Grilled Swordfish Steaks With Asian Barbecue Sauce image

1/2 cup Chinese plum sauce
1/4 cup Chinese hoisin sauce
1 teaspoon Chinese chili paste with garlic
Grated zest of 1 orange
1/2 cup fresh orange juice
4 tablespoons chopped fresh coriander
2 teaspoons minced fresh ginger
1 teaspoon Asian sesame oil
4 swordfish steaks, 5 ounces each, skin removed
1/2 cup chicken stock
2 cups loosely packed spicy greens (like mizuna, red mustard, arugula and tatsoi)
4 scallions, including 2 inches of the green part, sliced
1 tablespoon peanut oil
1 teaspoon mixed black and white sesame seeds
Sprigs of coriander for garnish

Steps:

  • Preheat grill.
  • Combine plum sauce, hoisin sauce, chili paste, orange zest, orange juice, 2 tablespoons of the chopped coriander, 1 teaspoon of the minced ginger and the sesame oil. Brush some of this mixture lightly on the swordfish steaks, and set aside.
  • Heat the chicken stock with the remaining ginger in a heavy saucepan. Add the greens, cover and steam just until they wilt, about 1 minute. Remove from heat, and stir in the scallions and remaining chopped coriander. Set aside.
  • Brush the grill with peanut oil. Grill the swordfish steaks 2 to 3 minutes on each side, brushing with additional sauce mixture.
  • Remove the greens from the saucepan, drain them well and place in the center of 4 shallow bowls. Place a swordfish steak on top of each. Add the remaining sauce mixture to the liquid in the saucepan, and quickly bring to a simmer. Drizzle it around the greens and swordfish. Sprinkle with sesame seeds, garnish with coriander sprigs and serve.

This light summery dish of grilled swordfish looks effortless when you have friends over.

4 swordfish steaks (around 150g/5½oz each)
salt and freshly ground black pepper
50ml/2fl oz olive oil
1 lemon, zest and juice only
2 garlic cloves, crushed
1 tsp dried oregano or 1 tsp mixed Italian herbs
200g/7oz podded and peeled broad beans (around 300g/10½ oz podded weight, 1kg/2lb 4oz fresh unpodded weight)
1 tbsp olive oil
100ml/3½fl oz white wine
20g/¾oz butter
1 lemon, pared zest only, finely chopped
50g/1¾oz green olives, finely chopped
50g/1¾oz capers, finely chopped
25g/1oz parsley, finely chopped

Steps:

  • Season the swordfish steaks with salt and pepper and place in a shallow dish. Mix all the marinade ingredients together, and pour over the swordfish. Leave to marinade for no longer than 15 minutes (you don't want to risk the lemon "cooking" the fish).
  • Meanwhile, to make the sauce, blanch the broad beans in a pan of boiling water for 2 minutes, then drain and set aside.
  • Make the gremolata by mixing together the lemon zest, olives, capers and parsley.
  • Heat a tablespoon of olive oil in a heavy-based frying pan. When the pan is very hot, add the swordfish steaks and fry for 3-4 minutes on each side.
  • Remove from the pan and leave to rest while you finish the sauce. Deglaze the pan with the white wine, then add the butter. Swirl until the butter has melted, then add the blanched broad beans. Heat through.
  • Serve the swordfish with the sauce spooned over and the gremolata on the side.

Swordfish, with its firm, lean flesh, is an ideal candidate for grilling. It's not as forgiving as some fatty fish, like tuna and black sea bass, so proceed with caution. If you remove the fish from the fire when the center is still slightly pink, by the time it gets to the table it should be cooked through. A quick marinade of soy sauce, red wine vinegar, rosemary, garlic, coriander and cumin pairs beautifully with the meatiness of the fish, but do not marinate for more than 10 to 15 minutes, or the acid will break down the flesh and leave it mushy (or the flavor will overpower the fish). If you don't have a grill, this works equally well in a broiler. Serve this alongside a colorful pile of Pierre Franey's green bean and tomato salad. It's a summer meal you'll never forget. 4 center-cut swordfish steaks, about 6 ounces each, one-inch thick
Salt and freshly ground pepper to taste
3 tablespoons olive oil
2 teaspoons soy sauce
1 tablespoon red-wine vinegar

2 teaspoons ground coriander

Steps:

  • Preheat a charcoal grill or broiler, or heat a grill pan.
  • Sprinkle fish with salt and pepper on both sides. Place oil in a flat dish, and add soy sauce, vinegar, rosemary, garlic, coriander, cumin, lemon rind and pepper flakes. Blend well. Place fish steaks in marinade, coat well on both sides, cover with plastic wrap and let stand for 10 to 15 minutes.
  • If the swordfish is to be cooked on a grill (or grill pan), place fish on grill and cook for 3 to 4 minutes. Turn and cook for 3 minutes more. Cook longer if desired. If it is to be cooked under a broiler, place fish on a rack and cook for 3 to 4 minutes on each side. Serve with a string bean salad.

