1 tablespoon butter, softened
2 flour tortillas (6 inches)
1/4 cup shredded Colby-Monterey Jack cheese
2 bacon strips, cooked and crumbled
1 tablespoon salsa
Sour cream, guacamole and additional salsa, optional

Steps:

  • Butter one side of one tortilla; place in a small skillet, buttered side down. Top with cheese, bacon and salsa. Butter remaining tortilla; place on top, buttered side up., Cook over low heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with sour cream, guacamole and additional salsa if desired.

2 green onions, chopped
4 large eggs, beaten

4 slices cooked crisp bacon, broken into small pieces
2 flour tortillas (8-9 inches)
1/2 cup shredded monterey jack cheese (or Oaxaca)
vegetable oil

Steps:

  • In a big nonstick skillet, melt the butter over medium-high heat; cook the onion, stirring, about 15 seconds.
  • Add in the beaten eggs, salt and pepper to taste, and cook, stirring, until barely set; stir in the bacon; remove the pan from the heat.
  • Put the tortillas on a flat surface and spoon half of the eggs on each tortilla; top with equally with cheese.
  • Fold tortillas in half; brush lightly with oil.
  • Wipe out the skillet (or use another clean skillet) and heat over medium heat.
  • Toast the quesadillas until lightly browned on both sides, about 1 minute per side.
  • Serve hot.

6 slices bacon, cooked and crumbled
1 cup ortega refried beans
1/2 cup ortega thick & chunky salsa
3/4 cup sargento mild cheddar cheese, shredded
5 soft 8-inch flour tortillas
sour cream, for garnish
sliced green onion, for garnish

Steps:

  • Reserve 2 tablespoons bacon.
  • In mixing bowl, combine remaining bacon, refried beans and 1/2 cup salsa, blend well.
  • Spread 1/4 cup mixture onto half of each tortilla.
  • Sprinkle with cheese.
  • Fold tortillas in half over filling.
  • In ungreased skillet, over medium heat, heat 2 filled tortillas at a time for 2 minutes on each side, or until cheese melts.
  • Cut each tortilla into 4 triangles.

I have always made my quesadillas by layering the ingredients with tortillas and baking them, rather than pan-frying. I find the resulting quesadilla to be far lighter, crisper, and suitable for overstuffing-such as here, with smoky bacon and crispy shreds of hash brown potatoes. Add a fried egg and a smattering of fresh tomato salsa, and you've got the best Mexican breakfast sandwich.

2 large russet potatoes (2 pounds), scrubbed
Kosher salt and freshly ground black pepper
4 tablespoons canola oil, plus more for brushing
2 large Spanish onions, halved and thinly sliced
1 poblano chile, roasted and finely diced
1 tablespoon plus 2 teaspoons ancho chile powder
13 pound thick-cut bacon, diced
12 (6-inch) flour tortillas
2 12 cups grated Monterey Jack cheese
2 tablespoons unsalted butter
4 large eggs
Fresh Tomato Salsa, recipe follows
2 tablespoons finely chopped fresh chives
2 ripe beefsteak tomatoes or 4 ripe plum tomatoes, diced
12 red onion, halved and thinly sliced
1 jalapeno, finely diced
2 tablespoons fresh lime juice
2 tablespoons canola oil
2 teaspoons honey
2 tablespoons finely chopped fresh cilantro
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat 2 tablespoons of the oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook, stirring occasionally, until golden brown and caramelized, about 30 minutes.
  • Heat the remaining 2 tablespoons oil in a large nonstick saute pan over high heat, add the potatoes, and cook until golden brown. Stir in the onions, poblano, and 1 tablespoon of the ancho powder, season with salt and pepper, and cook until just warmed through, about 2 minutes.
  • Cook the bacon in a skillet over medium heat until browned and crisp, about 8 minutes. Scoop out and transfer to a plate lined with paper towels to drain.
  • Lay out 8 of the tortillas on a work surface. Divide the hash browns, bacon, and cheese among the tortillas. Stack half of the tortillas on top of the remaining topped ones to create 4 double stacks. Top each with one of the remaining 4 tortillas. Brush the tops with a little oil and sprinkle with the remaining 2 teaspoons ancho powder.
  • Transfer the quesadillas to a large baking sheet and bake until golden brown and the cheese has melted, 8 to 10 minutes.
  • When the quesadillas are nearly ready, melt the butter in a large nonstick saute pan over medium heat. Carefully crack the eggs into the pan, season with salt and pepper, and cook until the whites are set but the yolks are still runny, about 2 minutes.
  • Top each quesadilla with a fried egg, some of the tomato salsa, and a sprinkling of chives.
  • Combine all of the ingredients in a bowl and let sit at room temperature for at least 15 minutes before serving.

1 small tomato, diced
2 scallions, finely chopped

4 strips turkey bacon (about 3 ounces)
6 scallions,(white and green parts) thinly sliced

1/4 teaspoon ground coriander
3 (8-inch) multi-grain tortillas
3/4 cup shredded reduced-fat Monterey jack cheese

Steps:

  • Guacamole: Coarsely mash the avocado in a large bowl. Add the tomato, scallions, lime juice, cilantro, jalapeno, and garlic until blended. Cover and chill until ready to serve.
  • Quesadillas: Preheat oven to 450 degrees F. Spray a large baking sheet with cooking spray.
  • Lightly spray a medium nonstick skillet with cooking spray and set over medium-high heat. Add the bacon and cook, turning occasionally, until browned, 3 to 4 minutes. Transfer the bacon to paper towels to drain. Crumble and set aside.
  • To the same skillet, add the scallions, jalapeno, garlic, cumin, and coriander. Cook, stirring often, over medium heat, until the scallions are soft, 2 to 3 minutes. Remove from the heat.
  • Place the tortillas on the baking sheet; sprinkle 1/3 of the cheese, 1/3 of the scallion mixture, and 1/3 of the bacon over half of each tortilla. Fold the unfilled half of each tortilla over the filling. Lightly spray the quesadillas with cooking spray. Bake until lightly browned and crisp, 8 to 10 minutes.
  • Cut each quesadilla into 4 wedges and serve with the guacamole and sour cream, if using. Garnish with cilantro.

