SEASONED TATER TOTS (MEXI-FRIES)
I've found a few recipes online for Mexi-Fries, but few made them exactly like our local Taco Time restaurant. So I tried this recipe, and it's better than most other recipes I found online. It makes a quick and easy side dish to go with tacos or other simple Mexican dishes, or whenever you want to spruce up plain Tater Tots.

- 1. Preheat oven to 425°F. Lightly coat large baking sheet with nonstick cooking spray; set aside.
- 2. Empty bag of Tater Tots into large mixing bowl. Drizzle with olive oil.
- 3. In a small bowl, thoroughly combine garlic powder, chili powder, oregano, cumin, salt and pepper. Pour the spice mix over the Tater Tots, and toss gently to coat with seasonings.
- 4. Arrange coated Tater Tots on baking sheet in a single layer. Bake 15 to 20 minutes or until lightly browned.
MEXI-MAC BURGERS AND WAFFLE FRIES WITH TACO SAUCE
I call my version of a Big Mac a "Big S'mack." This is my "Spicy Mexi-Mac." The patties are half beef, half chorizo. It's burger and fries with a south of the border twist. The secret to this flavorful burger is the mix of chorizo and ground beef, and just a few spices turn these frozen waffle fries into a zesty, spiced side.

- Preheat oven to 450 degrees F with rack above center.
- Gather your ingredients.
- For the waffle fries: Line a baking sheet with parchment, scatter the waffle fries and place in oven to cook 25 minutes. Give the pan a shake or the fries a flip once, midway. In a small ramekin, combine about 1 teaspoon salt, 1/2 teaspoon pepper, the cumin, chili powder, coriander and granulated garlic. Thinly slice the scallions. To serve, toss fries with spices.
- For the special sauce: In a small bowl, combine sour cream and ketchup. Remove the jalapenos from brine, place on cutting board and add a small splash of brine to sauce. Finely chop peppers and stir into sauce.
- For the burgers: Preheat large cast-iron skillet or griddle over medium-high heat.
- Peel and grate garlic and a quarter of the onion -- save the remaining onion for topping. Cut casing off from fresh chorizo and place in bowl. Add beef and season with salt, pepper, grated garlic and onion and Worcestershire sauce. Combine the sausage and beef. Score the meat into 4 sections. Form 4 meat patties thinner at center than the edges for even cooking. Drizzle the patties with oil.
- Chop the remaining onion and chop some lettuce, about 2 cups.
- Crisp the patties and cook 4 to 5 minutes. Flip the patties and top with a slice of both cheeses and cook another 2 to 3 minutes.
- To build burgers: bun bottom, onions, pickles, lettuce, patties, special sauce, bun top. Pile the fries alongside and top with taco sauce and reserved scallions.
- Add ice, mezcal, juices and simple syrup to a cocktail shaker. Shake or stir then drain into a highball full of ice. Top with a splash of seltzer.
MEXICAN FRIES
To make crispy Mexican fries you got to bake them in the oven. For the best flavor add some great Mexican seasoning. Take a look for all the steps here.

- Preheat oven at 425℉/200℃
- Cut potatoes and wash in cold water for 30 minutes
- Dry the potatoes in a kitchen towel
- Cover the potatoes with cooking spray and sprinkle with seasoning
- Bake for 15 minutes. Turn the Mexican fries and bake for another 15 minutes
- Let them cool for 2 minutes and sprinkle with salt to taste

- In a small bowl mix together French Fry Seasoning ingredients.
- Cook frozen French Fries according to package directions; halfway through cooking, sprinkle french fries with french fry seasoning and toss to coat. Set cooked fries aside.
- Nacho Cheese Sauce:.
- In a large saucepan over medium, heat oil. Add onion, bell pepper, garlic, cumin, salt, and black pepper. Cook, stirring occasionally until onion has softened about 5 to 7 minutes. Slowly whisk in the milk, tomato paste, and vinegar, until well combined; allow to steep for 20 minutes.
- In a large heatproof bowl, combine grated cheeses, Place a fine mesh strainer over the bowl containing the cheese. Strain milk mixture into the bowl. Discard solids from strainer.
- Using a wooden spoon stir cheese mixture until smooth and saucy. If cheese doesn't melt completely, set bowl over a pot of simmering water and stir until cheese melts and mixture comes together.
- On a large platter top Seasoned French Fries with Copycat Taco Bell Seasoned Beef, Nacho Cheese Sauce, sour cream, and tomatoes.
