MESA "GRITS"

Mesa

These aren't grits in the true sense, that's why the quotation marks. They're made from canned hominy, pulsed in a food processor to give them a grits-like texture. From The Best American Recipes 2001-2002, by chef Bobby Flay. Cooking and preparation times are approximate.

Categories     Breakfast

Time 35m

Yield 4 serving(s)

Grits are made from dent corn, which has a softer and starchier kernel than other corn varieties. The mature kernels are processed to remove the outer hull, dried, and then ground into smaller bits. CORN GRITS VS CORNMEAL: WHAT'S THE DIFFERENCE? - SUBSTITUTE COOKING
The only difference is the texture, as grits are slightly coarser than cornmeal. However, you can still substitute cornmeal for grits by adding slightly less of the amount to a mixture, as the grains are coarse. Another great substitute for cornmeal is corn flour, even though it is less coarse, as it will still work for a recipe that calls for ...

GRITS VS. CORNMEAL VS. POLENTA: WHAT’S THE DIFFERENCE?
In the end, the softening of the corn kernels makes grits softer and creamier than polenta. At the grocery store, you’ll find two varieties of grits: stone ground and instant, usually available as white or yellow corn. Instant grits are partially cooked before they’re dried, so they cook up in as little as 10 minutes.
