SALSA VERDE MEXICAN MEATLOAF



Salsa Verde Mexican Meatloaf image

A yummy alternative to traditional meatloaf. I serve this with refried beans and Mexican rice. It's like having a burrito but less messy. You can top with sour cream or guacamole if desired.

Number Of Ingredients 10

1 1/2 lbs 97% fat free ground beef
1/2 cup green tomatillo salsa
2 large eggs
1 (8 ounce) can diced green chilies
1 (8 ounce) can sliced black olives
1 cup plain breadcrumbs
1 teaspoon ground Mexican oregano
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 cup Cotija cheese (or other Mexican cheese, Cotija is a crumbly cheese with a distinct flavor)

Steps:

  • Preheat oven to 350.
  • Combine Ground Beef with eggs and a good amount of the Salsa. Start at about ½ a cup and add more as desired. Add green chiles & olives. Add about a teaspoon each of spices or more if desired. Add enough bread crumbs until meat mixture sticks together. Crumble in cheese as desired.
  • Grease pan as desired, form loaf in pan. Bake at 350 for 45 mins, and then check for doneness. Depending on your oven and how you shape the loaf this could take another 15-20 minutes.

2 teaspoons olive oil
1 yellow pepper, finely sliced
1/2 cup mushroom, finely sliced
1 small onion, finely chopped
4 eggs, lightly beaten
2/3 cup salsa
1/2 cup cheddar cheese, grated
1 pinch pepper, freshly grounded
1 pinch salt

Steps:

  • Preheat broiler.
  • Pour olive oil into a 10 inch ovenproof frying pan over medium heat.
  • Add onions, peppers and mushrooms, salt and pepper and stir until vegetables are softened but not browned, about 6-8 minutes.
  • POur in eggs and cook until almost set but still runny on top, about 2 minutes.
  • Pour salsa on top of eggs and sprinkle with cheese. Place in brolier.
  • Wait till cheese is melted and browned, about 3 to 4 minutes.
  • Slide frittata onto a serving platter and cut into wedges.

  • Preheat oven to 400°F. Heat olive oil in a 10-inch cast-iron skillet over medium heat. Add onions, and cook until fragrant and translucent, about 5 minutes. Add garlic and bell pepper, and cook until soft, about 5 minutes. Remove from heat and set aside.
  • Preheat a non-stick skillet over medium-high heat. Place sausage in skillet, cook and crumble for approximately 8 minutes. Add bacon and cook for an additional 8 minutes.
  • While the meat is cooking, whisk the eggs, and then fold in the crumbled queso fresco and season with pepper. When the meat is cooked, add meat to cast iron skillet with tomatillo verde sauce, and combine, and then pour the egg-cheese mixture over top, making sure the eggs coat the mixture evenly.
  • Cook the mixture for about 5 minutes or until the edges firm up, transfer the skillet into the preheated oven and bake for 12 to 15 minutes, or until the center is no longer wobbly and the top is golden.
