APPLE PUDDING
A recipe that was handed down through the years from Mother to Daughter. It's just a simple and easy 'Apple Pudding' recipe. When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Toss apples with flour, sugar and salt and place in a 9x9 inch baking dish. Pour enough milk into dish to come almost to the top of the apples, but not cover them.
- Bake in preheated oven 45 minutes, until apples are tender.

Steps:
- Mix first seven ingredients together in a casserole dish.
- For the sauce:
- In a small bowl mix the brown sugar, butter, and boiling water together.
- The boiling water should be enough to melt the butter.
- Pour sauce over apple mixture and bake uncovered for 40 minutes at 375°F.
SIMPLE AND QUICK APPLE PUDDING
This is one of my Mom's recipes and one that both Dad and I really enjoyed. Always looked forward to the fall and apples from MacIntosh tree out back! Sometimes Mom called it Apple Pudding other times she called it Apple upside-down cake, either way it was a cake texture with baked apples and a carmel type sauce. Always a treat to come home from school and smell this in the oven! Serve it warm as is or with vanilla ice cream!

- Place apples in 2 litre casserole dish. Sprinkle with the cinnamon.
- Cream butter and sugar then add the next 6 ingredients and mix well. Spoon over apples.
- Mix brown sugar and flour thorougly in a bowl. Stir in butter, vanilla and water. Pour over batter and leave to sit on top. Bake uncovered in a 350 F oven for 30 minutes or until apples are baked and pudding is firm to the touch.
DANISH APPLE PUDDING
An economical dessert to make, using up applesauce and stale bread crumbs. A Danish version of the trifle, and my version of the Danish original.

Steps:
- Whip cream, 2 tbsp icing sugar and vanilla extract until soft peaks form (approximately 3 minutes - but it depends on the cream).
- Place butter in a skillet and melt over medium heat. Add brown sugar, bread crumbs, and cinnamon. Mix well and cook, stirring constantly, to toast the crumbs, 3-5 minutes. Let cool completely (you may need to break up some of the crumbs if they've clumped together - this is easily down in the processor). Set aside 1 tbsp of crumb mixture.
- Spread 1 cup of crumbs in a large bowl. Mix the lemon juice into the applesauce. Spread 1 cup of applesauce over crumbs. Next 1/2 of the whipped cream; then the last of the crumbs. Finally, another cup of applesauce and the balance of the whipped cream. Sprinkle with the toasted almonds and reserved bread crumbs. Chill for at least 3 hours.
- Serve spooned into sherbet glasses or sauce dishes.

- Peel, core and dice the apples. Put them in a microwave proof bowl with the 50g sugar, jam, lemon juice and orange juice. Cook on full power for 7 minutes.
- Put the cooked apple into the bottom of an oven dish.
- Beat the margarine, caster sugar, ground almonds, eggs and lemon zest together until smooth. Spread over the apple.

STICKY TOFFEE APPLE PUDDING

- Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
- For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

My mother and I make this for dessert all the time. The whole family loves it and it is usually all eaten in 5 minutes! I have found that the granny smith apple is the perfect apple for this pudding.

- Combine the brown sugar, cream, 60g butter and 1/4 teaspoon vanilla in a saucepan.
- Bring to the boil, reduce heat and simmer for 3 minutes.
- Pour into a greased 20cm round cake pan and allow to cool.
- Arrange the apples, cut sides down, over the toffee. Fill the spaces with pecan nut pieces.
- Cream the 90g butter ,caster sugar and 3/4 teaspoon vanilla essence, until light and fluffy.
- Add the eggs, one at a time, beating them well after each addition, then continue beating until fluffy.
- Gently fold in the flour and water. Spoon the mixture over the apples and bake in a slow oven for 1 hour and 40 minutes, or until cooked when tested with a skewer.
- Allow to stand for 5-10 minutes, then carefully turn out onto a serving dish.
- Serve warm with lashings of cream.

- In a bowl, beat together the butter, sugar and egg until blended. In a bowl, combine the flour, baking soda, salt, nutmeg and cinnamon; gradually add to the sugar mixture and mix well. - grease a pie dish.
- preheat oven
- peel, core and halve apples across ways (so that they are circles of apple).
- put apples cust side up in dish.
- in seporate bowl rub butter into flour
- add sugar and salt to this mixture then water.
- mix lightly (it will be lumpy - thats ok!).
- then pour over apples.
- bake 35 minutes in a 180oC oven.
- *For 6 apples double the liquid and sugar becomes 1 1/4 cup.

BUTTERSCOTCH APPLE PUDDING
A self saucing pudding to warm you on cold days. As the pudding bakes it forms a butterscotch sauce under the apple studded crust. This comes from another of my Alison Holst recipe books from the 1970's. Still making in the 2000's :)

Steps:
- Sift the flour, baking powder, spice and salt together.
- Peel, core & dice apples and toss them into the flour mixture.
- Add milk and mix with a knife to blend all the ingredients.
- Spread mixture into a greased baking dish approx 9" (23cm) square or a round one of similar size.
- Measure the topping ingredients in the order given into a saucepan and bring to the boil.
- Pour boiling mixture carefully over the batter in the pan.
- Bake uncovered at 375'- 400'F (190' - 200'C) for approx 45-60mins, or until topping is firm in the centre and golden brown.
- Serve warm with sweetened whipped cream or vanilla ice cream.
