ITALIAN MEATLOAF MUFFINS
Italian Meatloaf Muffins are mini versions of a classic Italian meatloaf recipe, in fun individual portions. You'll love the gooey cheese centers!

- Preheat oven to 400° F. Very lightly spray a regular-sized muffin pan with non-stick cooking spray.
- Heat a medium skillet over medium to medium-high heat. Add oil. Once oil is hot, stir in onion. Sauté for 3 to 5 minutes, until onion is softened, stirring occasionally. Then add garlic and sauté for 3 minutes more. Remove pan from heat. Transfer onion and garlic mixture to a large bowl. Let cool for a few minutes.
- To the onion and garlic mixture, stir in 1/2 cup of the marinara, and then the egg, bread crumbs, Parmesan, parsley, mustard, oregano, salt, and pepper. Stir to combine. Add ground beef and Italian sausage, and combine thoroughly with your hands.
- Lightly press about half of the meatloaf mixture into each of 12 muffin cups. Press a cube of mozzarella gently into the center of each muffin cup. Top each cube of cheese with more meatloaf mixture, evenly dividing up the remaining mixture.
- Top meatloaf muffins with remaining 1/2 cup of marinara, dividing evenly amongst the 12 portions. Place muffin pan on a rimmed baking sheet and bake for about 30 minutes, or until internal temperature registers 165° F and the muffins are hot and bubbling. Remove pan from oven and let stand for a few minutes. Using a slotted spoon, carefully transfer meatloaf muffins to a serving platter. Sprinkle with additional chopped parsley, if desired.

- Preheat oven to 350 degrees. Lightly grease a glass baking pan (9x13) with nonstick cooking spray.
- In a large mixing bowl combine ground beef, bread crumbs, basil, oregano, parsley, salt, pepper, milk, and worcestershire sauce. Knead until combined.
- Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place in prepared pan. Place mozzarella slices down the center, leaving 1/2 inch around the ends and sides. Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so it doesn't need to be perfect.
- In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. Pour half of this mixture over the meatloaf, reserving the remaining half for later.
- Bake in the preheated oven for 45 minutes.
- After 45 minutes, remove from oven and pour the remaining sauce over the loaf. Increase temperature to 400 degrees and bake for an additional 15 minutes.
- Let rest 5 to 10 minutes before serving.

- Preheat the oven to 400°F. Grease a muffin pan.
- Mix all ingredients except mozzarella and marinara in a large bowl.
- Once mixed, create a ball of meat mixture and press a cube of mozzarella into it. Cover with equal amounts of the meat mixture.
- Repeat until all meat is used up, (you want the balls to fit into a muffin pan).
- Place mini meatloaves into greased muffin pans and top with marinara sauce.
- Cook in the oven for 19-20 minutes or until they reach 165°F internally.

- Preheat oven to 450F degrees.
- In a medium bowl, whisk together BBQ Ketchup Glaze ingredients. Taste and adjust with more brown sugar for sweeter or more hot sauce for spicer. Set aside.
- Add roughly chopped onion, green bell pepper, celery, carrot and garlic cloves to your food processor and finely chop. Add to large bowl along with the remaining Meatball Muffin ingredients and mix until well combined.**
- Line a 12-muffin tin with muffin liners and lightly spray with nonstick cooking spray. Using a 1/3 cup measuring cup, fill measuring cup, add a mozzarella piece to the center and roll into a ball and place in muffin liner. Repeat until muffin tin is filled.
- Evenly top each meatloaf muffin with BBQ Ketchup Glaze.
- Bake Meatloaf Muffins at 450 degrees F for 20 minutes or until an instant-read thermometer inserted into the center (but not the cheese) reads 165 degrees F. If you don't own a thermometer, cut open 1 muffin to ensure it is cooked all the way through. Continue to cook if meatloaf is not fully cooked through.
- Let stand 5 minutes then serve warm.
MASHED POTATO-STUFFED MEATLOAF
Forget mashed potatoes as a side dish and reinvent meatloaf with this spud-stuffed version. The potatoes are ready in no time, thanks to your microwave, and could easily become a weeknight go-to recipe all on their own.

- Preheat the oven to 350 degrees F. Line a baking sheet with foil.
- For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
- For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
- Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
- For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
- Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
- While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
- Slice and serve the meatloaf with butter, black pepper and the peas.
LITTLE MOZZARELLA-STUFFED MEATLOAVES

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
- Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
- Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
- Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.
MEAT LOAF MUFFINS

MEATLOAF MUFFINS WITH STOVE TOP STUFFING
This is very quick and easy to make. Kids love the "muffins". Also great for any of those anti-onion people in your home. You can make it with ground turkey to make it really healthy. I actually have a pan I drilled holes in to let the fat and grease drain out while cooking. We make these often. I got this recipe from a friend who was doing Weight Watchers at the time. Oh, and I half this recipe all the time. If I feel like loafs I just form those and bake a bit longer.

- Combine all ingredients in a large bowl& mix until well blended- do not over mix.
- Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.

- Preheat oven to 350˚F (180˚C).
- Place cooked potatoes into a large bowl. Add butter, salt, pepper, parmesan, and a splash of milk. Mash and add more milk gradually until the potatoes are the desired texture. Set aside and let cool.
- Prepare the glaze by mixing ketchup, brown sugar, onion powder, mustard powder, and paprika in a bowl. Reserve half in a separate bowl to glaze once cooked.
- Add oil in a skillet over medium heat, followed by onions and garlic. Cook until onions are translucent and fragrant. Set aside in a bowl to cool before adding to the meat mixture.
- In a large bowl, combine ground beef, salt, pepper, worcestershire sauce, parmesan, parsley, cooled onions & garlic, egg, breadcrumbs and milk. Mix until combined.
- Using a spoon or ice cream scooper, scoop the meat mixture and place into a greased 12 cup cupcake baking tin.
- Using your fingers, spread the meat from the center to make a cup. Fill the middle with a small spoonful of mashed potatoes, and cover back up with the meat mixture.
- Generously brush half of the reserved glaze on top of the meatloaf cups generously.
- Bake for 25 minutes, reapplying the glaze halfway through. Once they are done cooking, brush with the remaining glaze that has Not been used on the raw meatloaves.

- Preheat the oven to 350 degrees F (175 degrees C).

- Preheat the oven to 375 degrees F (190 degrees C). Spray two extra-large 6-cup muffin tins with nonstick cooking spray.
- Mix milk, 3 tablespoons Italian dressing, mustard, and egg together in a large bowl. Mix in quick-cooking and old-fashioned oats followed by Swiss cheese, Parmesan cheese, and mozzarella cheese. Let mixture sit for 3 to 5 minutes. Mix in beef, onion, oregano, garlic, celery seed, garlic powder, salt, and pepper. Let sit for another 3 to 5 minutes to absorb liquid, as mixture will seem very wet.
