oil, for sautéing
2 medium onions, chopped
2 pounds (1 kilogram) mushrooms, sliced (use button mushrooms or a combination of mushrooms like shiitake and portabella)
2 cups matzah farfel, such as Manischewitz Whole Grain Matzo Farfel
1/2 cup Manischewitz Chicken Broth or other chicken soup
1 teaspoon kosher salt
1/8 teaspoon pepper
1 clove garlic, crushed or 1 cube Gefen Frozen Garlic
5 stalks celery, sliced thinly

Steps:

  • Heat oil for sautéing in a large frying pan over medium heat. Add chopped onions and sauté till golden, stirring constantly, about five minutes.
  • Add the mushrooms and sauté an additional five minutes.
  • Add the farfel, chicken soup, garlic and seasonings and sauté five minutes until liquid is absorbed.
  • Add celery, and cook another five minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x12 inch baking dish.
  • Place farfel in a colander and pour boiling water over it.
  • In a large skillet, saute onions and mushrooms in vegetable oil. Stir in salt and pepper, garlic powder, and dill. Remove from heat and stir farfel into the skillet.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

1/2 cup raisins, regular or golden
1/2 cup dried apricots, chopped
1/2 cup hot water or Alfasi Cabernet Sauvignon or other red wine or orange juice or apple juice
4 cups Manischewitz Matzo Farfel, 5-6 boards of matzo - see note (set aside 1/3 cup for matzo crunch topping)
4 eggs OR 6 eggs (see below)
2 teaspoons salt, divided
1 stick margarine or butter, divided (2 tablespoons for crisping up matzo farfel (step 3); 4 tablespoons melted for kugel (step 5), 2 tablespoons melted for crunch topping (step 6) )
3 medium or 2 large apples peeled, cored, and sliced
1 teaspoon lemon juice or 1/2 a lemon for squeezing
1/3 cup sugar
2 teaspoons Gefen Cinnamon, divided
1/2 teaspoon nutmeg
1/2 cup Haddar Unsweetened Applesauce
2 tablespoons ground flax seed mixed with 4 tablespoons water (optional - flax is kitniyot. Use if you want to reduce the number of eggs to 4.)
1/3 cup matzo farfel, set aside from above 4 cups
2 tablespoons of the melted butter or margarine listed above
1/2 cup finely chopped walnuts or pecans
1/2 teaspoon Gefen Cinnamon
1 tablespoon sugar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit and grease a nine- by 13-inch baking dish.
  • Rehydrate/soften the dried fruit (raisins and apricots) with hot water or whatever liquid you choose. Let them sit while you continue with the other preparation.
  • Beat two of the eggs and mix with the farfel and a teaspoon of the salt. Heat a skillet to medium low, add the two tablespoons of butter (you can skip the butter here if you want) then add the egg-farfel mixture, mixing frequently to be sure the pieces brown and separate. You can walk away from these while they cook but return frequently to mix and separate the farfel. Once the egg is set, pieces are mostly separate and a little darker, set the farfel aside while you prepare the apples and wet ingredients.
  • Peel, core, and thinly slice the apples. Sprinkle with a bit of lemon juice to keep them from browning.
  • In a medium bowl, beat the remaining two eggs with the sugar, one teaspoon of salt, one teaspoon of cinnamon, nutmeg, and four tablespoons of the melted and cooled butter or margarine. Add in the applesauce, flaxseed mixture if using, toasted farfel mixture, and the dried fruit and its soaking liquid. Mix until well combined.
  • In a small bowl combine all the matzo crunch topping ingredients and mix well.
  • In your greased baking dish, layer half the apple slices and sprinkle with a dusting of cinnamon if you'd like (optional), then add the matzo farfel mixture, and then top with the remaining apples. Then sprinkle with the matzo nut crunch topping.
  • Bake for approximately 40 minutes. (should get crunchy on the top and see it bubbly on the inside).

1 cup finely chopped onion
1 cup finely chopped celery
2 large eggs
1 can (14 1/2 ounces) chicken broth
2 teaspoons paprika

2 1/4 teaspoons coarse salt
3 1/2 cups matzo farfel

Steps:

  • Preheat oven to 375 degrees. Melt fat in a medium skillet over medium-high heat. Add onion and celery; cook 8 minutes. Let cool. Whisk together eggs, broth, 1 1/4 cups hot water, spices, and salt. Stir in farfel and onion mixture. Spoon into 10 (1/2-cup) ramekins. Bake until set, 30 to 35 minutes.

2 cups matzo farfel
3 tablespoons butter or 3 tablespoons chicken fat
1/4 cup sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon lemon juice
1 apple, half grated, half diced
1/4 cup raisins

Steps:

  • Preheat oven to 350°F
  • Beat 2 eggs in a bowl. Toss with farfel. Melt butter or chicken fat in a skillet. Cook farfel over low heat, stirring often, until golden brown. Remove from heat and let cool 10 minutes.
  • Beat remaining 2 eggs with sugar, cinnamon, salt, vanilla, lemon juice, and grated apple. Stir in cooked farfel, diced apple, and raisins.
  • Spray 4 of 6 wells in a jumbo muffin tin with non-stick spray. Divide mixture between the muffin wells (if there is a lot of thin liquid in the bottom of the bowl, leave it behind). Bake in preheated oven 30 minute Let cool 10 min in pan, then run a knife around the inside of each well then turn out. Serve hot or cold.

