Steps:

  • Mix tuna, hummus, onion, oregano, rosemary, green chile pepper, and pepper in a bowl.

1/4 cup sliced green onion (or chopped onion)
1/2 red bell pepper, diced (about 1/4 cup)
1/4 cup olive oil
Juice of 1 lemon (2-3 tablespoons)
1 tablespoon Dijon mustard
1 garlic clove, minced
1/4 cup chopped fresh parsley or cilantro
1/4 teaspoon coarse salt
Black pepper, to taste

Steps:

  • In a large bowl, flake the tuna with a fork.
  • Add celery, carrot, onion and bell pepper.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard and parsley. Pour dressing into salad and stir to combine.
  • Adjust seasoning with salt and pepper to taste.

4 gherkins or baby pickles, chopped
6 kalamata olives, pitted and chopped
3 tablespoons fresh chopped chives
2 tablespoons 2% Greek yogurt
1 tablespoon stone ground Dijon mustard
1 teaspoon pickle juice
1/4 teaspoon mustard powder
1/8 teaspoon ground celery seed
1/4 teaspoon ground mustard seed

Steps:

  • Place the tuna, with the water, into a bowl and break up with a fork into bite-size chunks.
  • Add the remaining ingredients and stir gently until thoroughly combined.
  • To serve, layer a few lettuce leaves on top of one another and pile the tuna in the center. Eat with sliced vegetables or crackers. Store in the refrigerator for three to four days.
