MEATLOAF RECIPE WITH OATMEAL
This old-fashioned meatloaf with oatmeal is a simple, easy dinner that comes together with just 10 minutes of prep!

- Preheat oven to 350°F. Gently combine all ingredients except ketchup in a large bowl. Transfer to a greased loaf pan.
- Bake (uncovered) for about 60 minutes, or until meatloaf reaches an internal temperature of 160°F and juices run clear. Tilt the pan to drain off the grease; spread ketchup on top, and return to the oven for 10 more minutes.
- Let stand 5 minutes before slicing.

It's a classic for a reason! This old fashioned meatloaf recipe with oatmeal is comfort food at its finest! Hearty and flavorful, and surprisingly healthy (it's gluten free!) This easy dinner recipe can be made in a skillet or loaf pan and is sure to be a family favorite.

Steps:
- Put ground beef, sausage or ground pork, and oats into a mixing bowl.
- Add egg, milk, 1/4 cup tomato sauce or ketchup, salt, pepper, and chopped vegetables to the blender. Pulse to chop vegetables into smaller pieces.
- Add liquid/vegetable mixture to the ground meat and oats. Mix up with your hands. Let sit for about 15 to 30 minutes so the oats can absorb some of the liquid.
- Shape the mixture into a round loaf or put into a bread pan.
- If you are making a free-standing round loaf, cover a baking sheet with foil. Make sure there is a rim on the sheet because your meatloaf may release liquids. You can also use a large cast iron skillet too.
- Bake in a 350-degree oven for 45 minutes. Carefully remove from oven.
- Put the remaining tomato sauce or ketchup on top and bake an additional 15 to 20 minutes.
- Remove from the oven and let stand for about 15 minutes before serving.

- For the meatloaf: Preheat the oven to 350 degrees F.
- Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
- Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
- Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
- Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
- Serve with the remaining tomato sauce on the side as a dipping sauce.

- Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.

- Preheat oven to 350 degrees F (175 degrees C).

- Preheat oven to 350 degrees.
- Mix sauce ingredients, set aside until meatloaf is halfway cooked.
- Beat eggs; stir in milk, oats, sage, salt, onion and optional celery. Mix into ground beef. NOTE: Traditional meatloaf has double the salt; we like this recipe as is, but you may season to your own tastes by increasing salt or adding pepper.
- Place in 9" X 9" pan, leaving 1/2" empty border (makes it easy to remove any grease later).
- Bake uncovered for 30 minutes at 350 degrees. Cover with sauce and bake an additional 30 minutes (still uncovered) at 350 degrees.
