 3-4 minutes to let the mixture heat through and the alcohol cook off. Lower heat to medium-low.
- Add both cheeses to a large bowl. Toss with the cornstarch. Add a handful of cheese at a time to the cream/beer mixture, stirring to incorporate until smooth after each addition. Once all cheese is added and mixture is smooth and creamy, add the beef and stir to combine. Season to taste with additional salt if desired.
- Let cool for a minute or two, then top with chopped cilantro, red onion, radishes, and cherry tomatoes. Serve immediately with tortilla chips!
