These are one of the best cookies I have ever eaten. They make up easily, and they disappear fast. I make these every year when we put up our Christmas Tree. I serve them with hot Cocoa while we decorate our tree. I swear the cookies are anticipated as much as the tree!

1 cup sugar
1/2 cup butter
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar

Steps:

  • In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
  • Combine flour, cinnamon, baking powder and salt.
  • Add to butter mixture.
  • Blend well.
  • Cover and refrigerate 2 hours or till firm enough to roll into balls.
  • Shape dough into small balls about 3/4-inch in diameter.
  • Roll in cinnamon sugar to coat.
  • Set cookies 1-inch apart on lightly greased cookie sheets.
  • Bake at 350° for 10 minutes or till the edges are lightly browned.
  • Cool slightly on pans, then remove to racks to cool completely.

1/2 cup butter
1 cup sugar
1 egg
1/2 teaspoon salt
2 teaspoons baking powder
2 cups flour, sifted
1/2 teaspoon vanilla
2 teaspoons cinnamon
1 tablespoon butter or 1 tablespoon margarine
4 tablespoons sugar

Steps:

  • mix together butter and sugar.
  • mix in egg.
  • sift salt, flour, and baking powder.
  • add to mixture.
  • add vanilla.
  • chill.
  • mix filling ingredients together in seperate bowl.
  • form dough into 6-inch strips about 1/2 inch wide.
  • cover one side of strips with thin layer of filling.
  • roll up into a cinnamon roll shape.
  • bake at 400 degrees for 8-10 minutes or until soft yet golden brown.
  • top with homemade icing.

Leave out a few of these cinnamon-spiced cookies for Father Christmas on Christmas Eve. Perfect for the festive biscuit tin, you could add some raisins too

120g softened salted butter
50g light brown muscovado sugar
150g golden caster sugar
3 tsp ground cinnamon
1 egg, lightly beaten
220g plain flour
50g raisins (optional)
1 tbsp icing sugar

Steps:

  • Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
  • Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
  • Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.

Just messed with my mom's oatmeal cookie recipe. I made them for my siblings' school classes but ate them all first. Shows how good they are.

Number Of Ingredients 10

2 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup boiling water
4 cups oats
2 teaspoons vanilla
2 cups shortening
1 cup raisins
2 cups brown sugar
1 cup craisins

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Mix flour & salt in a bowl.
  • 3. Add oats, raisins & craisins to dry ingredients. Set aside.
  • 4. In separate bowl, blend shortening, sugar & vanilla.
  • 5. Mix boiling water & baking soda, then combine into wet ingredients.
  • 6. Add dry ingredients to wet ingredients. Blend until one colour.
  • 7. Roll into balls, place on an ungreased cookie sheet & press down lightly with a fork.
  • 8. Bake for 8-10 minutes DEPENDING ON SIZE OF BALLS.
