MEXICAN MEAT-ZZA: MEXICAN DEEP-DISH PAN PIZZA

- Preheat oven to 400 degrees F.
- Mix together 2 packages muffin mix with 2 eggs, 4 tablespoons melted butter (melt in microwave 30 seconds), 1 1/2 cups milk and frozen corn kernels. Wipe a nonstick skillet with a little extra or vegetable oil and pour in the muffin mix. Use a large skillet, 10 to 12 inch. Choose a pan with oven safe handle or, double-wrap handle with foil to protect it in the oven. Place pan in oven and bake 12 to 15 minutes in center of the oven until light golden in color.
- Brown the meat over medium high heat in a second skillet in extra or vegetable oil, 2 turns of the pan. Add onions and spices and cook meat 5 minutes more.
- Remove cornbread from oven and top with meat, cheese, and veggies. Add pan back to oven and cook 5 minutes more to melt cheese. Garnish with cilantro, optional. Cut into 8 wedges and serve the deep dish pan pizza from the skillet. Pass taco sauce at the table to sprinkle on top.
MEATZA
Meatza, or pizza with a sausage or seasoned meat crust, is a delicious, low carb, paleo-friendly alternative to greasy take-out! It's super simple, too!

Steps:
- Preheat the oven to 425°F on convection mode (or 450°F on regular mode) with the rack in the middle position, and place a large sheet of parchment on a clean, flat surface.
- Spread the bulk sausage on the parchment, and use your hands to form the meat into a rectangle.
- Place another piece of parchment on top of your sausage rectangle, and use your hands to evenly press down on the sausage between the two sheets of parchment paper. Then, use a rolling pin to uniformly flatten the sausage until it's about ¼-inch thick, making sure it's not too wide or long to fit on a half-sheet (18-inch x 13-inch) rimmed baking pan.
- Peel off the top layer of parchment and transfer the flattened crust (with the sheet of parchment underneath) to a rimmed baking sheet.
- Pop the baking sheet in the hot oven and bake until cooked through, about 10 minutes, rotating the tray around at the halfway point. The crust should be cooked through with some browning at the edges. Remove the pan from the oven.
- At this point, you may notice a lot of accumulated sausage juice. Blot the crust well with paper towels. Then, carefully transfer the crust to a clean piece of parchment. Discard the old parchment paper, and wipe away any spilled meat juices from the rimmed baking sheet. Transfer the meat crust (with the parchment) back onto the baking sheet.
- Now, it's time to go crazy with the toppings: Slather a layer of marinara sauce on the meatza crust, and add your favorite toppings. Me? I like thinly sliced mushrooms, bell peppers, red onion slices, and olives. Add cheese if desired. I prefer dairy-free cheese or goat cheese (because I don't do well with cow's milk cheeses), so I'll sometimes dollop on some chevre or almond milk ricotta.
- Return the meatza to the oven, and bake for 5-10 more minutes or until the toppings are browned.
- Take it out of the oven and let the meatza rest for 5 minutes. Last but not least: Slice and eat!

KETO MEATZA

- Preheat oven to 425 degrees.
- To a mixing bowl, add ground pork, Italian seasoning, red pepper flakes, salt, and pepper and mix together until well-combined.
- Rip off two even-sized pieces of parchment paper and transfer ground pork mixture to top of one piece of parchment paper and place other piece of parchment paper atop meat. Using a rolling pin, roll meat until it is an even layer. Remove and discard the top piece of parchment paper before, using hands, forming meat into a rectangle. Carefully slide a baking sheet beneath parchment paper and transfer baking sheet to oven to bake for 10 minutes, rotating baking sheet halfway through baking time.
- Remove pan from oven and carefully pour grease from baking sheet into a can or jar to discard. Using paper towels, blot excess grease off of meat.
- Scoop and spread tomato sauce into even layer atop meat crust. Sprinkle ¼ cup (28g) shredded mozzarella atop tomato sauce. Top with chopped mushrooms, grated parmesan, and dried oregano before sprinkling remaining ¼ cup (28g) shredded mozzarella atop. Return baking sheet to oven and bake until shredded mozzarella is melted, about 7-10 minutes, before turning oven broiler on and broiling until cheese is bubbly and golden, about 1 additional minute.
- Remove baking sheet from oven and allow pizza to cool slightly before cutting into slices. Serve with sprinkle of fresh oregano on top.

PEPPERONI MEATZA
For people that are gluten-intolerant, low-carb, paleo, or whatever, it can be hard to go without pizza. This dish makes it a lot easier. It is made pretty much exactly the same as pizza, but with ground beef as the crust. Sounds weird at first, but it is absolutely delicious and very filling. This is something great to make ahead of time and then eat as leftovers later on. It's great hot or cold, just like pizza! I find that if you make 6 square slices, each slice is usually more than enough to fill you up. Feel free to add whatever toppings you normally eat on pizza. It will taste just as good!