2 cups shredded manchego cheese (about 8 ounces)
5 dates, pitted and julienned
2 tablespoons extra-virgin olive oil
1/2 cup salted pistachios
1 teaspoon red pepper flakes
1 clove garlic, roughly chopped
Juice of 1/2 lemon
2 cups spinach
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup Mexican crema or sour cream

Steps:

  • Preheat the oven to 400 degrees F. Arrange the bacon slices side by side on a parchment-lined baking sheet and bake until browned and crisp, 15 to 18 minutes. Drain on paper towels.
  • Meanwhile, make the pistachio cream: Combine the pistachios, red pepper flakes, garlic, lemon juice and spinach in a food processor and pulse until chopped; with the motor running, slowly stream in the olive oil until incorporated. Season with salt and pepper and process 5 more seconds. Pour the mixture into a bowl and whisk in the crema; set aside.
  • Assemble the quesadillas: On 1 half of each tortilla, layer 1/2 cup cheese, 3 slices bacon and a few date slices. Fold the tortillas in half to cover the filling. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add 2 quesadillas and cook until golden on both sides and gooey in the middle, 4 to 5 minutes per side. Repeat with the remaining 2 quesadillas, adding the remaining 1 tablespoon oil to the pan.

2 slices lean bacon (sliced into 1/2" pieces)
2 flour tortillas (8" diameter)
softened butter (, softened for lightly spreading on tortilla shells)
1 tablespoon pico de gallo
1/4 cup shredded colby-monterey jack cheese
sour cream
guacamole
picante sauce or salsa
2 cooked chicken breasts, cut into strips

Steps:

  • Slice bacon and fry until bacon starts to turn crisp but not hard and brittle.
  • Remove from pan, drain bacon and set aside.
  • Spread butter lightly on one side of the flour tortilla shell.
  • Place buttered side of shell down, into a non-stick fry pan that has been preheated on medium heat.
  • Sprinkle 2 tablespoons of bacon over entire shell, then add 1 tablespoon Pico de gallo, and 1/4 cup shredded Colby/Monterey Jack cheese over the bacon.
  • Add pieces of the cooked chicken.
  • Place the second flour shell on top of fixings, buttered side up.
  • Cook for about one- two minutes just long enough to heat the inside ingredients and then carefully flip the quesadilla on the other side and finish cooking.
  • The quesadilla should be heated through but not browned.
  • Remove quesadilla and place on a serving dish and cut into individual triangle serving pieces.
  • Serve quesadillas with your favorite guacamole sour cream, and picante sauce.

2 jalapeno peppers, seeded and chopped
3 slices Jones Dairy Farm Canadian Bacon, chopped
4 large eggs
2 tablespoons whole milk

1 cup shredded Mexican blend cheese, divided
2 ounces cream cheese, softened
2 flour tortillas
2 green onions, sliced

Steps:

  • In non-stick omelet pan, melt 1 tablespoon butter over medium heat.
  • Add peppers and cook for 2-3 minutes, tossing frequently. Add Canadian Bacon and cook for another 1-2 minutes, tossing frequently. Remove to paper-towel lined plate.
  • In medium mixing bowl, whisk together eggs and milk, beating until frothy.
  • Wipe out omelet pan, add 1 tablespoon butter and extra virgin olive oil to pan and heat over medium low heat.
  • Once butter is melted, pour in eggs. Sprinkle sea salt over eggs and let sit for about 3 minutes, adjusting temperature as necessary to ensure a low, slow cook without burning the bottom. Once sides are set but middle is still wet, sprinkle 1/3 cup cheese, peppers and Canadian Bacon over eggs. Cook for 1 minute, then loosen edges with silicone spatula and flip eggs. Aim for mostly one large piece of egg, any cracks will slightly repair when other side cooks. Cook until bottom is set, 2-3 minutes, then slide onto plate and set aside.
  • Spread cream cheese over tortillas.
  • Place cast iron skillet over medium heat and add 1/2 tablespoon butter. Once melted, place prepared tortilla in pan, cream cheese side up. Sprinkle 1/3 cup cheese over entire surface and place half of the eggs over one half of tortilla. Sprinkle half of green onions over eggs. Cook over medium to medium-low heat until cheese is melted, then fold in half.
  • Remove to cutting board and let sit for 1-2 minutes before slicing. Repeat with other tortilla and remaining eggs. Serve with sour cream and salsa.

½ large yellow onion, sliced thin
6 slices bacon, diced
1 tablespoon brown sugar

1 cup spicy barbeque sauce

2 cups shredded Cheddar cheese

Steps:

  • Heat 1 tablespoon olive oil over medium heat in a large skillet. Add onion; cook and stir onions until softened about 5 minutes. Stir in bacon pieces and brown sugar, and cook until bacon pieces are crisp. Remove from skillet.
