- Melt the chocolate and cream together in a bowl set over simmering water until just melted. Stir and remove from the heat. Dip each strawberry in the chocolate and set aside on waxed or parchment paper to dry.
CHOCOLATE-DIPPED STRAWBERRIES

- In a heat-proof bowl set over (but not touching) simmering water, heat the cream and orange zest. Add the chocolate, coffee, orange liqueur, and corn syrup and stir constantly until the chocolate is just melted and smooth. Keep the chocolate warm in a fondue pot or in a glass bowl set over the simmering water. Serve the warm chocolate with a large plate of long stemmed strawberries for dipping.
CHOCOLATE-DIPPED STRAWBERRIES

- To make tempered chocolate, chop the chocolate into pieces and place 3/4 of it in a small glass bowl in a microwave for 20 seconds exactly. Stir the chocolate and continue to microwave for 20 seconds at a time, stirring in between, until the chocolate is smooth and shiny. Add the remaining 1/4 of the chocolate and stir until smooth. The chocolate should register 87 to 89 degrees F on a candy thermometer.
- Dip each strawberry into the tempered chocolate and place on a sheet pan covered with parchment paper. Refrigerate for 2 minutes to set.
MAYAN CHOCOLATE DIPPED STRAWBERRIES
I mixed in some espresso powder and cinnamon with my chocolate to create a different-tasting chocolate covered strawberry. Hope you enjoy!!

- Wash and dry your strawberries keeping the green tops on.
- Melt the chocolate in a double boiler over a low simmer.
- Stir in the espresso powder and cinnamon. Mix well.
- When melted, remove the chocolate from the heat.
- When chocolate is cool to the touch, dip strawberry tips in halfway up the strawberry.
- Rest each strawberry on a plate then chill in the fridge allowing the chocolate to harden. (I usually set the strawberries upside down on the green stem part--they will stay in place up against the plates' edge).
- Allow to chill about 30 minutes or more then serve!

- In a large bowl, cream the butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Stir in coffee liqueur and vanilla. Combine the flour, chili pepper, baking soda, baking powder, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the pecans, chocolate chips and grated chocolate., Divide dough in half. On an ungreased baking sheet, shape each half into a 10x2-in. rectangle. Bake at 350° for 20-25 minutes or until set and lightly browned., Place pans on wire racks. When cool enough to handle, transfer to a cutting board; cut diagonally with a serrated knife into 3/4-in. slices. Place cut side down on ungreased baking sheets., Bake for 8-10 minutes on each side or until golden brown. Remove to wire racks to cool completely. Store in an airtight container.

MAYAN CHOCOLATE SPARKLERS
A friend pointed me to this recipe (which I've changed slightly) on the blog MontCarte that is adapted from a recipe on Under the Highchair. I love recipes involving spiced chocolate. These cookies are absolutely delicious and they smell wonderful while baking. I didn't want to leave the kitchen! The topping gives the cookie a sparkly look and a wonderful crunch accented by a hint of heat from the cayenne pepper. The MontCarte blogger substituted the vegetable shortening with additional unsalted butter, but her cookies were crumbly as a result. I used vegetable shortening and my cookies crumbled very little. I've switched to bread flour in this cookie recipe. I will produce cookies with lasting softness. If that's not something you want, the bread flour can easily be replaced with all-purpose flour. If you plan to serve these to sensitive mouths and tummies, leave out the chili powder and cayenne but keep the black pepper to still achieve the spiced-chocolate taste without the burn. I prefer to use freshly ground black pepper for this recipe to achieve a stronger note in the taste. If you have an audience who's hesitant to spiced chocolate, dub these cookies simply "chocolate cookies" and watch for a reaction. I've seen these cookies win over many a cinnamon-chocolate, pepper-chocolate hater. Yield of this recipe is around 5 dozen and serving size is 2-3 cookies but I usually eat twice that amount in each sitting. The cookies great well with a glass of milk or crumbled over ice cream.

- Preheat oven to 350ºF. Place rack in center of oven. Line cookie sheets with parchment paper or silicone mat and set aside.
- TOPPING: In a small dish, add granulated sugar and cinnamon. Stir until evenly combined. Set aside.
- COOKIES: In a large mixing bowl, add shortening, softened butter, both sugars, and vanilla. Using an electric mixer, beat on low-speed for 30 secs until ingredients are combined.
- Scrape down sides of bowl and continue to beat at medium-speed until mixture is creamy (1 -2 minutes).
- Add one egg to mixture and beat on medium-speed until combined (30 secs). Repeat with second egg.
- In a separate mixing bowl, sift together flour, cocoa, cinnamon, and baking soda.
- Add black pepper, salt, chili powder, and cayenne pepper to flour mixture and gently stir to combine all ingredients.
- Gradually add dry ingredients to butter mixture (1/2 cup at a time) and beat at low-speed until combined (1 minute) after each addition.
- Add half of the chocolate chips to bowl and fold them into the batter. Repeat with remaining chocolate chips.
- (Optional) Attempt to roll a small amount (1 tbsp) of batter into a ball. If the batter is too sticky and not cleanly rolling off your hand, chill batter in refrigerator for 20-30 minutes or until desired tackiness is reached.
- Roll tablespoons of batter into 1" balls. Do not flatten.
- Roll balls of batter through cinnamon and sugar topping until evenly coated.
- Place rolled balls on prepared cookie sheets, about 2" apart. Do not flatten.
- Bake batches for 7-10 minutes in the preheated oven. Cookie edges will be dry, but centers should still be soft.
- Allow cookies to cool on the baking sheet for 3-5 minutes before attempting to remove them to a wire rack to cool completely.
- TIP: Place a paper towel under the wire rack to catch loose topping.
- Store cookies in a counter-top cookie jar for 1 week or in a sealed container in the refrigerator for 2 weeks.
HOT CHOCOLATE MAYAN STYLE
When Cortez and those guys arrived in Aztec country, they were unimpressed by these little dark brown beans everyone seemed to carry around, until they learned these were money -- 100 cacao beans would buy a slave. Probably Xocatl was actually developed as a food by Mayan peoples farther south, the beans were a hot trade item, before they finally got ground up and drunk as hot chocolate. You can just make cocoa your usual way (which is perhaps by adding hot water to a pre-mixed envelope), and we can't grind the beans, but here's a bit more authentic way

- Add honey, salt, and beat the hot chocolate water with a balloon wire whip as you add th warmed milk.
- To make it more frothy and give more food value, you can beat up an egg or two, add hot chocolate to it, then pour it into the chocolate cooking pot and continue to whip, (but this isn't authentic).
- Serve the hot chocolate in mugs with cinnamon-bark stick stirrers in each.

- Add chili pepper to 2 cups boiling water.
- Cook until liquid is reduced to 1 cup.
- Remove chili pepper; strain for stray seeds, and set aside.
- In a medium-size saucepan, combine cream or milk, vanilla bean and cinnamon stick.
- Heat over medium flame until bubbles appear around the edge.
- Reduce heat to low.
- Add chocolate and sugar or honey.
- Whisk occasionally until chocolate is melted and sugar dissolves.
- Turn off heat.
- Remove vanilla bean and cinnamon stick, stir in ground almonds or hazelnuts.
- Carefully add the chili pepper infusion, a little at a time, making sure the flavour isn't too strong.
- If chocolate is too thick, thin with a little more milk.

- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.