- Preheat oven to 450 degrees F (230 degrees C).
- Mix together salt, caraway seeds, oregano, garlic salt, ground black pepper, and crushed red pepper flakes in a small bowl.

- Preheat your oven to 400 degrees F. Line a 14-inch rimmed, non-perforated pizza pan with a circle of high-heat-resistant parchment paper. You can also use a rimmed baking sheet lined with parchment and make the pizza a bit smaller in diameter.
- On the prepared baking sheet, flatten the ground beef into a very thin, large circle - make it as thin as you can (1/8-inch thick is good). I use a rolling pin to roll it as thin as I can, then use my fingers to spread it evenly so that it covers the entire pan.
- Sprinkle the ground beef with kosher salt, black pepper, garlic powder, oregano, and red pepper flakes.
- Bake the meat crust in the preheated oven until fully cooked. If rolled thin, this should take about 10 minutes.
- Remove the pan from the oven and switch the oven to broil. By now, the meat crust has shrunk and is sitting in a pool of cooking liquids. Carefully transfer it, using two wide spatulas, to a foil-lined rimmed baking sheet.
- Spread the meat base with pizza sauce, then sprinkle the cheese evenly on top. Add your toppings. Return to the oven and broil just until the cheese is melted, 1-2 minutes. You can also bake in the 400F oven for 5 more minutes instead of broiling, but I do like the way broiling crisps up the meaty edges.
- Allow the meatzza to rest for 5 minutes before cutting it into 8 triangles and serving.

I find this more and more helpful in the repertoire as so many children - small children at any rate - seem to be kept on strict wheat-free diets by their parents these days. This is why I've given the option of replacing the breadcrumbs with porridge oats, and very well it works, too. All in all, it is just about the perfect children's tea.

- Preheat the oven to 220C/425F/Gas 7.
- In a large bowl, using your hands, combine the mince, parmesan, breadcrumbs or oats, parsley, eggs, garlic, and add some salt and pepper. Do not overwork it, just lightly mix together or the meat will become compacted and dense.
- Butter a round baking tin of about 28cm/11in diameter and turn the meat into it, pressing the mixture lightly with your fingers to cover the bottom as if the seasoned minced meat were your pizza crust.
- Make sure you've drained as much runny liquid as possible out of your can of chopped tomatoes, then mix the tomato with the garlic oil, oregano and some salt and pepper and spread, using a rubber spatula, lightly on top of the meat base. Arrange the mozzarella slices on top, and then put in the oven for 20-25 minutes, by which time the meat should be cooked through and lightly set and the mozzarella melted.
- Remove from the oven and let it sit for five minutes, then adorn with some basil leaves and bring it to the table before cutting into wedges, like a pizza.

This is my SIL's recipe and was a great favorite of her two children. As little tots my niece and nephew came out here to Arizona to visit and brought this recipe with them "so they wouldn't feel so homesick!"

- Preheat oven to 375 degrees.
- Place meat, milk, crumbs, and garlic salt in a 9-inch pie plate; mix thoroughly with a fork. Pat evenly onto bottom and up sides of pie plate; rim with fingers, pressing firmly into place.
- Spread tomato paste over meat mixture. Arrange drained mushrooms over top of tomato paste. Add Cheddar cheese, oregano, Parmesan cheese, and onion in layers. Top with sliced olives, if used.

CRUSTLESS PIZZA (MEATZA)
This is in 500 Low Carb Recipes, it's similar to another Crustless Pizza on here but it has no breadcrumbs. Next time I will use a high quality hamburger as I used one with more fat content and it shrunk significantly. For sugar free pizza sauce I combined tomato paste with some chicken stock to a consistency thinner than paste and thicker than spaghetti sauce, I added salt, italian seasoning and garlic powder to taste.

- Preheat oven to 350°F.
- In a large bowl and with clean hands, combine the meat with the onion and garlic, and a teaspoon of oregano or italian seasoning (if using). Mix well.
- Pat the meat mixture out in a even layer in a 9x12 inch baking pan. Bake for 20 minutes.
- When the meat comes out, it will have shrunk a fair amount, because of the grease cooking off. Pour off the grease and spread the pizza sauce over the meat. Sprinkle the parmesan (if using) on the sauce, and then distribute the shredded mozzerella.
- Top with whatever you like ie: green peppers, mushrooms, onion, black olives etc.
- Drizzle the whole thing with a little olive oil (if using)
- Put your Meatza 4 inches below a broiler or griller set on high. Broil/Grill for about 5 minutes until cheese is melted and starting to brown.
