This chocolaty twist on traditional eggnog will spread good cheer at your Christmas or New Year's celebration. My family makes a batch each year to sip while opening presents. -Beth Ann Hill, Dayton, Ohio

Yield 2-1/2 quarts.

Number Of Ingredients 6

5 cups chocolate milk
4 cups eggnog
1 cup heavy whipping cream, divided
2 tablespoon instant coffee granules
2-1/2 teaspoons vanilla extract
1 teaspoon rum extract

Steps:

  • In a large saucepan, combine the milk, eggnog, 1/2 cup cream and coffee granules; heat through. Remove from the heat; stir in extracts. In a small bowl, beat remaining cream until stiff peaks form. Dollop over eggnog.

  • 1. In an 8-ounce cup, combine syrup and espresso. Fill cup with steamed eggnog, top with whipped cream and sprinkle with nutmeg. Serve immediately.

1-1/2 teaspoons instant coffee granules
1 tablespoon hot water
4 cups eggnog
2 tablespoons brown sugar
1/8 teaspoon ground cinnamon
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Additional ground cinnamon, optional

Steps:

  • In a pitcher, dissolve coffee in water. Add the eggnog, brown sugar and cinnamon; whisk until sugar is dissolved. Chill., In a small bowl, beat the cream, confectioners' sugar and vanilla until soft peaks form. Pour eggnog mixture into glasses; top with whipped cream. Dust tops with cinnamon if desired.

3/4 cup sugar
1 tablespoon cornstarch
3 large egg whites, room temperature
1/4 teaspoon salt
1 teaspoon instant espresso powder
3 tablespoons unsweetened cocoa powder
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees, with racks in upper and lower thirds. Line two large baking sheets with parchment paper; set aside. In a small bowl, whisk together sugar and cornstarch; set aside.
  • In a large bowl, using an electric mixer, beat egg whites and salt on medium speed until frothy. Beating constantly, add sugar mixture 1 tablespoon at a time; beat until stiff, glossy peaks form, 6 to 8 minutes total (scrape down the bowl halfway through). Add espresso powder and cocoa; beat until well blended. With a rubber spatula, fold in chocolate chips.
  • Drop batter by level tablespoons onto prepared baking sheets, about 1 inch apart. Bake until crisp, about 40 minutes, rotating sheets halfway through. Cool completely on sheets, about 20 minutes.

1 (32 ounce) carton eggnog
1/4-1/2 cup brandy (optional)

Steps:

  • Dissolve the instant coffee granules in the hot water and let cool.
  • Combine the coffee, eggnog, and brandy if using; mix well.
  • Add chocolate syrup, and cover and chill thoroughly.
  • Fold in whipped cream just before serving.
  • Garnish with grated semisweet chocolate if desired.
