1 pound lean ground beef (90% lean)
1 pound bulk Italian sausage
1 medium green pepper, chopped
1 medium onion, chopped
8 garlic cloves, minced
3 cans (14-1/2 ounces each) Italian diced tomatoes, drained
2 cans (15 ounces each) tomato sauce
2 cans (6 ounces each) tomato paste
1/3 cup sugar
2 tablespoons Italian seasoning
1 tablespoon dried basil
2 teaspoons dried marjoram
1 teaspoon salt
1/2 teaspoon pepper
Hot cooked spaghetti
Shredded Parmesan cheese, optional

Steps:

  • In a large skillet over medium heat, cook beef and sausage until no longer pink, 10-12 minutes, breaking into crumbles; drain. Transfer to a 5-qt. slow cooker. Stir in the green pepper, onion, garlic, tomatoes, tomato sauce, paste, sugar and seasonings., Cover and cook on low for 8 hours or until bubbly. Serve with spaghetti. Garnish with parmesan if desired.

Steps:

  • To serve, cook pasta in a pot of boiling salted water until just shy of al dente (about 1 minute for fresh pasta or 1 minute short of recommended cooking time for dried pasta). Drain, reserving about 1 cup of starchy pasta water. Return pasta to the pot you just cooked it in and add half of ragù, half of pasta cooking water, and a handful of grated cheese.   • Brown ground beef and ground pork uncovered over medium high heat in a large stock pot. Stir often.
  • Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
  • Drain meat. Return to stock pot.
  • Add onions and bell peppers. Stir well. Simmer uncovered over low heat for 5 minutes.
  • Add garlic powder, pepper, tomato purée, salt, broth, water, parsley, basil, oregano, marjoram, thyme, and carrots. Stir. Cover, simmer for 1 hour. Stir occasionally.

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

20 small fresh tomatoes (or 6 beefsteak tomatoes)
2 tablespoons of olive oil, divided
1 onion, chopped
3 large cloves of garlic, finely diced
8 large white mushrooms, chopped
1 pound of lean ground beef
1/2 pound of lean pork ( can also use 4 bone in pork chops)
2 tablespoons fresh rosemary
2 tablespoons of fresh oregano
2 tablespoons of fresh basil
2 teaspoons of fresh thyme
1 teaspoon sea salt
cracked black pepper to taste
1/2 cup of good red wine (optional)
2 tablespoons of tomato paste
16 ounces of spaghetti
Parmesan cheese to top (optional)

Steps:

  • Preheat the oven to 450 degrees F. Cut the tomatoes in half and place on a lined baking sheet. Bake for 10-15 minutes.
  • Use tongs to remove the skins. Place the tomatoes in a large cooking pot.
  • While the tomatoes are roasting, cook the onions, and mushrooms in 1 tablespoon of oil until soft and tender about 10 minutes.
  • Add the garlic and cook a minute more.
  • Stir in the chopped fresh herbs and cook a few minutes. Transfer the mixture to the large cooking pot.
  • Dice the pork. Add the pork and ground beef to the frying pan with the rest of the olive oil and cook until they are no longer pink. (If you are using pork chops, cook them whole and then dice.)
  • Place the cooked meat in the pot with the tomatoes and vegetables..
  • Add 2 tablespoons of tomato paste. Season with salt and pepper.
  • If using the wine, add it now and stir well.
  • Place over medium heat and cook until the sauce starts to boil, stirring often. Reduce the heat and simmer for 2 hours or more. Stir every half hour or so.
  • 15 minutes before serving time, cook the pasta in boiling salted water until al dente.
  • Pour the meaty spaghetti sauce over the pasta and serve with garlic bread and a tossed salad.

I use containers like the size of the large country crock butter bowl, enough for 4-8 servings at a time and use it when you feel the urge for this sauce. I always try to use it up in 6 months or so, then start all over making another batch.

4 lbs pork neck bones
4 garlic cloves
3 tablespoons olive oil
5 quarts tomato sauce
4 (6 ounce) cans tomato paste
2 quarts water
2 tablespoons basil
2 tablespoons oregano
1 tablespoon parsley flakes
1 tablespoon rosemary
1/2 cup parmesan cheese
1/2 cup romano cheese
1 tablespoon salt and pepper
1 teaspoon hot pepper flakes
1/2 cup red wine
1 tablespoon sugar (to taste)

Steps:

  • In a large pot, add olive oil, smash garlic with clever until flat, add to pot.
  • Cook garlic until golden brown, not burnt!
  • Remove garlic.
  • Add pork neck bones, brown, put garlic back in the pot.
  • Add tomato sauce, tomato paste and all other ingredients. Simmer 2 hours with lid on. The second 2 hours remove lid stirring occasionally, until desired thickness.
  • Remove pork neck bones, let cool a little, remove meat from bones, add back to sauce.
  • The last half hour add cheese. Freezes very well.

2 tablespoons oil
1 medium onion, finely diced
1 tablespoon crushed garlic
1 chorizo sausage, peeled,quartered,sliced finely (about 100g)
450 g ground beef (I used lamb)
1/4 cup white wine (I used vermouth)
1 (250 g) jar tomato paste
2 (440 g) cans chopped peeled tomatoes
3 cups water
2 teaspoons dried basil
2 teaspoons dried oregano
1 pinch mixed spice (pumpkin spice is similar)
1 teaspoon celery salt
3 tablespoons chopped fresh parsley

Steps:

  • Heat the oil in a large pan over medium heat.
  • Add the onion and cook for about 5 minutes, or until it softens.
  • Add the garlic and saute for a further 5 minutes-don't allow to burn.
  • Add the sliced chorizo, and cook for a couple of minutes, until the fat starts to run.
  • Now add the meat and brown really well.
  • I've learned to do this (thanks Evelyn/Athens) over about 15 minutes to get a really good flavour, so be patient.
  • At this stage, I drain all the fat and oil off that I can.
  • Pour in the wine, and cook for a couple of minutes, then add the tomato paste, and cook a couple of minutes more.
  • Add the chopped tomatoes, water, herbs, mixed spice and celery salt and bring to the boil.
  • Reduce to a simmer, and cook gently for about 2 hours uncovered, stirring occasionally and making sure not too much water has evaporated or that the dish is sticking.
  • Stir through the parsley before serving over pasta of your choice.
