1 (6 1/8 ounce) package rice pilaf mix, such as NEAR EAST Original Rice Pilaf
1 3/4 cups reduced-sodium chicken broth
2 tablespoons pitted kalamata olives, sliced
2 tablespoons chopped flat leaf parsley
2 tablespoons chopped green onions
1 tablespoon pine nuts, toasted
1/2 cup chopped cherry tomatoes
1/3 cup crumbled feta cheese
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/2 tablespoon red wine vinegar
1/2 tablespoon lemon juice
1/4 teaspoon ground cumin

Steps:

  • In a medium saucepan, add rice pilaf mix, broth and contents of Spice Sack; bring to a boil. Cover; reduce heat to low. Simmer 20 minutes or until liquid is absorbed.
  • While pilaf cooks, prepare vinaigrette by whisking all ingredients together; set aside.
  • Remove cooked pilaf from heat. Stir in vinaigrette.
  • Stir in olives, parsley, green onion and pine nuts.
  • Gently fold in feta and tomatoes.
  • Serve warm or at room temperature.
  • If desired, refrigerate and serve slightly chilled.
  • Cook's Note: Regular chicken broth, vegetable broth or water can be substituted for the reduced-sodium chicken broth.

4 tablespoons vegetable oil
1/2 cup golden raisin
1/2 teaspoon turmeric
1/2 teaspoon curry powder
1/2 teaspoon soy sauce
3 cups chicken broth, hot

Steps:

  • Mix rice, oil, raisins, turmeric, curry and soy sauce.
  • Cover with hot chicken broth.
  • Simmer at low heat for 20 minutes or until liquid is absorbed.

EASY RICE PILAF WITH PEAS AND CARROTS



Easy Rice Pilaf with Peas and Carrots image

Rice pilaf with fluffy basmati rice, warming spices, and aromatics is a delicious way to take plain ol' rice to the next level! Perfect for busy weeknights as it comes together in just 30 minutes!

Number Of Ingredients 15

2 cups basmati rice
Extra virgin olive oil
1 small yellow onion, (finely chopped)
2 garlic cloves, (minced)
1 cup frozen peas
2 to 3 carrots, (peeled and chopped)
Kosher salt
½ teaspoon coriander
½ teaspoon paprika
½ teaspoon Aleppo pepper
¼ teaspoon ground turmeric
¼ cup walnut halves, (toasted)
¼ cup pine nuts, (toasted)
¼ cup sliced almonds, (toasted)
¼ cup dried fruit, (such as raisins or chopped dried apricots)

Steps:

  • Wash the rice very well a few times until the water is clear. You can let it soak in water for about 10 minutes or so while preparing the rest of the ingredients.
  • In a large heavy pan with a lid, heat 2 tablespoons extra virgin olive oil over medium-high heat. Add the onions and garlic and cook for about 3 to 5 minutes, tossing regularly until softened. Add the peas and carrots. Season with a good pinch of kosher salt. Add the spices and mix to combine. Cook for another 5 minutes or so, tossing regularly until the carrots have softened.
  • Drain the rice well and add it to the pan. Toss around to make sure the rice is well-coated with the spices. Pour in 2 ¼ cup of water. And season well with a big dash of kosher salt. Bring to a boil, then turn the heat to low. Cover and cook for 15 to 20 minutes until the rice is cooked through and has absorbed all the liquid.
  • Allow the rice about 5 to 10 minutes to rest before serving.
  • Serve with the nuts and raisins on top.

Ingredients
2 packets Kashi® 7 Whole Grain Pilaf
1 cup pine nuts (to reduce fat content, use ½ cup pine nuts)
2 cloves garlic, minced
6 tablespoon extra virgin olive oil
3 tablespoon balsamic vinegar
½ teaspoon lemon zest
1 teaspoon crushed red chili flakes
1 teaspoon salt
2 bunches fresh basil, coarsely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
fresh ground black pepper to taste

Steps:

  • Directions 1. Cook Kashi Pilaf according to package instructions. 2. In a small skillet, dry toast the pine nuts over medium high heat, stirring continuously until they are golden brown and aromatic. Remove nuts from heat and set aside. 3. In a small mixing bowl, whisk together the garlic, olive oil, balsamic vinegar, lemon zest, chili flakes, salt, basil, pepper and set aside. 4. In a large mixing bowl, combine cooked Kashi Pilaf, pine nuts, bell peppers and sauce mixture. Mix well and serve. 2 tablespoons olive oil
1 1/2 lbs boneless skinless chicken thighs
1 onion, sliced thinly
1 tablespoon curry powder
2 teaspoons garlic salt
2 tablespoons soy sauce
1 teaspoon hot sauce
1 cup uncooked rice
3 cups chicken stock
3 tablespoons fresh parsley

Steps:

  • In large deep skillet, heat the oil over medium-high heat.
  • Add the Chicken and brown on all sides, about 10 minutes.
  • Add the onions, curry powder and garlic salt.
  • Saute until onions begin to soften.
  • About 3 minutes.
  • Add the soy sauce and hot sauce.
  • Simmer 2 minutes.
  • Add the rice and mix to coat with spices.
  • Pour in the stock.
  • Reduce the heat, cover and cook until all the liquid is absorbed, the rice is tender and the chicken is cooked through.
  • About 35 minutes.
  • Garnish with parsley.

MEDITERRANEAN ORZO VEGETABLE PILAF

This pilaf is flavored with white wine and spiced with mediterranean vegetables such as; olives, capers and chickpeas in addition to the regular onion and bell pepper. Makes a wonderful side dish.

2 tablespoons olive oil
1 cup orzo pasta, uncooked
2 tablespoons green onions, finely chopped
1 (14 ounce) can vegetable broth
1/3 cup white wine
1/4 cup bell pepper, chopped (green or red)
3/4 cup chickpeas (or garbanzo beans)
1/4 cup kalamata olive, chopped
1 tablespoon capers
2 tablespoons parmesan cheese

Steps:

  • In a 10 inches skillet over medium-high heat, heat the olive oil, then stir in the uncooked orzo, and green onion.
  • Cook, stirring frequently, until the orzo is lightly browned, about 3 minutes.
  • Stir in the broth and wine and heat until boiling, then reduce heat, cover and simmer about 6 minutes, stirring occasionally.
  • Stir in the peppers, chickpeas, olives and capers, and cook covered another 6 minutes, stirring occasionally, until most liquid is absorbed.
  • Pour into a bowl and sprinkle with the 2 T of parmesan cheese.
