MEXICAN BEAN AND POTATO BAKE

This Mexican bean and potato bake is a hearty, satisfying one pot dinner with plenty of fresh veg!

3 fairly large potatoes, (cut into bitesize pieces)
2 tbsp oil
1 bell pepper ((I used red), cut into bitesize pieces)
~ 8 medium mushrooms, (quartered)
1 medium courgette ((zucchini), cut into bitesize pieces)
400 g tin kidney beans, (drained (240g, or ~ 1 1/4 cups, when drained))
400 g tin chopped tomatoes ((~ 1 1/3 cups))
2 tsp smoked paprika
1 tsp ground cumin
1 tsp hot chilli powder
Salt
Black pepper
75 g cheddar cheese, (grated (~ 3/4 cup when grated))
Fresh coriander (cilantro), to serve (optional)

Steps:

  • Toss the diced potatoes in a dash of oil, and spread them out in a large casserole dish or baking dish. Roast at 190°C (Gas Mark 5 / 375°F) for around 45 minutes, tossing halfway, or until mostly cooked and starting to crisp up.
  • Add all of the vegetables to the dish, along with the kidney beans, tinned tomatoes, and spices. Season generously, and mix to combine. Return to the oven for a further 30 minutes, until the vegetables are soft and the tomatoes have formed a rich sauce.
  • Top with the grated cheese, and bake for 15 more minutes, until the cheese has melted. Serve topped with fresh coriander if desired.

The tortilla chips on the bottom form a crispy crust, I sprinkle grated Parmesan cheese on top of the casserole before topping with the remaining shredded cheese, but that is only optional. Sour cream and chopped tomatoes are a must served with this casserole.

2 1/2 cups crushed tortilla chips
2 -3 cups cooked chicken breasts, cubed (can use cooked cubed turkey also)
1 (15 ounce) can black beans, washed and drained (can use garbonzo beans in place of black beans)
1 (15 ounce) can red kidney beans, washed and drained
2 cups canned corn kernels, drained (or use one 15 ounce)
1 (8 ounce) can tomato sauce
1 1/2 cups salsa (I use spicy!)
1 onion, chopped
1 tablespoon chopped fresh garlic
1 green bell pepper, chopped
salt and pepper
3 -4 cups monterey jack cheese, shredded (or cheddar cheese)
1 -2 large firm tomatoes, chopped
2 cups sour cream (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Sprinkle the crushed tortilla chips evenly on the bottom of the dish.
  • In a large bowl combine the cubed cooked chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, garlic, salt and pepper; mix well to combine.
  • Spoon HALF of the mixture over top of the tortilla chips in the baking dish.
  • Sprinkle with 2 cups (or more if desired) shredded cheese.
  • Cover with remaining half of the chicken/bean mixture, then top with remaining shredded cheese.
  • Bake uncovered for 30-35 minutes.
  • Let stand for 5-6 minutes before serving.
  • Spoon onto plates and top with sour cream and chopped tomatoes.

8 ounces canned pinto beans, drained and rinsed (reserve 2 tbsp. of the liquid)
4 ounces low-sodium tomato sauce
2 ounces sweet onions, finely chopped
2 fluid ounces mexican beer
3 tablespoons molasses
1 1/2 teaspoons dry mustard
1 teaspoon jalapeno pepper, minced and seeded
3/4 teaspoon reduced-sodium Worcestershire sauce
1/8-1/4 teaspoon crushed red pepper flakes
1 tablespoon fresh cilantro, minced

Steps:

  • Preheat oven to 350F degrees.
  • In a large bowl, combine beans, tomato sauce, onion, beer, molasses, mustard, jalapeno pepper, Worcestershire sauce and red pepper flakes; mix well.
  • Transfer to a 1-quart casserole dish and bake 45-50 minutes, until most of the liquid is absorbed.
  • Remove from oven; stir in cilantro and serve.

1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
4 tablespoons butter
1 cup milk
2 eggs, beaten
3/4 lb lean ground beef
1/2 cup chopped onion
1 teaspoon salt
2 teaspoons chili powder
2 (15 ounce) cans beans
0.75 (10 1/2 ounce) can tomato soup

Steps:

  • Preheat oven to 350 degrees. Mix all of the ingredients for the crust together. The batter will be lumpy. Spread into a 9x9 casserole dish. In a large frying pan brown the ground beef and drain the fat out. Add the chopped onion and cook until clear. Add in the remaining bean mix ingredients and cook until hot. Spoon the bean mixture onto the batter. Cook in the oven for 30 minutes. In the last 15 minutes of cooking you can add shredded cheese to the top for added flavour. For a large 9x13 casserole just double the recipe.

