SHEILA'S IRISH SODA BREAD
Growing up in an Irish household, I have had the pleasure of tasting many a soda bread. It seems like every woman had her own recipe, and I have tasted them all. Some are brown and some are white, some have raisins and caraways, some have only one or neither, some are cakey and some are bready, some are round and some are oblong. This recipe uses sour cream instead of the traditional buttermilk, and is on the "cakey" side. You can bake them in either a 8x4-inch loaf pan or an 8-inch round pan.

Steps:
- Combine sugar, baking soda, baking powder, flour and salt in a large bowl. Stir in eggs and sour cream, then add raisins and caraway seeds. Pour into two greased and lightly floured 8x4-inch loaf pans or 8-inch round pans.
- Bake at 325 degrees F for approximately 60 minutes, or until a toothpick inserted in the bread comes out clean.
HERB IRISH SODA BREAD
I've tried bakery and grocery store Soda bread and found it Dry and flavorless. I was watching Cooking live and saw this made with a few different ingredients. I didn't have buttermilk. I used rosemary and parsley for my spices--you can choose your own.

Steps:
- Preheat oven to 450°F degrees.
- Put vinegar in 2 cup measuring cup and add enough milk to make 14 oz; set aside for 5 minutes.
- In a large bowl mix together dry ingredients.
- Add liquid and mix together slowly by hand until dough forms.
- Turn onto floured surface.
- Gently knead dough to form an 8-inch circle (this should only take about two minutes) dough should be soft and about 2-3 inches thick.
- Place in a baking pan (your option).
- Cut a cross pattern in dough+ (it should go at least halfway into and be entire length and width).
- Place in oven and bake for 20 minutes.
- Reduce oven to 400°F and bake 15-20 minutes longer.
- Remove from oven when golden brown.
ROSIE'S TRADITIONAL IRISH SODA BREAD
This Irish soda bread recipe was passed on to me by a dear friend of my mother's who was born and raised in Ireland. It's the best Irish soda bread I have ever had. It is much higher, lighter and softer than most other recipes I have seen. It has an excellent flavor and texture, as well.

Steps:
- Combine dry ingredients together in a large bowl.
- In a small bowl beat eggs and stir in sour cream.
- Add the egg and sour cream mixture to the dry ingredients and stir with a wooden spoon.
- Batter will be very thick.
- Add the raisins and caraway seeds and stir well with wooden spoon or knead in with your hands.
- Place batter in a greased 9 inch springform pan.
- Dust the top with enough flour so that you can pat the batter like a bread dough evenly in the pan without it sticking to your hands.
- With a knife make a shallow crisscross on the top.
- Bake for 50 minutes in a preheated 350ºF oven.

FOOLPROOF IRISH SODA BREAD
Hearty Irish soda bread is easy to make. It's welcome any time of year but is essential on St. Patrick's Day.

- Preheat oven to 350 degrees. Line a baking sheet with parchment. Mix milk and vinegar in a small bowl, and let stand until thickened, about 5 minutes.
- Whisk together flour, salt, baking powder, and baking soda in a large bowl. Cut in unsalted butter with a pastry cutter or 2 knives until mixture resembles coarse meal. Add bran, caraway seeds, and raisins; stir to distribute.
- Pour milk mixture into flour mixture; stir until dough just holds together but is still sticky. Turn dough onto a lightly floured surface. Pat and press the dough gently into a round, dome-shaped loaf, about 7 inches in diameter. Transfer to prepared sheet.
- Lightly dust top of loaf with flour. With a sharp knife, cut an X into the top, 3/4 inch deep. Bake, rotating halfway through, until loaf is golden brown and a tester inserted in the center comes out clean, about 1 hour, 10 minutes. Let cool on a wire rack. Soda bread is best eaten the day it is made; serve with salted butter.
TRADITIONAL IRISH SODA BREAD
This makes a fairly dense, rustic (ugly, even) loaf of bread that is tasty and not sweet. It is crusty and rough on the outside, chewy inside. Nummy hot with lots of butter! Note: sometimes (depending on humidity etc) it takes a bit more than the 1 1/2 cups of buttermilk--just keep adding a little bit at a time until it all holds together as stated in the recipe.

- Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray.
- Combine dry ingredients in a deep bowl. Gradually stir in 1 cup buttermilk, beating constantly, until dough is firm enough to be gathered into a ball. If dough crumbles, add up to 1/2 cup more buttermilk, 1 tbsp at a time, until it holds together.
- Place on a lightly floured board and pat into an 8-inch flattened round loaf.
- Place loaf on baking sheet and slash a 1/2-inch deep "X" into the top of the dough with a small, sharp knife.
- Bake at 425 degrees F for about 45 minutes, or until the top is golden.
- Serve hot.