5 tablespoons extra virgin olive oil, divided
3 medium onions, chopped or 4 cups onions
8 ounces sliced mushrooms
2 (9 ounce) boxes frozen artichoke hearts
5 carrots, cut into 1/4-inch dice or 2 cups carrots
7 eggs, divided
1 (16 ounce) box matzo farfel
1/2 teaspoon thyme
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 cup parsley, chopped
4 cups low sodium chicken broth or 4 cups vegetable broth
powdered chicken soup powder (From the matzo ball mix in a box)

Steps:

  • Coat an 11-by-7-inch baking dish with cooking spray. Heat oven to 350 degrees.
  • Heat 2 tablespoons oil in a large, nonstick skillet over medium; add onion and cook until soft and golden, about 20 minutes. Transfer to a large bowl.
  • Add mushrooms to skillet; cook until browned, about 5 minutes. Add to bowl.
  • Add 2 tablespoons of the oil to skillet; add artichokes and carrots and cook until carrots are tender, about 10 minutes. Transfer to bowl.
  • Beat 5 of the eggs with fork; toss with farfel. Add 1 tablespoon oil to skillet; add farfel and cook, stirring often, until it is toasty, 5 to 6 minutes. Transfer to bowl; stir in the thyme, salt, pepper, soup mix (To taste) and parsley and transfer to baking dish.
  • Combine the 2 remaining eggs with broth and pour over the farfel. Bake 45 minutes, or until the center is no longer wet. Makes 16 servings.

Traditional Matzo Kugel for Passover is comfort food at its best. Try this yummy dish all year long. No reason to limit yourself to Passover.

4 Matzo sheets
3 eggs (beaten)
1/2 tsp salt
100 g raw cane sugar
1 tsp cinnamon
55 g butter
300 g apple (peeled, cored and chopped)
75 g raisins
60 g walnuts (chopped (optional))
10 g butter (for topping)

Steps:

  • Soak the Matzo sheets in some water until they become slightly soft. You do not want the sheets to be soggy. They should keep their form yet be easy to break into several pieces without causing too many crumbs. I usually run water over my Matzo sheets.
  • Shake off the excess water without worrying if there remains a little extra water. Gently break the Matzo sheets into pieces in a bowl.
  • Preheat the oven to 175°C / 350°F. Melt the butter in a casserole over a low heat (or in the microwave).
  • Beat the eggs well. Add the salt, sugar, cinnamon, and melted butter.
  • Pour the egg mixture into the bowl with the Matzo pieces. Mix gently until the pieces are covered by egg.
  • Wash, peel, core and chop the apples. I used a combination of sour and sweet apples. The choice of apples is up to you.
  • Add the chopped apples, raisins and chopped nuts (if you are using). Mix gently.
  • Pour the Matzo-egg mixture into a baking dish. Add the remaining butter reserved for the topping by spreading little dots of butter on top of the dish.
  • Place the baking dish in the oven and bake about 45 minutes or until golden brown on top.
  • Remove the baking dish from the oven and let it cool about 10 or 15 minutes before serving.

4 c coarsely chopped onions, fried until medum brown
4 c matzo farfel
1 c 1/4 inch diced celery
6 eggs
1-1/2 tsp salt
1/2 tsp pepper
1/2 c chicken soup
4 Tbsp chicken fat or olive oil or peanut oil
8 c boiling water

Steps:

  • 1. Prepare the onions: after the onions have turned golden, add the celery and saute until the celery wilts, but is still a little crunchy.
  • 2. To prepare the batter: place the matzo farfel in a colander set in your sink. Very slowly, in a thin stream, stopping every few seconds, pour the boiling water over the farfel. The farfel should become limp, not sodden.
  • 3. In a very large bowl, beat the eggs with the salt, pepper, and the chicken soup. Stir in the onion mixture, then the moistened farfel.
  • 4. Place 3 tbsp. chicken fat in an 8 inch square glass baking pan. Place in oven for 5 minutes. Remove from oven and pour in the farfel mixture. Drizzle the remaining 1 tbsp. chicken fat over the top.
  • 5. Bake at 375 degrees for 1 hour, until well browned Let cool for 15 minutes before cutting. Reheats beautifully in a 350 degree oven.

Place matzo farfel in a bowl and cover with hot water. Let soak until farfel absorbs the water, then drain. Beat eggs with remaining ingredients. Add matzo farfel. Melt margarine in a 7 x 11 inch glass pan and then pour margarine into farfel mixture. Pour into pan. If desired, sprinkle cinnamon, sugar, and nuts on top.
