SPICY TOMATO RELISH (CANNING RECIPE)



Spicy Tomato Relish (Canning Recipe) image

The Southwestern United States is known for love of spicy foods and this relish is a fitting example of a condiment that can be used to up the heat factor. It can be made a little hotter by subbing in some extra Jalapenos or even using Habeneros instead. It is wonderful with any sort of meat or even just having a few spoonfuls on your plate as a sort of side dish is good. THIS RECIPE ASSUMES KNOWLEDGE OF SAFE WATER BATH CANNING METHODS

Number Of Ingredients 13

20 medium tomatoes, peeled and chopped (about 5 lbs)
1 1/2 cups onions, chopped
3/4 cup green pepper, chopped
1/4 cup diced jalapeno (that is 1 of my tweaks-it originally called for 1 cup green peppers & no hot pepper)
2 teaspoons celery seeds
2 teaspoons pickling salt (non iodized salt)
3/4 teaspoon cinnamon
3/4 teaspoon clove
3/4 teaspoon allspice
3/4 teaspoon ginger
1 cup vinegar
1 teaspoon crushed red pepper flakes (another addition, feel free to omit)
1 cup sugar

Steps:

  • Peel tomatoes by boiling water method- dip each tomato briefly in boiling water and then immediately drop into a pot of cold water; the skins should peel off quite easily after that.
  • Mix all ingredients in large, preferably non stick, pot.
  • Simmer over medium heat to desired thickness, stirring occasionally to prevent sticking.
  • Spoon mixture into sterilized pint jars and seal with lids and bands.
  • Process in a boiling water bath for 15 minutes; will keep stored in cool place for up to a year.

Found this recipe in Shehzad Husain's Healthy Indian Cooking....delicious with any savoury meal. Note: This relish stays good for up to a week in the refrigerator, but do not add yogurt until just before you serve it.

2 medium firm tomatoes
1 medium red onion
1 green chili
1 tablespoon fresh mint leaves
1 tablespoon fresh coriander leaves
1/2 teaspoon Tabasco sauce
1 tablespoon honey
1/2 teaspoon salt
2 tablespoons lime juice
1 tablespoon yogurt

Steps:

  • Place the tomatoes in boiling hot water for a few seconds. Take them out and peel them.
  • Cut the tomatoes in half, remove seeds and chop roughly.
  • Chop the onions, chillies, mint and coriander leaves too.
  • Place the above mixture in a grinder with Tabasco sauce, lime juice, salt and honey.
  • Add tomatoes to this and grind for a few seconds.
  • Stir in yogurt just before serving.

15 ripe tomatoes - peeled, seeded, and chopped
4 Granny Smith apples - peeled, cored, and chopped
5 sweet onions, chopped
2 cups white sugar
5 fluid ounces white vinegar
1 tablespoon pickling spice, bundled in cheesecloth
6 1-pint canning jars with lids and rings

Steps:

  • Combine tomatoes, apples, onions, sugar, vinegar, and pickling spice bundle in a large pot; bring to a boil and cook together about 10 minutes, stirring occasionally.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato mixture into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Steps:

  • Combine tomatoes, bell pepper, cumin, onion, salt, cayenne pepper, and lime juice. Taste and adjust seasonings if needed.
  • Just before serving, add cilantro.

3 large red bell peppers
3 large green bell peppers
2 tablespoons olive oil
4 tablespoons olive oil
3/4 lb plum tomato, seeded, chopped
6 large garlic cloves, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Brush bell peppers with 2 Tablespoons oil; arrange on a baking sheet in single layer.
  • Roast until peppers are tender and begin to brown, turning occasionally, about 35 minutes.
  • Cool peppers for 10 minutes.
  • Peel, seed and slice peppers.
  • Heat 4 Tablespoons olive oil in large skillet over medium-high heat.
  • Add plum tomatoes and garlic.
  • Sauté until tomatoes soften, about 5 minutes.
  • Add sliced peppers to skillet; sauté about 3 minutes.
  • Add cilantro and vinegar.
  • Season with salt and pepper.
  • Serve at room temperature.

16 cups green tomatoes, ground
8 cups onions, ground
5 cups sugar
5 cups vinegar
2 teaspoons salt

1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ginger
1 teaspoon nutmeg

Steps:

  • Grind the apples, tomatoes and onions (or dice them very small), then measure and put into a large kettle.
  • Add the rest of the ingredients and simmer for 1 1/2 hours, stirring frequently.
