CHICKEN AND PASTA FRITTATA
A tasty frittata which can be served warm with crusty rolls and a salad or at room temperature at picnics,for take-to-work lunches or in school lunchboxes. Adapted from a recipe I found in the May 2006 issue of the Australian magazine 'super food ideas'.

Steps:
- Cook the pasta in a large saucepan of boiling salted water, following the packet directions, until tender; drain.
- Heat 1 tablespoon of oil in a large pan over a medium heat; add the onion, garlic and carrot and cook for 3-4 minutes or until soft; add the red pepper and cook, stirring occasionally for 1 minute; then transfer the contents of the pan to a large bowl.
- Add the chicken, thyme, parmesan, parsley and pasta to the onion mixture; whisk the eggs in a large jug and add them to the pasta mixture; stir until well-combined and season with salt and pepper, to taste.
- Heat the remaining oil in the pan over a medium heat and add the pasta mixture to the hot pan; reduce the heat to medium-low and cook the contents of the pan for 8-10 minutes or until the frittata has set around the edges. The centre should still be slightly soft.
- Preheat a grill on a medium heat and place the pan under the grill; cook the frittata for 4-5 minutes or until it is golden and set.
- Cut into wedges and serve with crusty rolls and a salad.
MEDITERRANEAN CHICKEN & PASTA FRITTATA
This frittata is packed with vegetables and herbs. Ideal as a light lunch, this protein-rich dish will keep your energy high through the afternoon.

Steps:
- Preheat the oven to 350°F (175°C).
- Cook pasta according to package directions in plenty of unsalted water until al dente.
- Coat the bottom of a 12-inch (30 cm) deep-dish pie plate with ½ teaspoon (2.5 mL) of olive oil. Arrange the cooked pasta over bottom and scatter with pieces of the goat cheese.
- Blend eggs with the yogurt, chili pepper flakes and oregano until well mixed. Pour the egg mixture over the pasta. Bake frittata in a hot oven on centre rack for 30 minutes or until the frittata is set and lightly browned and a knife inserted into centre comes out clean. Remove from oven.
- While the frittata is baking, prepare the vegetable and chicken topping. Heat remaining olive oil in a non-stick skillet over medium heat. Sauté the diced red onion, minced garlic, sliced mushrooms, red pepper strips and cooked chunks of chicken until vegetables are just softened. Stir in balsamic vinegar, fresh lemon juice and freshly ground pepper. Toss basil with the vegetable mixture. Remove from heat and set aside.
- Mix together tomato, green olives, cumin and plain yogurt in a small serving bowl.
- Spread the cooked vegetables and chicken over the top of the frittata. Sprinkle with the grated Romano cheese. Cut into six wedges. Serve with the yogurt sauce on the side.

This veggie-forward sheet pan frittata has tons of Mediterranean flavor, thanks to garlicky chicken sausage, briny feta, and fresh dill. It's a cheap and easy meal that's fit for company whether served as a weeknight dinner or weekend breakfast. Easy to make with minimal clean up, I would make this over omelets any day! - Preheat the oven to 400 degrees F (200 degrees C).
- Place sausage, zucchini, grape tomatoes, and red onion on a rimmed baking sheet. Drizzle with olive oil and toss to combine. Spread into a single layer.
- Roast in the preheated oven until browned around the edges, about 7 minutes.
- Remove sausage mixture from the oven and reduce heat to 375 degrees F (190 degrees C).
- Whisk eggs, milk, salt, and pepper together in a bowl. Pour evenly over the sausage mixture and sprinkle feta cheese over top.
- Return to the oven and bake until eggs are set, 17 to 20 minutes.
- Sprinkle with dill and serve.

- Mix pasta, spinach, sauce, eggs, and cheese.
- Preheat broiler.
- Brown chicken for 7 minutes in skillet.
- Add mix and cook for 5 minutes.
- Wrap foil on skillet handler and broil for 3 minutes.

Steps:
- Drain the artichokes reserving the marinade. Cut any large pieces in half and set aside.
- In a large skillet heat the oil over med-high heat. Add the chicken and cook until no longer pink then add the garlic and cook till the chicken has browned to desired doneness.
- Add the reserved marinade, broth and wine; and if using the dried oregano. Bring to a boil, reduce heat and simmer, covered for 10 minutes. Stir in the artichokes and olives; simmer for 5 to 10 minutes;add the hot cooked pasta and simmer for 10 minutes or until sauce is absorbed; (at this point the orignal recipe called for the dish to be served over the pasta with the sauce poured over it, however I felt the sauce was to thin and didn't stick well to the pasta).
- Serve with the crumbled feta cheese.
- Great with a salad.

A dear friend gave me this delicious frittata recipe. It is wonderful to serve for a Saturday breakfast when you can sit and enjoy and your meal and not rush out the door in order to miss the morning traffic.

- Cook the first four ingredients in hot oil in a 10" oven-proof skillet over medium-high heat, stirring constantly until vegetables are tender.
- Combine eggs and next four ingredients, pour over vegetables in skillet.
- Cover and cook over medium-low heat 10-12 minutes or until almost set.
- Remove from heat, and sprinkle with Parmesan cheese.
- Broil 5-1/2" from heat with oven door partially open 2-3 minutes or until golden.
- Cut frittata into wedges.

- In a skillet, saute onion and both peppers in margarine over medium heat for 5 minutes, but do not brown.
- In a large bowl, combine onion-pepper mixture and spaghetti and toss. Add mozzarella cheese and toss.
- In a separate bowl, beat eggs, milk, parmesan cheese, basil, oregeno, seasoned salt, and pepper.
- Add spaghetti mixture and pour into buttered 9x13 inch baking dish.
- Cover with foil and bake at 375 degrees for 15-20 minutes.
- Uncover and make sure eggs are set. If not, bake 2-3 minutes longer.

- Cook pasta according to package directions. In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 4-6 minutes or until no longer pink.
