MASON JAR INSTANT NOODLES

These Mason Jar Instant Noodle Soups are the perfect on-the-go work lunch and packed full of raw veggies, quick-cook vermicelli noodles & shredded chicken

4 (1 L) Mason jars
2 chicken breasts (cooked and shredded)
4 tsp soy sauce or tamari
4 tsp Sriracha chili garlic hot sauce
4 tsp lime juice
4 vegetable bouillon cubes
1/2 cup each julienned broccoli stems, carrots, bell peppers and green onions
1 lb package rice vermicelli noodles
Sunflower sprouts or cilantro for garnish

Steps:

  • To shred chicken, boil breasts in a large pot of hot water for 12-15 minutes until chicken is cooked through. Pull apart with your hands or with a fork once cooled.
  • Divide the shredded chicken into each mason jar evenly, then add 1 tsp of soy sauce, Sriracha and lime juice to each jar.
  • Layer in vegetables, then drop in bouillon cubes. Finally, finish by dividing vermicelli noodles evenly among each jar and keep in fridge until ready to eat.
  • When ready to serve, pour boiling water in to fill jar and carefully stir contents, making sure to dissolve bouillon cube completely and saturate noodles. You may also need to microwave the jar for 1-2 minutes depending on the type of noodles used (some varieties of vermicelli are harder than others). Let the jar sit for 5 minutes before serving.
  • Pour contents of the jar into large bowl when ready to eat (should be within 5 minutes of pouring boiling water) and eat right away!

1 teaspoon Dried Parsley
1 teaspoon Sweet Dried Basil
1/4 teaspoon Garlic Powder
1 Bay Leaf
2 Chicken Bouilllon Cubes or 1/3 cup granules
1/4 cup Dried/Minced Onions
1/4 cup Dehydrated Carrots
1/4 cup Dehydrated Celery
2-1/2 cups Wide Egg Noodles
2 cups Cooked Chicken or canned chicken (add after the soup is made)
7 cups Water
Salt and pepper to taste

Steps:

  • Grab a quart (32-ounce jar) mason jar and layer the dried vegetables in order. Start with the onions, carrots, celery, and then the noodles. Place the sweet basil, garlic powder, one bay leaf, and the bouillon in a small bag. Seal the bag, it will go on top of the dry soup mix ingredients. Place a lid on and seal the jar with a FoodSaver. When ready to cook, place the dry ingredients in a soup pot, add the water, the seasonings, and bring it to a boil. After the soup comes to a boil, simmer for 20-30 minutes or until the vegetables and pasta are cooked to perfection. Remove bay leaves. Add the 2 cups of cooked chicken, stir until heated through. Salt and pepper to taste. Enjoy.

2 Tsp Low-sodium chicken bouillon powder, dairy free if desired, or bone broth powder
2 1/2 Oz Egg Noodles, Buckwheat Ramen, or Spiral-Shaped Pasta
1/4 Tsp dried thyme
1/4 Tsp dried oregano
1/4 Tsp Dried Parsley
1/4 Tsp Dried Rosemary
1/2 Tsp Dried Chives
1/8 Tsp turmeric
2 2-inch Strips Dried Lemon Peel (optional)
1/4 Tsp salt
1/8 Tsp ground black pepper

Steps:

  • To assemble jar, combine ingredients in 16 oz Mason jar.
  • To prepare soup, in medium pot, bring 3 cups water to a boil. Add contents of Mason jar. Simmer, uncovered, for 6 to 8 minutes, or until noodles are al dente. Add additional salt and pepper to taste.

1 cup hot broth, or hot water

Steps:

  • Fill a mason jar with soy sauce, sesame oil, pepper, mushrooms, carrots, spinach, noodles, and green onions.
  • Adjust seasonings to taste.
  • Store in the fridge for up to 5 days.
  • When you're ready to serve, pour in the hot water or broth. Stir well.
  • Enjoy!
