I used to pick blackberries in the summer for my mom to make this wonderful treat. Serve with vanilla ice cream.

½ cup butter, melted
1 cup white sugar
1 cup self-rising flour
¾ cup milk
2 cups fresh blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour the melted butter into the bottom of an 8x8-inch square baking pan. Mix the sugar, self-rising flour, and milk together until moistened, and pour the mixture over the butter. Do not stir. Spread blackberries evenly over the batter.
  • Bake in the preheated oven until the top is browned and the cobbler is bubbling, about 45 minutes.

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

2 cups white sugar
2 cups milk
3 ½ cups blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
  • In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.
  • Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.

1/2 cup (1 stick) unsalted butter
4 cups fresh blackberries
1 cup sugar, plus more for sprinkling
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of fine sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
Whipped cream, creme fraiche, or ice cream, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large cast-iron skillet or ovenproof baking dish, in the oven, 5 to 7 minutes.
  • Meanwhile, place blackberries in a large bowl. Using a potato masher, mash blackberries to release their juices. If blackberries are tart, sprinkle with sugar.
  • In another large bowl, whisk together flour, baking powder, and salt. Add 1 cup sugar, milk, and vanilla extract; mix until well combined. Remove skillet from oven and add melted butter to flour mixture; stir to combine. Pour mixture into skillet and pour blackberries and their juices into the center.
  • Transfer skillet to oven and bake until top is golden brown and a cake tester inserted into the batter comes out clean, about 1 hour. Serve hot, warm, or at room temperature with whipped cream, creme fraiche, or ice cream.

She was very allergic to poison ivy, so we stopped going after a couple of years; however, we still were (and are) treated to her awesome blackberry pie!!! It really reminds me of summer holidays, especially the 4th of July. Oh, and that's my sister reviewing this recipe--she's a snot, and also 9 years younger than me, so she doesn't REMEMBER blackberry picking with mom! *sticks out tongue* LOL

5 cups fresh blackberries (If you are using frozen berries, increase flour by 1/3 cup) or 2 (14 ounce) packages of frozen berries, thawed and drained. (If you are using frozen berries, increase flour by 1/3 cup)
1 cup granulated sugar
4 tablespoons all-purpose flour
1 tablespoon lemon juice
2 tablespoons butter, melted
1 teaspoon sugar
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons sugar
1/4 cup shortening
1/3 cup whipping cream
1/3 cup buttermilk

Steps:

  • Combine the first 4 ingredients of the filling and spoon into a 9 inch square pan.
  • OPTIONAL: You may add a bit of vanilla or almond extract, if you wish.
  • Nutmeg is also good.
  • Prepare crust (recipe follows) and spoon 9 mounds over the blackberries.
  • OPTIONAL: You may sprinkle the top with flaked almonds or chopped pecans.
  • Brush with butter and sprinkle with sugar.
  • Bake, uncovered in a preheated 425 degree oven for 30 minutes until browned and bubbly.
  • FOR CRUST: Combine first 5 crust ingredients, cut in shortening with pastry blender until mixture is crumbly.
  • Stir in whipping cream and buttermilk just until it is blended.
  • NOTE: You may add other fruit to vary your cobbler; try adding a few cherries, blueberries, raspberries or cranberries.
  • Also good for nectarines or peaches!

Steps:

  • Preheat oven to 350.
  • 13x9 baking dish.
  • Mix together sugar, flour, salt.
  • Add to berries and mix well,sprinkle on lemon juice.
  • Pour into baking dish and dot with butter.
  • Bake until hot and bubbly.
  • make topping just before you are ready to put it on: Mix together dry ingredients and cut in butter until resembles coarse meal (can be done in food processor).
  • Whisk egg into milk.
  • Stir in milk and egg until just blended.
  • Spoon topping on in dollops.
  • Return to oven until biscuits are done.
