MENNONITE WAFFLES AND WHITE SAUCE image

Number Of Ingredients 11

2 cups flour
2 tsp baking powder
1/4 tsp salt
2 cups milk
3 eggs
1/4 melted salted butter
4 cups milk
3/4 cup sugar
1/4 cup cornstarch
1 Tbsp butter
1 Tbsp vanilla

Steps:

  • Heat milk until boiling, stirring constantly. Stir in 1/2 a cup of the sugar.
  • Mix the cornstarch with the remainder 1/4 cup sugar and then add that to the hot milk mixture. Keep stirring until it thickens. (You can add more cornstarch to get it to the thickness you like).
  • Add the butter and vanilla and stir.
  • Pour over waffles (or dip the waffles into the sauce like my little girls do).

1 cup Spam, diced
1 cup elbow macaroni
1/2 lb Velveeta cheese
1 cup unseasoned breadcrumbs
2 cups frozen peas
3 tablespoons flour
3 tablespoons butter
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • boil macaroni until half done and drain.
  • in a saucepan add last five ingrieidents and slowly add half the cheese.
  • combine macaroni and spam with sauce and pour in a baking dish.
  • sprinkle crumbs and remaining cheese over top and bake at 350 for 45 minutes.

I like to serve these flavorful waffles when we have company because they add nice color to the table and look so elegant, yet they're so easy to prepare. Everyone raves about the unique rich vanilla sauce served over the warm waffles.

Yield 6-8 waffles (6-1/2 inches).

Number Of Ingredients 9

1-2/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, separated
3-2/3 cups milk, divided
6 tablespoons canola oil
1/2 cup sugar
1 teaspoon vanilla extract
Fresh strawberries

Steps:

  • In a bowl, combine flour, baking powder and salt. In another bowl, beat egg yolks lightly. Add 1-2/3 cups milk and oil; stir into dry ingredients just until moistened. Set aside 1/4 cup batter in a small bowl. Beat egg whites until stiff peaks form; fold into remaining batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. , In a saucepan, heat sugar and remaining milk until scalded. Stir a small amount into reserved batter; return all to pan. Bring to a boil; boil for 5-7 minutes or until thickened. Remove from the heat; add vanilla and mix well (sauce will thicken upon standing). Serve over waffles. Top with berries.

VERENIKA (OR VERENKI) CASSEROLE

This is a fast version of regular verenika, which is individual dumplings filled with a cottage cheese mixture, boiled, then fried, and then served with a ham gravy. But it has the flavor of the original verenika dish. Once a year, regular verenika is served at our MCC sale to raise funds for the Mennonite Central Committee. I got the recipe from our church cookbook and have changed it just a little.

10 -12 ounces Reames frozen noodles, cooked and drained
1 (24 ounce) carton cottage cheese, -rinsed and drained
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sour cream
1/2 lb of chopped ham
1/2 cup chopped onion
2 cups country cream gravy (i have made this by using a package of pioneer brand gravy mix or by making a white sauce. see recip) or 2 cups white sauce (i have made this by using a package of pioneer brand gravy mix or by making a white sauce. see recip)

Steps:

  • Boil frozen egg noodles as per package directions, drain and place in bottom of greased casserole dish - I use 9 x 11 inch pan.
  • Mix drained cottage cheese with the two eggs, salt and pepper.
  • Layer over the noodles.
  • Add spooonfuls of sour cream over the top of the casserole.
  • Saute chopped onions and ham until onions are tender.
  • Stir in to the cream gravy and pour on top of the casserole.
  • Bake at 350 for 30 to 40 minutes.
