This full flavored sweet potato dish is quick and easy to prepare, adding an interesting, and healthy way to serve potatoes that are traditionally full of calories. You will find the flavors of the spice mixture along with orange juice a wonderful complement to the potato without the usual fat and cholesterol

2 medium sized sweet potatoes or 2 medium yams, sliced thin for quick cooking
2 tablespoons fresh orange juice
1/2 teaspoon garam masala
1 tablespoon extra virgin olive oil
salt
white pepper

Steps:

  • Bring lightly salted water to a boil in a steamer with a tight fitting lid.
  • Peel, slice and steam sweet potatoes in steamer basket, covered, for about 10 minutes or until tender.
  • When tender mash with potato masher adding rest of ingredients.

Simple mashed sweet potatoes flavored with maple syrup and butter.

6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

  • Add the sliced sweet potatoes and ½ teaspoon of the salt to a large stockpot. Add in enough cold water to cover the potatoes, then bring the water to a low boil.
  • Continue to gently boil, reducing the heat as needed, for about 15 to 20 minutes, or until the potatoes are tender. Drain the potatoes and return to the pot.
  • With the pot set on the warm burner (with the heat turned off), add in the remaining 1 teaspoon salt, the olive oil, almond milk (start with the lower amount), pepper, garlic powder and green onions.
  • Use a potato masher to mash the potatoes until smooth and creamy, adding in additional milk as needed to reach your desired level of creaminess (I usually add the full 4 tablespoons).