Grilled Swordfish Kebabs With Golden Raisin Chimichurri image

Swordfish is the perfect seafood for grilling - the flesh is sturdy and firm, with a mild flavor that readily absorbs the aroma of smoke without losing its own. Most people grill swordfish as steaks; the Miami chef Michael Schwartz cuts it into chunks for kebabs, a format that allows him to intersperse the chunks of fish with lemon slices and bay leaves, and grills them over wood (though you could use charcoal or, if necessary, grill over gas). The tips of the bay leaves char, imparting a fragrant herbal smoke. By way of a sauce, Mr. Schwartz serves a classic Argentine chimichurri with a not-so-classic twist - the addition of yellow raisins, which counter the traditional garlic and vinegar with an unexpected note of sweetness. If swordfish is unavailable, use another sturdy fish, like tuna or mako shark.

2 pounds swordfish steaks (at least 1 1/2 inches thick), skinned and cut into 1 1/2-inch chunks
12 bay leaves (preferably fresh)
2 lemons, halved lengthwise and then cut crosswise into 1/4-inch slices, seeds removed, plus 1 whole lemon for squeezing
Coarse sea salt and ground black pepper
2 tablespoons chopped fresh oregano
Extra-virgin olive oil
1/2 cup golden raisins
1 cup boiling water
3/4 cup plus 2 tablespoons extra-virgin olive oil
1 bunch flat-leaf parsley, washed, shaken dry and stemmed
1/4 cup stemmed fresh oregano
1 tablespoon fresh thyme leaves
2 cloves garlic, minced
3 tablespoons sherry vinegar, or to taste
2 tablespoons fresh lemon juice
1/2 teaspoon red-pepper flakes

Steps:

  • Make the kebabs: Thread the swordfish, bay leaves and lemon slices alternately onto flat bamboo or metal skewers. Arrange in a nonreactive baking dish. Season the kebabs on all sides with salt and pepper. Squeeze the juice from the remaining lemon over them. Sprinkle with oregano and drizzle with olive oil. Turn the kebabs a few times to coat with the flavorings and marinate in the refrigerator for 30 minutes.
  • Meanwhile, make the chimichurri: Place the raisins in a heatproof mixing bowl. Pour boiling water over them and stir in 2 tablespoons olive oil. Let raisins soak for 15 minutes.
  • Finely chop parsley, oregano, thyme and garlic in a food processor. Gradually work in 3/4 cup olive oil, sherry vinegar, lemon juice, red-pepper flakes, salt and pepper to taste; the chimichurri should be highly seasoned.
  • Drain raisins well and add them to the chimichurri. Pulse the processor a few times to mix, but leave the raisins mostly whole. Transfer 3/4 cup of the chimichurri to a small bowl for basting, and transfer the rest to a serving bowl.
  • Meanwhile, build a wood fire in your grill with a hot zone for searing and a medium zone for cooking. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks between the Flavorizer bars or over the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
  • Arrange the kebabs over the hot fire and grill until the fish is browned and sizzling and cooked through, 2 to 3 minutes per side, 8 to 12 minutes in all. Move kebabs to the medium zone if they start to burn. Baste with a little of the reserved chimichurri as the kebabs cook.
  • Serve the kebabs with the remaining chimichurri on the side for spooning over the fish.

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Steps:

  • Crush the habanero and kosher salt into a fine paste with a mortar and pestle before whisking in mayonnaise, horseradish, lemon juice, vinegar, white pepper, and garlic powder.
  • Strain sauce through a fine mesh strainer before using to remove the pepper skins and particles of horseradish. Set aside until needed.
  • Preheat a charcoal grill until coals are very hot.
  • Coat filets on both sides with olive oil and season with salt.
  • Place filets on the preheated grill, flipping as needed, until they spring back lightly to the touch. Remove from heat.
  • Plate fish as desired and top with white hot sauce and green onions.
