A hint of green tea adds a sophisticated twist to the classic meringue. Martha made this recipe on episode 508 of Martha Bakes.

3 large egg whites, room temperature
2/3 cup granulated sugar
Pinch coarse salt
2 tablespoons confectioners' sugar
1 tablespoon matcha

Steps:

  • Preheat oven to 175 degrees. Line a rimmed baking sheet with parchment.
  • Place egg whites, granulated sugar, and salt in a heatproof bowl. Set bowl over a pot with a few inches of barely simmering water; cook, whisking constantly, until mixture is warm, frothy and sugar is dissolved, 1 to 2 minutes. Remove bowl from heat and, using an electric mixer, beat on high until stiff, glossy peaks form, about 3 minutes. Place confectioners' sugar and matcha in a small sieve; sift over egg white mixture and gently fold in with a rubber spatula.
  • Fit a large pastry bag with a 1/2-inch round tip and fill with meringue. Pipe 1 1/2-inch kisses onto prepared baking sheet. Bake until dry, rotating pan halfway through, about 2 hours. Let cool completely on sheet on a wire rack before peeling off parchment. Store in an airtight container for up to 1 week.

Butter, for greasing the pan
2 1/2 cups all-purpose flour, plus more for dusting the pan
1 3/4 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
2/3 cup brewed coffee
1/2 cup unrefined coconut oil
1/3 cup unsweetened cocoa powder
4 ounces semisweet chocolate, chopped
One 14-ounce can coconut milk
1 teaspoon vanilla
2 large eggs, lightly beaten
16 ounces white chocolate, chopped (or white chocolate chips)
2 teaspoons cooking-grade matcha
Candy eyeballs, for decorating

Steps:

  • Preheat the oven to 350 degrees F. Generously grease a 10- to 12-cup bundt pan with the butter, then dust it with flour, tapping out any excess.
  • Whisk together the flour, sugar, baking soda and salt in a large mixing bowl; set aside.
  • Heat the coffee, coconut oil, cocoa powder, semisweet chocolate and 1/3 cup of the coconut milk in a small saucepan over medium heat, stirring frequently, until the chocolate is melted and makes a smooth sauce, 4 to 5 minutes. Fold the chocolate mixture into the flour mixture until smooth and combined. Fold in the vanilla and eggs until smooth.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 45 to 55 minutes. Let the cake cool in the pan for 10 minutes, then turn it out onto a cooling rack set inside a baking sheet to cool completely, 1 to 2 hours.
  • Meanwhile, make the ganache: Put the white chocolate in a heatsafe bowl; set aside.
  • Sift the matcha into a saucepan and whisk in 1/4 cup of the coconut milk. Keep whisking until no lumps remain. Whisk in the remaining coconut milk. Set over medium heat and cook, stirring often, until the mixture just begins to boil. Pour it over the white chocolate, let it sit for a few seconds, then stir it all together until the chocolate melts. Let the ganache cool slightly, stirring often, until no longer hot to the touch and thickened but still pourable.
  • Pour 1 cup of the ganache over the cake and refrigerate until hardened, about 10 minutes. Pour the remaining ganache over the cake and refrigerate until hardened, about 10 minutes. Scrape the ganache at the bottom of the baking sheet back into the bowl and pour it over top once more. Let it harden, about 10 minutes.
  • Decorate the cake with candy eyeballs, then slice and serve.

MONSTER MERINGUES

Transform simple, colored meringues into a family of monsters. Just use your imagination and some edible eyes!

1 1/2 cups caster sugar
3/4 cup egg white
orange, blue, purple, green powder food coloring
orange, blue, purple, green non pareils sprinkles
royal icing, for sticking
edible eyes for decorating meringue

Steps:

  • Heat your oven to 400degreesF Line 2 flat baking sheets and a deep baking tray with baking parchment.
  • Place the caster sugar in the deep baking tray in the oven for 7 minutes.
  • Place the egg whites in a stand mixer on the slowest speed and start whisking. Gradually increase the speed until soft peaks form and the sugar is ready. Take the sugar out of the oven-it should be hot but not caramelized. Turn the temperature down to 200°F.
  • Slowly add the sugar to your eggs with the mixer on full speed, one spoon at a time. Be careful not to add the sugar too quickly or your eggs will deflate.
  • Once all the sugar has been added, keep the mixer going for a minute longer until the mixture looks thick and glossy. A good way to check if it is done is to dip the whisk into the mix to see if it creates a peak once pulled out.
  • Divide the mixture between 4 bowls and carefully fold in the powdered food color.
  • Scoop the mixture into 4 piping bags fitted with round and star nozzles. Pipe your monsters onto the baking sheets and add sprinkles.
  • Bake for 1 hour until the meringue comes away from the baking parchment clean and the base is firm.
  • Leave to cool.
  • Stick on the eyes with a dot of icing.

MATCHA MACAROON MONSTERS

Macaroons are traditionally made around Passover since they don't have any leaveners, but I make them all year round because they're delicious! This version has my favorite natural green food coloring, matcha, to make them look like monsters.

