1-3/4 cups bottled apple juice
1/2 tsp. ground cinnamon
3-3/4 cups sugar, measured into separate bowl
1 pouch CERTO Fruit Pectin

Steps:

  • Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
  • Measure apple juice and cinnamon into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.
  • Add pectin; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jelly is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

2 cups apple juice
1/4 cup lemon juice
1/2 cup red cinnamon candies (red hots)
3/4 cup water
1 teaspoon red food coloring
1/4 teaspoon mace
1 box dry pectin
8 whole cloves
1 cinnamon stick
4 cups sugar

Steps:

  • Prepare home canning jars and lids according to manufacture's instructions.
  • Jars must be covered with water and boiled 10 minutes to sterilize.
  • Combine apple juice, lemon juice, red hots, water, food coloring, mace and pectin.
  • Tie cloves and cinnamon stick in a spice bag.
  • Add spice bag to juice mixture.
  • Bring mixture to a boil, stirring constantly.
  • Add sugar, stirring to dissolve.
  • Bring to a rolling boil.
  • Boil hard for 2 minutes.
  • Remove from heat and skin foam, if necessary.
  • Carefully ladle hot jelly into hot jars, leaving 1/4" head space.
  • Wipe jar rim clean.
  • Place lid on jar with sealing compound next to glass.
  • Screw band down evenly and firmly.
  • Do not use excessive force.
  • Process jelly 5 minutes in a boiling water canner.

1kg cooking apple
2 cinnamon sticks
4 star anise
15 cloves
half nutmeg , grated
4 allspice berries
1 blade mace , or ¼ tsp ground mace
4 long pieces orange peel
8 bay leaves
450g jam sugar
100ml cider vinegar

Steps:

  • Wash and cut up the apples into small chunks, leaving the peel and cores in. Tip the apple into a large pan with the spices, orange peel and bay leaves, reserving 2 star anise, 4 cloves and 2 bay leaves for the jars. Cover with 600ml water. Bring to the boil, then turn down the heat and simmer with a lid on for 1 1⁄2 hrs.
  • Pour the apple mixture into a jelly bag or a sieve lined with muslin or a J-cloth, suspended over a large bowl. Leave to drip for 2 hrs (until it stops dripping) or overnight. Do not be tempted to push the liquid though the sieve or your jelly will become cloudy.
  • Measure the juice - you should have about 600ml. Pour the liquid into a large pan along with the jam sugar and vinegar.
  • Set over a low heat to dissolve the sugar, stirring constantly. Once dissolved, turn up the heat and bring to the boil. Boil rapidly for 15 mins, or until setting point is reached, skimming away any scum that rises to the surface.
  • Pour jelly into hot sterilised jars and place a star anise, bay leaf and 2 cloves into each jar. Chill for 3-4 hrs or overnight until set.

4 cups unsweetened apple juice
1 package (1-3/4 ounces) powdered fruit pectin
6-1/2 cups sugar
2 teaspoons ground cinnamon

  • In a Dutch oven, combine apple juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. In a bowl, combine remaining ingredients. I have not tried jelly. I'm posting this for safe keeping. I found this recipe Complete Book Of Small Batch Preserves. This full bodied taste of fresh apple cider spiced with cinnamon is marvelous on toast and hot biscuits. Try heating the jelly and serve over pancakes or french toast. Reserve the cinnamon stick and add a small piece to each jar for an attractive garnish and more intense cinnamon flavor. I plan to use Splenda for the sugar.

2 1/2 cups fresh pressed apple cider (625 ml)
1 cinnamon stick, 4-inches (10 cm)
3 1/2 cups granulated sugar
1 tablespoon liquid fruit pectin (1 pouch)

Steps:

  • Combine cider and cinnamon pieces in a large stainless steel or enamel saucepan. Cover and bring to a boil over high heat, reduce heat and boil gently for 5 minutes. Strain cider through several layers of cheesecloth, reserving cinnamon pieces to add to jars. Rinse saucepan.
  • Measure 2 cups (500 ml) cider and return to saucepan; add sugar. Bring to a full boil over high heat, stirring constantly. Stir in pectin, return to a full boil and boil hard for 1 minute, stirring constantly. Remove from heat.

  • Place the apple juice in a large kettle. Stir in pectin and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in candies until dissolved.
