A tasty and substantial pork and egg breakfast muffin that will keep you satisfied until lunch. Perfect to prepare a head for those busy mornings, also suitable to serve at lunch accompanied with a fresh salad.

Number Of Ingredients 10

2 tsp ghee, or coconut oil for cooking
2 spring onion(s), (with green tops) thinly sliced
2 tsp garlic, minced
350g free-range pork mince, (you can also use lamb or turkey)
2 cups packed baby spinach leaves, roughly shredded
2 tsp Italian herbs
Sea salt & pepper to taste
8 lge egg(s)
1/3 cup coconut cream
3 Tbsp nutritional yeast flakes

Steps:

  • Preheat oven to 190c (fan-forced). Line or grease a large 12 cup muffin tin. Heat a large frying pan on medium heat. Add the ghee, spring onions and garlic, and cook stirring for 1 - 2 minutes. Add the minced meat to the pan and cook as you break it up with a spatula (the meat needs to be crumbly). Cook until the meat starts to brown. Add the spinach, Italian herbs, salt and pepper, and stir through the mixture. Remove pan from the heat and set aside for 8 - 10 minutes. Add the eggs, coconut cream and nutritional yeast flakes to a large bowl, whisk well. Scoop the meat mixture into the eggs and mix well. Use a 1/4 measuring cup to fill the muffin cups to 3/4 full (leave space for them to rise). Bake for 25 - 30 minutes or until the tops are set and beginning to brown. Allow to slightly cool for a few minutes before serving (the muffins will fall a little when removed from the oven). Any leftover cooked muffins can be stored in an airtight container in the fridge for up to 4 days. Suitable to freeze.

4 cups egg whites
9 eggs
1 pound turkey ham, diced
2 cups chopped spinach
2 red bell peppers, diced
2 green bell peppers, diced
2 fresh jalapeno peppers, seeded and diced
1 tablespoon minced garlic
1 tablespoon Italian seasoning
2 teaspoons onion powder
¼ teaspoon cayenne pepper
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray 24 muffin cups with cooking spray.
  • Beat eggs in a large bowl. Add egg whites to eggs and beat until smooth. Stir turkey ham, spinach, red bell peppers, green bell peppers, jalapeno peppers, garlic, Italian seasoning, onion powder, cayenne pepper, salt, and black pepper into the eggs. Ladle the egg mixture into prepared muffin cups to about 3/4-full.
  • Bake in preheated oven until firm in the middle, 25 to 30 minutes.

12 eggs
½ cup chopped onion
½ cup chopped green bell pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups, or line with paper muffin liners.
  • Heat a large skillet over medium-high heat and stir in sausage; cook and stir until sausage is crumbly, evenly browned, and no longer pink, 10 to 15 minutes; drain.
  • Beat eggs in a large bowl. Stir in onion, green pepper, salt, pepper, and garlic powder. Mix in sausage and Cheddar cheese. Spoon by 1/3 cupfuls into muffin cups.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.

Developed by a McDonald's franchisee in Santa Barbara to have a breakfast sandwich that emulated an "eggs benedict." The McMuffin has become the standard breakfast sandwich. These are so quick n' easy to make with minimum clean up.

1 large egg (grade A)
1 English muffin
1 slice Canadian bacon
1 slice American cheese (I recommend Kraft)
butter
cooking spray

Steps:

  • You will also need an Egg Ring, or a tuna can with the top and bottom off.
  • Pre-heat an electric griddle to 275 degrees.
  • Toast your English muffin by laying both sides face down on the griddle and applying pressure with spatula.
  • This takes 1 to 1-1/2 minutes.
  • (they should be medium brown) Set aside.
  • Lay your egg ring/can on the pre-heated grill.
  • Spray with cooking spray or a pat of butter to prevent sticking.
  • Crack the egg and pour into ring on the grill.
  • Break the yolk with a sharp instrument so it flows.
  • Butter both toasted halves of the English muffin with melted butter.
  • Put a slice of American cheese on the bottom half.
  • 2 to 2½ minutes after you started cooking the egg, the whites should firm up, and the yolk should still be a bit "liquidly".
  • Carefully remove the ring, leaving the egg on the griddle. You may have to "slice" around the edges if it sticks.
  • Very carefully turn the egg over, and lay one slice of Canadian bacon on the griddle.
  • Cook the egg 45-60 seconds after turning, after about 30-45 seconds, "flip" the Canadian bacon, and remove the egg, placing it on the bottom half (cheesed half) of the English muffin.
  • 20-30 seconds after flipping the Canadian bacon, remove.
  • Place the Canadian bacon on top of the cooked egg, and cover with the top of the toasted English muffin.

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup barbecue sauce
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons ketchup
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. 1 tbsp oil
150g broccoli , finely chopped
1 red pepper , finely chopped
2 spring onions , sliced
6 large eggs
1 tbsp milk
large pinch of smoked paprika
50g cheddar or gruyère, grated
small handful of chives , chopped (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 4. Brush half the oil in an 8-hole muffin tin. Heat the remaining oil in a frying pan and add the broccoli, pepper and spring onions. Fry for 5 mins. Set aside to cool.
  • Whisk the eggs with the milk, smoked paprika and half the cheese in a bowl. Add the cooked veg. Pour the egg mixture into the muffin holes and top each with the remaining cheese and a few chives, if you like. Bake for 15-17 mins or until golden brown and cooked through.

Nonstick cooking spray
10 large eggs
2 teaspoons kosher salt (see Cook's Note)
8 ounces cooked ground sausage (sweet Italian, spicy, chorizo)
9 mini sweet peppers (about 9 ounces), cut into 1/2-inch pieces, sautéed until tender
12 strips cooked bacon, crumbled into large pieces
6 slices American cheese, crumbled into large pieces
3/4 cup shredded cooked chicken (about 8 ounces)
3 tablespoons Buffalo chicken sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