1 cup (283 grams) sweetened condensed milk (reserve the rest of the can to add to your morning coffee!)
1 tablespoon culinary-grade matcha
One 14-ounce (396-gram) bag sweetened shredded coconut
2 large egg whites
1/4 teaspoon kosher salt
4 ounces dark chocolate, chopped
Coarse silver sanding sugar, for dipping
Candy eyeballs, for decorating

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 350 degrees F. Line two baking sheets with parchment and set aside.
  • In a large mixing bowl, whisk together the condensed milk and matcha. Mix in the coconut and set aside.
  • In a separate large mixing bowl, add the egg whites and salt. Using a hand mixer, beat until stiff peaks form. Using a rubber spatula, fold the egg whites into the coconut mixture. Spoon lightly packed 2-inch balls (you can use a 2-inch cookie scoop or weigh 1.5 ounces) of the mixture onto the baking sheets, spaced 1 inch apart.
  • Bake in the oven until golden brown; begin checking for doneness at 18 minutes. Remove from the oven and let cool for a few minutes on the pans. Transfer to a wire rack to cool completely. Allow the baking sheets to cool completely. You'll use them again.
  • Melt the chocolate in a microwave in 30-second increments, stirring after each, or in a heat-safe bowl over a pot of simmering water, stirring often. Dip the bottoms of the macaroons in the chocolate, scraping off any excess. Then dip in the silver sanding sugar and return to the parchment-lined baking sheet. Attach the candy eyeballs using the chocolate as glue. Let the macaroons set at room temperature or in the fridge. Enjoy!
  • The macaroons can be kept at room temperature for about 3 days or in the fridge for up to a week.

RED, WHITE AND BLUE MERINGUES

These red, white and blue meringues are easy to make and use a clever decorating trick: Paint lines of food coloring gel up the sides of a pastry bag before filling it with meringue, and each cookie comes out striped as you pipe it. You can use this same trick with frosting for cupcakes.

2 large egg whites, at room temperature
1/8 teaspoon fine salt
1/4 teaspoon cream of tartar
1 cup plus 2 tablespoons powdered sugar
Red and blue food coloring, preferably gel
One 11-ounce package white chocolate chips
1 tablespoon refined coconut oil
1/2 cup mixed red, white and blue sprinkles or red sanding sugar

Steps:

  • Position oven racks in the bottom third of the oven and preheat to 250 degrees F. Line a baking sheet with parchment.
  • Beat together the egg whites and salt, in a large bowl, with an electric mixer on medium-high speed until foamy. Add the cream of tartar and continue to beat until soft peaks form. While beating, add the sugar 1 tablespoon at a time. Continue to beat until stiff peaks form.
  • Put the pastry bag in a large and tall deli or plastic container and fold the top over the container so you can see clearly into the bag and it stands upright. Dip the paintbrush or wooden skewer in to the red food coloring. Starting from the bottom of the bag, brush a thin stroke of food coloring from the tip to the top of the bag. Repeat on the opposite side of the bag with the blue food coloring. Fill the bag with the meringue. Try to spoon it directly into the center so as not to disturb the food coloring. Snip the bottom of the bag with scissors so you have a 3/4- to 1-inch opening. Pipe 1-inch-diameter mounds of meringue spaced 1-inch apart onto the prepared baking sheet.
  • Bake until the meringues are no longer glossy and feel light and dry when picked up, about 1 hour. Open the oven for a few minutes, then turn it off and shut the door. Leave the meringues in the oven until they are completely dry inside, about 2 hours. The meringues can be stored in an airtight container at room temperature for up to 2 days.
  • To decorate them, combine the white chocolate chips and coconut oil and in a large microwave safe bowl. Microwave on high for 1 to 2 minutes, stirring every 30 seconds, until melted.
  • Carefully dip the bottom of each meringue into the melted white chocolate, letting any excess drip off. Dip in sprinkles or sanding sugar and place on a baking sheet lined with parchment. Let set completely, about 1 hour.

CRISP CHEWY MERINGUES

1 teaspoon vanilla (or orange flower water, or maple extract)
1/8 teaspoon cream of tartar
2/3 cup sugar
2/3 cup icing sugar (confectioners' sugar)
1 tablespoon cornstarch

Steps:

  • Using a whisk or electric mixer, whip the egg whites and salt into peaks. Add the vanilla, and continue beating to stiff peaks.
  • Stir the cream of tartar into the regular sugar and whisk into the whites very gradually, a spoonful at a time, until the meringue is stiff and the sugar has dissolved.
  • Sift together the icing sugar and cornstarch. Sift over the meringue and gently fold until fully incorporated.
  • Pipe or spoon the meringues onto a parchment-lined baking sheet. Bake at 225 degrees F/110 degrees C until cream-coloured and crisp on top when tapped, 1 to 1 1/2 hours.
  • Remove the meringues from the oven. Cool on the trays. Store in an air-tight container.

GREEN TEA MERINGUE COOKIES

⅔ cup powdered sugar

Steps:

  • Line 2 baking sheets with parchment paper. Don't use waxed paper.
  • Mix powdered sugar, matcha powder, and food coloring in a medium bowl. Sift mixture into another bowl and set aside.
  • Beat egg whites and salt in a glass, metal, or ceramic bowl using an electric mixer until medium peaks form. Sprinkle in white sugar and beat until stiff peaks form. Mix in the matcha sugar until just combined; no color ribbons should remain.
  • Scoop some batter into a piping bag fitted with a medium round tip. Pipe out 1-inch cookies about 1 inch apart onto the prepared baking sheets. Let sit until dry, 1 to 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake cookies in the preheated oven until set, 5 to 10 minutes, watching that they do not brown too much.
  • Place chocolate in a dry glass bowl set over a pot of simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Beat butter in a bowl using an electric mixer until creamy. Add the melted chocolate and mix in powdered sugar. Sandwich a portion of this ganache filling between pairs of cookies.
