MELTAWAY COOKIES
Meltaway cookies is a simple cookie recipe that delivers a soft and buttery cookie, the vanilla and almond extract gives them fabulous flavor. Topped off with a sweet icing.

Steps:
- Preheat oven to 350º F. Line a baking sheet with parchment paper.
- In a large mixing bowl, cream butter, egg yolks, vanilla, and almond extract together
- Add powdered sugar, flour, cream of tartar, and baking soda. Beat well. The dough will appear to be crumbly. Work it with your hands until it forms a ball.
- Roll dough into 1-inch balls and place them on the baking sheet.
- Flatten each ball with your fingers or a flat glass cup. Lightly flour the bottom of the cup if itsticks.
- Bake for 10 minutes or until the bottoms are lightly brown. Allow cooling.
- To prepare the frosting, beat powdered sugar, butter, and milk together. If it is toothick, add a little milk. If it is too thin, add a bit more powdered sugar
- When cookies are cool, frost, add sprinkles, and enjoy!

Oh wow...these are gooood cookies! This recipe was in the Taste of Home Cookies Magazine and was submitted by Sue Call of Indiana. It's a delicious melt in your mouth sugar and buttery flavored cookie! Prep time does not include time to chill the dough!

Steps:
- In a mixing bowl, cream butter, oil and sugars; add egg and vanilla and mix.
- Combine flour, baking soda and cream of tartar in a separate bowl; gradually add to the creamed mixture.
- Chill for several hours or overnight (I've made these and have only chilled them for 2 hours and they turned out fine, however when I've chilled them for several hours they were perfection!).
- Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets.
- Flatten with a fork dipped in flour; sprinkle with sugar.
- Bake at 350° for 12-15 minutes or until lightly browned.
- Cool on wire racks.

- In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. Refrigerate until chilled., Preheat oven to 350°. Roll into 1-in. balls and place on ungreased baking sheets. Bake 10-12 minutes or until set. Roll warm cookies in additional confectioners' sugar; cool completely on wire racks. Roll cooled cookies again in confectioners' sugar.

MELT AWAY BUTTER COOKIES
Steps:
- Gather the ingredients.
- Cream butter until light and fluffy; beat in salt, almond extract, and vanilla extract.
- Gradually blend in confectioners' sugar then sifted flour.
- Chill for about 1 hour, or until dough is easier to handle.
- Preheat oven to 400 F.
- Shape dough into rolls about 3/4-inch in diameter, then cut into 3/4-inch lengths.
- Place, ends up, on ungreased baking sheets; press lightly with the bottom of a glass covered with a damp cloth. If desired, sprinkle cookies with colored sugar or granulated sugar.
- Bake at 400 F for about 10 minutes.

PEPPERMINT MELTAWAYS MELTAWAY COOKIES
These cookies are so dainty and pretty that I served them at my daughter's birthday tea. When I make them during the year, I use multicolored sprinkles on top rather than the crushed candy canes. They are on my "must have" list at Christmas. They are always the first to go at a party. I've had several people say, "I just can't stop eating them". Best eaten within about 2 days of baking. Note that dough does need to be chilled for about an hour before baking.

- FOR COOKIES, combine sugar, butter and 1/2 teaspoon peppermint extract in large mixer bowl.
- Beat at medium speed until creamy (1 to 2 minutes).
- Reduce speed to low; add flour and cornstarch.
- Beat until well mixed (1 to 2 minutes).
- Cover; refrigerate until firm (30 to 60 minutes).
- Heat oven to 350°F Shape rounded teaspoonfuls of dough into 1-inch balls.
- Place 2 inches apart on ungreased cookie sheets.
- Bake for 12 to 15 minutes or until edges are lightly browned.
- Let stand 1 minute; remove from cookie sheets.
- Cool completely.
- FOR GLAZE, combine 1 1/2 cups powdered sugar, 2 tablespoons butter, 1/4 teaspoon peppermint extract and enough milk for desired glazing consistency in small bowl.
- Stir in food color, if desired.
- Drizzle over cooled cookies.
- Immediately sprinkle with crushed candy.
- (I have found it is easier to put the crushed candy in a bowl and"dip" the top of cookies in them right after I frost them).

- Preheat oven to 350.
- On waxed paper, combine flour, baking soda, cream of tartar and salt.
- In a large bowl, beat butter, confectioners sugar, and 1/2 cup granulated sugar on medium speed about 2 min or until creamy. Reduce speed to low, beat in egg, then beat in oil and vanilla. Gradually beat in flour mixture just until blended, occasionally scraping bowl.
- Place remaining 2 tbsp sugar in a small bowl or saucer. Shape dough by rounded tsp into 3/4 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Dip punch cup or glass with raised or cut design on bottom, or coarse side of meat mallet into sugar in bowl, use to flatten each ball into a 1 1/2 inch round.
- Bake 10-11 min until edges are golden. Transfer to wire rack to cool. Store cookies in tightly covered container at room temp up to 1 week or in freezer up to 3 monthes.

- Cream butter or margarine (and yes margarine does work beautifully! I can see some people raising their eyebrows!) with sugar.
- Add eggs and vanilla and mix.
- Add flour, baking powder and salt and mix well.
- At this point you can either roll out and cut with cookie cutters or roll dough into 1 inch balls and flatten on cookie sheet.
- Bake at 375F for 6 to 8 minutes until set, NOT brown.
- Mix icing ingredients together and ice cookies once cooled.