2 tablespoons canola oil
2 cloves garlic, minced
2 green onions, greens and whites sliced
1 jalapeno, minced
2 cups long-grain rice
3 cups low-sodium chicken broth, plus more if needed
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon turmeric
Two 16-ounce cans pinto beans, drained
One 14.5-ounce can diced tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
3/4 cup grated Cheddar
Chopped fresh cilantro, for serving

Steps:

  • Heat the oil in a large Dutch oven. Add the garlic, green onions and jalapeno and cook for 3 to 4 minutes. Reduce the heat to low and add the rice. Cook, stirring to make sure the rice doesn't burn, about 3 minutes. Add the chicken broth, cumin, salt, pepper, turmeric, beans, diced tomatoes and diced tomatoes and green chiles and stir together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the rice is not quite done, about 15 minutes.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Top the rice and beans with the cheese, then bake with the lid off until the cheese is melted and the rice is fully cooked, about 15 minutes more. Top with chopped cilantro before serving.

1 lb ground beef
1 -2 tablespoon minced fresh garlic
1 medium onion, chopped
1 green bell pepper, seeded and chopped
1 -2 jalapeno pepper, seeded and chopped (optional)
1 -2 tablespoon taco seasoning mix (or to taste, can use chili powder in place of taco seasoning mix I use Kittencal's Taco Seasoning Mix)
salt and black pepper
2 (15 ounce) cans black beans, rinsed and drained
2 (8 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups salsa (medium or mild)
6 cups crushed plain tortilla chips
3 cups shredded Mexican blend cheese (can use more or less cheese if desired) or 3 cups cheddar cheese (can use more or less cheese if desired)
2 plum tomatoes, finely chopped
3 -4 green onions, chopped

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a skillet over medium heat brown the ground beef with garlic, onion, green bell pepper and jalapenos (if using) drain fat then add in taco seasoning, salt and black pepper to taste; heat stirring for 1-2 minutes; transfer the mixture into a large mixing bowl.
  • Add in black beans, corn, sour cream and salsa; mix until well combined.
  • Spoon 1/3 of the ground beef mixture or enough to cover the bottom of the dish.
  • Arrange HALF (3 cups) of the crushed tortillas on top of the ground beef mixture, then sprinkle about 1 cup shredded cheese.
  • Spoon another 1/3 of meat mixture on top of the cheese.
  • Cover with remaining half (3 cups) of crushed chips then sprinkle with 1 cup shredded cheese.
  • Spread the final layer of meat mixture on top then sprinkle with 1 cup cheese.
  • Top the casserole with green onions and then chopped tomatoes.
  • Bake at 350 degrees for about 40 minutes.
  • Let sit for 15-20 minutes before slicing and serving.

2 x 400g cans black beans , drained and rinsed
35g sachet fajita seasoning of your choice
2 x 400g cans chopped tomatoes with chilli
6 tortillas
140g Monterey Jack cheese or cheddar, grated

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat a non-stick frying pan, add the black beans and fajita spice mix, stir together and cook for 1-2 mins. Add the tomatoes and simmer over a low heat for 10 mins.
  • Cut the tortillas in half. Lightly grease a 2-litre baking dish. Spread a third of the bean mixture over the base of the dish, followed by 3 tbsp of the cheese and a layer of tortillas. Repeat the process, finishing with a tortilla layer on top. Sprinkle over the remaining cheese. Bake for 15 mins until golden.

3 -4 tablespoons oil
3/4 cup water
1 1/2-2 cups sliced fresh mushrooms (can use canned also)
2 green bell peppers, chopped
1 large onion, chopped
2 -3 fresh minced garlic cloves (or more if desired, I use 1 Tbsp)
1 (28 ounce) can undrained canned tomatoes
1 (19 ounce) can red kidney beans, drained
3/4 cup long grain rice (uncooked)
1 tablespoon chili powder (or to taste)
2 teaspoons cumin (or to taste)
1/8-1/4 teaspoon cayenne pepper (use 1/8 tsp for less spicy taste)
1 -2 cup shredded mozzarella cheese

Steps:

  • Set oven to 350 degrees.
  • In a large skillet or Dutch oven, heat the oil with water over medium heat.
  • Add in the sliced mushrooms, green bell peppers, onion and garlic; simmer stirring often until onion is tender (about 10 minutes).
  • Add in the tomatoes (with juice, and break up slightly with a fork), beans, rice, chili powder, cumin and cayenne; mix to combine.
  • Simmer covered for about 25 minutes, or until rice is tender, and the liquid is absorbed.
